1/2 cup plain bread crumbs
1/3 cup chopped fresh flat-leaf parsley
1/4 cup chopped garlic and herb-marinated sun-dried tomatoes
2 cloves garlic, minced, optional
2 eggs, at room temperature, lightly beaten
2 tablespoons whole milk
1/2 cup crumbled feta cheese
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 pound ground turkey, preferably dark meat

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
  • Spray a 9 by 5-inch loaf pan with cooking spray.
  • In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.
  • Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let rest for 5 minutes. Transfer to a cutting board and slice. Put on a serving platter and serve.

2 teaspoons olive oil
1/2 cup diced red onion
1 teaspoon grated or minced garlic
1/2 cup diced roasted red peppers
1/3 cup crumbled feta
1/4 cup chopped kalamata olives
1 tablespoon fresh chopped dill
2 tablespoons chopped flat leaf parsley
2 teaspoons dried oregano
Kosher salt and fresh ground black pepper to taste
1 egg
1/4 cup panko, gluten free if needed
1 tablespoon milk
1 pound lean ground turkey, I use 93/7%
1 cup plain non-fat Greek yogurt
1/2 cup grated English or Persian cucumber, squeeze out excess moisture with your hands or a towel
2 tablespoons lemon juice
1 tablespoon dill
1/4 teaspoon garlic powder
Kosher salt and fresh ground black pepper to taste

Steps:

  • Pre-heat the oven to 400° F. In a non-stick skillet over medium heat, sauté the onion in the olive oil until it starts to soften, about 2 minutes. Add in the garlic and sauté another 30 seconds. Dump the mixture into a large mixing bowl.
  • Add the peppers, feta, olives, dill, parsley, oregano, egg, panko, milk, salt and pepper to the mixing bowl and whisk everything together. Add in the turkey and use your hand to combine the mixture being careful not to over-mix.
  • Line a baking sheet with parchment paper or foil (spray the foil with cooking spray) and form the meat mixture into a loaf that is equally thick all the way around. Bake for 30-40 minutes or until a meat thermometer inserted into the middle reads 170° F. Let the meatloaf rest for 5-10 minutes before serving.
  • In a medium sized bowl stir together all of the ingredients for the tzatziki sauce. Taste for for seasoning and serve with the meatloaf.

2 tablespoons butter (or margarine)
1 cup onion, chopped
3 garlic cloves, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)
3/4 cup catsup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Melt butter in a skillet.
  • Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
  • Place mixture in a large bowl to cool for 5 minutes.
  • Combine turkey, bread crumbs, egg, 1/4 cup of the katchup, Worcestershire sauce, salt, and pepper with onion mixture.
  • Press meatloaf into an 8x4-inch loaf pan.
  • Spread remaining catsup on top.
  • Bake in a 350 degree oven for 50-55 minutes.
  • (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl mash together bread and milk until a paste forms. If you need to use a little more milk that's fine.
  • Mix in the 2 eggs.
  • On top of the bread and egg mixture add the turkey, spinach, feta cheese, olives, diced tomatoes, garlic, oregano, salt, and pepper.
  • Using your hands, mix everything together until all the ingredients are evenly distributed. Try not to over mix.
  • On a baking sheet sprayed with cooking spray form meatloaf mixture into a loaf. Spread marinara sauce on top.
  • Bake for 1 hour 15 minutes.
  • Let the meatloaf cool for 5 minutes and serve.

1 cup fresh soft breadcrumbs
1 egg, whisked
1 small onion, finely grated

200g bought whole roasted peppers, drained, split lengthways
250g frozen chopped spinach, thawed
¾ cup fresh ricotta
½ loaf (about 300g) sourdough bread, crusts removed, cubed
2 tablespoons olive oil
Roasted trussed baby vine ripened tomatoes and green salad, to serve

Steps:

  • Preheat the oven to 180°C/160°C fan. Grease and line a 21cm x 11cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles. Combine the turkey mince, breadcrumbs, egg, onion, oregano and ½ cup of the parmesan in a large bowl. Spread half the turkey mixture over base of prepared pan and smooth the surface. Arrange peppers in a layer over the top of turkey mince mixture
  • Using hands, squeeze excess liquid from spinach and place in a bowl. Add ricotta and season with salt and pepper. Spread spinach mixture over top of peppers and then top with remaining mince mixture. Smooth the surface
  • Combine the cubed bread, oil and remaining parmesan in a bowl, then arrange over top of mince mixture, pressing down slightly. Cover with foil and bake for 50 minutes
  • Uncover meatloaf and bake for a further 10 minutes or until golden brown and cooked
  • Serve meatloaf with roasted tomatoes and green salad

1 large egg
1 zucchini (finely shredded and excess moisture squeezed)
1 medium onion (finely chopped)
1 green pepper (finely diced)
5 tablespoons quick cooking oats
1 teaspoon prepared mustard
2 teaspoons dried oregano
1/2 teaspoon Italian seasoning
1/2 teaspoon dried garlic powder
1/2 teaspoon salt
1/4 cup crumbled feta cheese
2 tablespoons tomato paste
1 tablespoon water
1 tablespoon honey (optional; you can also use 1 extra tablespoon tomato sauce plus a pinch of your favorite sweetener)

Steps:

  • Make the meat mix: Place all ingredients for the meatloaf EXCEPT for the feta cheese to a large bowl. Mix well (I likening a handheld mixer with the dough hooks attached).
  • Shape the meatloaf: Preheat the oven to 350°F. Line a baking sheet. Place the meat mix on the baking sheet and shape into a loaf. Make a long well along the middle and add the cheese. Close the meatloaf over the cheese, making sure you're shaping it firmly.

