This is a quick and easy salad idea with a homemade vinaigrette drizzled over a mixture of lettuce, mandarin oranges, and almond slivers.

3 tablespoons canola oil
¼ cup red wine vinegar
2 tablespoons white sugar
1 tablespoon lemon juice
½ teaspoon salt
½ teaspoon dry mustard
1 head red leaf lettuce, torn
1 (11 ounce) can mandarin oranges, drained
¼ cup slivered almonds, toasted

Steps:

  • Combine canola oil, vinegar, sugar, lemon juice, salt, and dry mustard in a jar with a lid. Shake until ingredients combine into a dressing.
  • Toss lettuce, oranges, and almonds together in a large mixing bowl. Drizzle dressing over the salad and toss to coat.

2 hearts romaine lettuce, chopped
3 navel oranges
2 ounces, 1/4 cup, sliced almonds or slivered almonds, available on the baking aisle, toasted
2 tablespoons chopped fresh tarragon, 2 or 3 sprigs
Splash orange juice
2 rounded teaspoons honey
2 tablespoons tarragon vinegar
1/4 teaspoon dry mustard, a couple of pinches
1/3 cup olive oil, eye ball it
Salt and pepper

Steps:

  • Arrange chopped lettuce on a platter. Trim a thin slice of orange skin down to the flesh off the top and bottom of the orange. Stand the orange upright and trim off strips of the remaining peel working from top to bottom around the orange. Cut each orange then in 1/2 lengthwise. Slice the 1/2 oranges into 1/2 moon shapes. Arrange the sliced oranges around the chopped romaine. Lightly toast the almonds in a small skillet over moderate heat or in a toaster or conventional oven. Top the romaine and oranges with toasted almonds and chopped tarragon.
  • In a small bowl, combine honey, vinegar, orange juice and mustard with a whisk. Stream in the oil while continuing to whisk the dressing to combine it. Pour the dressing evenly over the entire salad platter in a slow, thin stream. Season the salad with salt and pepper. The salad is pretty as is, no tossing.

My taste testers described this salad as an 'explosion of flavor' in your mouth . . .starts out subtle and then builds! Note: To simplify preparation, the blanching of the beans and steaming of the potatoes can be done in advance!

1 lb French haricots vert, trimmed (thin green beans)
1 1/2 lbs new potatoes, washed and cut in half
3 large zucchini, sliced lengthwise
2 large sweet onions, sliced 1/4 inch thick
1 large red pepper
1 large yellow pepper
3 (4 inch) portobello mushroom caps
olive oil (for basting)
1 head romaine lettuce, chopped (optonal)
salt
pepper
1 cup feta cheese, crumbled
3/4 cup chopped walnuts, toasted
1 sprig fresh tarragon
1/3 cup white wine vinegar
2 teaspoons whole grain mustard (to taste)
1 teaspoon Dijon mustard (to taste)
2 small shallots, diced
1/2 teaspoon garlic, minced
1 cup salad oil (I used red pepper infused olive oil)
2 tablespoons fresh tarragon, coarsely chopped (and muddled)
1 teaspoon lemon pepper (to taste)
1 pinch sugar (to taste)

Steps:

  • Chill salad plates.
  • VINAIGRETTE:.
  • Muddle the tarragon with a mortar and pestle (or mash between to tablespoons).
  • In a small bowl, whisk together vinegar and mustards. Add oil in a slow stream, whisking until well blended. Stir in shallots, garlic and and tarragon. Add lemon pepper to taste.
  • BLANCH BEANS:.
  • Bring a large pot of salted water to a rapid boil.
  • Drop the beans into the rapidly boiling water and bring back to a boil and cook uncovered for 8 - 10 minutes, testing the the beans after 8 minutes.
  • Once desired doneness is reached, immediately drain in colander and run cold water over them to stop the cooking process.
  • Drain and transfer to a mixing bowl, toss with 1/4 cup vinaigrette; set aside.
  • PREPARE VEGETABLES FOR GRILLING:.
  • Salt zucchini and place cut side down on wire rack which has been placed on cookie sheet to collect the water. Allow to sit for 20 minutes.
  • Place potatoes in a steamer (or use a microwave steam bag) and steam until partially cooked, approximately 4-5 minutes (less for microwave), Time will vary depending on size of the potatoes.
  • To Grill Vegetables:.
  • Preheat grill and oil grate (or better yet use a grill pan, which keeps the smaller pieces from going through the grate).
  • Place peppers on grill and blacken on all sides; transfer from grill to a covered dish for 10 minutes, then peel the blackened skin off. (Do not run under water as you will lose flavor.) Cut into 1-inch pieces. Set aside.
  • Brush zucchini, onions, mushrooms and potatoes with olive oil.
  • Grill over hot coals to desired doneness, approximately 4-6 minutes per side, or until grill marks are apparent on both sides.
  • Remove from grill and cool slightly.
  • Cut vegetables into 1-inch pieces.
  • Place grilled vegetables in large bowl and toss with 1/2 cup vinaigrette; top with green beans (drizzling the vinaigrette over the vegetables).
  • Line chilled serving plates with Roamaine lettuce; top with grilled vegetables.
  • Crumb feta cheese on top; and garnish with toasted walnuts and tarragon leaves.
  • Pass remaining dressing.

