MOCHA COOKIES WITH MOCHA DRIZZLE (VEGAN)

Mocha Cookies With Mocha Drizzle (Vegan) image

This recipe comes from the wonderful book "Vegan Cookies Invade Your Cookie Jar" by Terri Hope Romero and Isa Chandra Moskowitz. Ive tweaked it a tad here and there, though. The cookies come out puffy, soft and with a slight mocha flavour. I think they are very pretty and everyone (vegan or not) raved about them. I hope youll enjoy them, too.

Provided by Lalaloula

Categories     Dessert

Time 27m

Yield 11 cookies

Number Of Ingredients 16

1/4 cup oil
1/4 cup sugar
1/8 cup brown sugar
1 tablespoon almond milk (I actually used hazelnut milk)
1 tablespoon strong coffee
1/2 tablespoon flax seed, ground
1 teaspoon cornstarch
1 teaspoon vanilla extract
3/4 cup flour
1/4 cup cocoa powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/3 cup powdered sugar
3 -4 teaspoons strong coffee
1/8 teaspoon vanilla extract
1 teaspoon instant espresso powder (optional, for a more intense coffee flavour)

Steps:

  • Vigourously whisk together oil, sugars, almond milk, coffee, flax seeds, cornstarch and vanilla extract (about 1-2 minutes).
  • In a second bowl combine flour, cocoa powder, baking soda and salt.
  • Add the wet ingredients and stir to combine. Knead into a smooth, elastic dough that is easy to handle. If it is too wet, add a tad more flour.
  • Using your hands form dough into 11 walnut sized balls and place them on a cookie sheet. Flatten slightly (these wont spread, so if you like flat cookies, flatten them more).
  • Bake in the preheated oven at 180°C/350°F for 12 minutes or until set, but still a tad fudgy. Allow to cool on the baking sheet for 5 minutes, then remove to a wire rack to cool completely.
  • For the drizzle combine powdered sugar, coffee, vanilla and espresso powder (if using) and drizzle over the cooled cookies in a decorative pattern. You could also just spread it on there or dip half of each cookie into it.
  • Allow drizzle to set and then store in an airtight container.

MOCHA

Mocha image

If you have a coffee machine, treat yourself to a comforting, chocolatey mocha. You don't need to be a trained barista with our easy recipe

Provided by Kane Statton

Categories     Breakfast, Brunch

Time 3m

Number Of Ingredients 4

18g ground espresso, or 1 espresso pod
250ml milk
1 tsp drinking chocolate
large cup, 300-350ml capacity

Steps:

  • Make around 35ml espresso using a coffee machine and pour into the base of your cup. Add the drinking chocolate and mix well until smooth.
  • Steam the milk with the steamer attachment so that it has around 4-6cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming into the centre. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top.

PEPPERMINT MOCHA COOKIES -- HOLIDAY CONTEST WINNER

Peppermint Mocha Cookies -- Holiday Contest Winner image

This recipe, submitted by Angie Rumer and Joy Buckingham of New Sharon, Iowa, was one of the winner of our 2005 Holiday Cookie Contest. Once cookies are frosted, sprinkle them immediately with the crushed peppermint candies; if you allow the frosting to dry, the candy won't stick to it.

Provided by Marz7215

Categories     Dessert

Time 55m

Yield 30 cookies, 30 serving(s)

Number Of Ingredients 14

1 3/4 cups all-purpose flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
8 tablespoons unsalted butter, softened but still cool (1 stick)
3/4 cup granulated sugar
1/2 cup brewed espresso or 1/2 cup strong coffee, cooled
1 teaspoon vanilla extract
6 tablespoons unsalted butter, softened
2 cups confectioners' sugar
2 tablespoons milk
1/2 teaspoon peppermint extract (or to taste)
1 -2 drop red food coloring
10 -15 crushed peppermint candies

Steps:

  • For the cookies: Adjust oven racks to upper-middle and lower-middle positions and heat oven to 350 degrees. Line 2 large (18 by 12-inch) baking sheets with parchment paper.
  • Sift flour, cocoa, baking soda, and salt together into medium bowl. With electric, beat butter and sugar at medium speed until light and fluffy, about 3 minutes. Scrape down sides of bowl with rubber spatula. Add cooled espresso and vanilla and beat at medium-low speed until combined. Scrape down bowl. With mixer on low speed, gradually add dry ingredients and mix until just combined.
  • Roll dough into thirty 1-inch balls. Place 15 balls on each prepared baking sheet, spacing them about 2 inches apart. Bake until just set, rotating sheets from front to back and top to bottom halfway through baking, 8 to 9 minutes. Cool cookies on sheets for 2 minutes; transfer with metal spatula to wire rack to cool completely, at least 30 minutes. (Cookies can be stored in airtight container for up to 4 days.)
  • For the frosting: With an electric mixer, beat butter at medium-high speed until smooth, about 20 seconds. Add confectioners' sugar and beat at medium-low speed until most of the sugar is moistened, about 45 seconds. Scrape down bowl and beat at medium speed until mixture is fully combined, about 15 seconds. Scrape down bowl. Add milk, peppermint extract, and food coloring and beat at medium speed until incorporated, about 10 seconds, then increase speed to medium-high and beat until light and fluffy, about 4 minutes, scraping down bowl once or twice. Frost cooled cookies and immediately sprinkle each with crushed mints. (Once frosted, cookies are best served within 1 day.).