1 (10 ounce) package frozen chopped spinach, thawed and drained

MEDITERRANEAN-STYLE MEATLOAF

You'll never have dense, dry, tasteless meatloaf again! The leftovers from this recipe are fantastic in sandwiches or over pasta. You can use jarred roasted red bell peppers or even pimentos in the filling and sauce. Polenta, rice, or mashed potatoes make great sides.

1 1/2 lb. ground meat (chuck, pork, turkey, etc.)
1/2 cup shallot or Vidalia onion, chopped
1/2 cup roasted red bell pepper, peeled and chopped
1 cup bread crumbs, more if needed
1/2 cup grated Romano cheese, plus more for coating
1 large egg
1 tsp. Asian fish sauce, optional
2 tbsp. tomato sauce, (more if needed, plus more for coating-or use ketchup if you must)
1 tbsp. olive oil, only if you're using ground chicken or turkey
2 tbsp. parsley, minced
Salt and pepper, to taste
1 tbsp. olive oil
1 green bell pepper, sliced
1 roasted red bell pepper, sliced
1 Vidalia onion, sliced
2 cloves of garlic, finely minced
1 28- oz. can of crushed tomatoes
1 cup of tomato sauce
2 tbsp. rice vinegar or red wine vinegar
1 tbsp. Splenda or sugar
Salt & Pepper to taste

Steps:

  • Preheat the oven to 350°. Add all ingredients for the meatloaf to a large mixing bowl (with the exception of the coatings). I usually add 2 large pinches of salt and several grinds of black pepper, but you can adjust that to your own taste. Work the ingredients through the meat mixture just enough to incorporate (it doesn't matter if ingredients aren't distributed uniformly. Check the consistency of your mixture: you want to be able to form it into a loaf without having it fall apart, but you don't want it to be too dry. If the mixture is too wet and falling apart, add an additional 1/4 cup of breadcrumbs. If the mixture is too dry, add another tbsp. of tomato sauce (more if needed).
  • Line a baking sheet with aluminum foil. Set a baking rack onto the foil and coat generously with cooking spray. Form the meat mixture into a loaf, making sure that it's roughly the same thickness throughout for even cooking. Rub on the tomato sauce and sprinkle with Romano cheese. Sprinkle lightly with salt and fresh-ground pepper.
  • Tent some aluminum foil over the meatloaf: I sometimes lay 2 pieces of foil over each other and fold one side of the long ends over several times. This is the "spine" of the tent. The foil doesn't need to cover the meatloaf tightly: just tuck the open ends down toward the baking rack. Place the meatloaf in the oven.
  • Meanwhile, make the sauce. Heat the olive oil in a skillet over medium-high heat. Add the peppers, onions, and garlic. Sauté until soft and translucent, 6-8 minutes. Add the crushed tomatoes and tomato sauce, stir to combine. Sprinkle with the vinegar and sugar or Splenda; stir. Bring almost to a boil, then reduce heat to a low simmer. Stir occasionally to prevent scorching. Simmer for 45 minutes.
  • Check the meatloaf after an hour with an instant-read thermometer: the meatloaf needs to be 160° throughout. Remove the foil. At this point, you can spoon some of the sauce on top of the meat loaf if you'd like. Continue baking as needed.
  • Remove the meatloaf from the oven and rest for 10 minutes. Slice thickly and serve with the sauce. Enjoy!

1 cup coarsely chopped carrot (about 2 medium carrots)
1 cup coarsely chopped red onion (about 1/2 medium onion)
1/4 cup plain breadcrumbs
3/4 lb ground turkey
1 egg white
salt (optional)
fresh ground black pepper, to taste
8 pitted black olives, sliced (kalamata, if possible)
1/8 teaspoon crushed red pepper flakes
1 cup canned crushed tomatoes, with liquid

Steps:

  • Preheat oven to 450°F.
  • Microwave the carrots and onion on high for 3 minutes (they should be slightly shriveled).
  • Mix the microwaved vegetables with the bread crumbs, ground turkey, and egg white. Add salt if using and pepper.
  • Line a baking sheet with foil, shape the turkey mixture into 2 6x3-inch loaves and place on the foil, bake uncovered, for 15 minutes in the preheated oven.
  • Meanwhile, prepare the tomato sauce by mixing the olives, pepper flakes and crushed tomatoes with their liquid together; microwave on high for 2 minutes, or until warmed through.
  • Remove the meat loaves from the oven; divide the tomato mixture into two equal servings, pour the tomato mixture in equal amounts over the meat loaves.

  • In a large bowl combine egg product and milk; beat with a fork. Stir in bread crumbs, oregano, pepper, and garlic. Add ground beef, feta cheese, and dried tomatoes; mix well. Shape meat mixture into a 6-inch round loaf.
  • Tear off an 18-inch-square sheet of heavy foil. Cut into thirds. Fold each piece into thirds lengthwise. Crisscross strips and place meat loaf in center of foil strips. Bringing up strips, transfer loaf and foil to a 3 1/2- or 4-quart slow cooker (leave foil strips under loaf). Press loaf away from side of cooker. Fold strips down, leaving loaf exposed. Spread pizza sauce over loaf.
  • Using foil strips, carefully lift meat loaf from cooker. Discard foil strips. If desired, combine romaine, carrots, and cucumbers; top with vinaigrette. Serve salad with meat loaf.