I learned to make this salad thirty years ago from my mother-in-law, who was born and raised in Paris. This is the best salad/dressing I've ever tasted and is always requested by friends and family.

1 large bunch of variety leaf lettuce
3 shallots (minced)
3 garlic cloves (minced, or 1/2 tsp garlic powder)
3 tablespoons tarragon vinegar
4 tablespoons vegetable oil
1 teaspoon salt
pepper (to taste)

Steps:

  • Rinse and spin-dry lettuce, set aside.
  • In large bowl, mix remaining ingredients. Add lettuce on top and place in refrigerator.
  • Toss well before serving and top with croutons and/or cheese sprinkles, if desired.
  • A few tips: You may want to add more or less salt, depending on how much lettuce you are using.
  • You can also use 1/4 chopped onion in place of the shallots - shallots have a milder, sweeter taste that truly compliments the dressing but vidalia or purple onion would be a good substitute.
  • You can also add radishes, chopped kale, and raw spinach greens to the lettuce before tossing.

1/4 cup slivered almonds
2 green onions, chopped
1 head romaine lettuce
1 cup mandarin orange, drained
1 tablespoon sugar
1/2 teaspoon tarragon, dried
1/3 cup vegetable oil
1/8 teaspoon Tabasco sauce
1/4 cup white vinegar
1 egg yolk

Steps:

  • Shaking constantly, toast almonds in skillet over low heat until golden brown (about 5 minutes).
  • Wash and dry lettuce.
  • Tear into bite size pieces.
  • Place with green onions and mandarin oranges in large salad bowl.
  • Dressing: Combine all ingredients but egg and vinegar.
  • Add in thin stream and process till well blended.
  • Serves 6.
  • MAKES: 1 cup dressing.
  • Just before serving, toss well.
  • Leftover dressing keeps up to 1 week in fridge.

This lovely salad has a distinctive flavour due to the tarragon, which also adds a touch of sweetness along with the sugar and the oranges. It looks terrific in the bowl and tastes even better. This salad is based on one served at the Magic Pan restaurants here in Toronto back in the 1970s; the recipe was published in the local paper ages ago and I modified it a bit to more suit my tastes. The Magic Pan is now gone but its memory lives on with this delicious salad!

4 tablespoons sugar
2 teaspoons sugar
1 dash Tabasco sauce
1/2 teaspoon dijon-style mustard
1 teaspoon dried tarragon
2 egg yolks
1 dash black pepper
2/3 cup tarragon vinegar
3/4 cup canola oil
3/4 cup olive oil
1 head romaine lettuce, washed and dried
2 green onions, sliced
1/4 cup almonds, slivered or flaked, toasted
1 (11 ounce) can mandarin oranges in juice, drained

Steps:

  • First, make salad dressing; you can do this in advance.
  • Combine sugar, tarragon, tabasco, pepper, egg yolks and mustard in food processor.
  • With machine running, gradually add vinegar.
  • Then, with machine still running, add oils in a thin stream.
  • Process until well blended and creamy; taste and add salt if desired.
  • Keep refrigerated.
  • Should be enough dressing to make two or three salads; remember this when looking at nutritional analysis of this recipe.
  • To make salad, tear cleaned romaine into bite sized pieces; place in large salad bowl along with sliced green onions.
  • Toast almonds (I prefer flaked) and set aside until cool.
  • Drain oranges well and place half in with lettuce and onions.
  • Toss well with dressing (about 1/3 of the Salad Dressing recipe, or to your taste).
  • Sprinkle top of salad with remaining oranges and the toasted almonds; serve.
  • Leftover dressing keeps well in the fridge for about a week.
