- In a large bowl, combine 2 cups flour, sugar, salt and yeast. In a saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in cheese and enough remaining flour to make a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 45 minutes (dough will be soft)., Punch dough down; divide into 3 portions. Shape each portion into 12 balls. Place in 3 greased 9-in. round baking pans. Cover and let rise in a warm place until nearly doubled, about 30 minutes. Brush with egg white. Bake at 350° for 20-25 minutes or until golden brown.

- Mix half of a 10-ounce box of frozen chopped spinach (thawed and squeezed dry) with 3/4 cup chopped canned artichoke hearts, 4 ounces room-temperature cream cheese, 1/2 cup sour cream, 1/4 cup grated Parmesan, and salt and pepper to taste. Cut off the tops of 8 dinner rolls and hollow out the insides. Fill with the dip and serve with veggies.

- Mix the dough. In the bowl of a stand mixer fitted with a dough hook, combine the yeast and water. Then, add the sugar, salt and 3 cups of flour.
- Knead. Increase your mixer to its second speed and knead the dough for 5 to 7 minutes until it’s smooth and elastic. Alternatively, you can also turn the dough out onto a lightly floured surface and knead by hand for 6 to 8 minutes.
- Proof. Place the dough in a greased bowl, turning once to grease the top. Cover with a kitchen towel or plastic wrap and let the dough proof in a warm place until doubled, about 30 minutes.
- Shape and rise. Preheat the oven to 500°. Then, punch the dough down and divide it into six equal-sized balls, about 265 grams each. Place the balls 3 inches apart on two greased baking sheets.
- Score and bake. Prior to baking, brush the risen dough balls gently with egg wash and then spray with water. Using a sharp knife (or a bread lame), score the dough with shallow cuts in an “X” pattern.
