MY PIZZA DOUGH (FAT FREE)
I sometimes use this pizza dough as a substitute for my grandmother's recipe (which contains leaf lard). This recipe works, but I prefer Nana's, LOL ;) NOTE: The 2 hour "cooking time" is the rising time for the dough.

Steps:
- Dissolve yeast in 1/4 cup water, let stand for about 5 minutes.
- Dissolve salt in 1 cup of warm water, place in a large bowl; add yeast and about 2 1/2 cups of sifted flour to the bowl - stir well to make a soft dough.
- On a board, place remaining flour, make a well in center and add the dough to the well.
- Knead the remaining flour into the soft ball of dough, turning the dough 1/4 turn as you knead and add flour, until dough is smooth and elastic and does not stick to hands or unfloured board.
- Cover dough and let rise in a warm place for about 45 minutes.
- Divide dough into 2 equal pieces, knead each piece for a few minutes, shape each into a ball, cover with a cloth and let rise for about 1 hour 15 minutes or until doubled.
- Place the dough on a floured board and pound it lightly to deflate it.
- Work and stretch each piece of dough until large enough to cover a round 12-inch pie plate (flouring both sides of dough to keep it from sticking to the board, hands or pie plate/pizza pan).
- Add sliced tomatoes and toppings as desired, bake in preheated 400° oven for 20-30 minutes, remove from oven, let cool for 5 - 10 minutes before slicing, serve hot.

GLUTEN FREE PIZZA DOUGH
A simple, straightforward gluten free pizza dough recipe. Also egg free! From one of the Mom's that raised me...thanks Alice! Omit the xanthan gum if your mix already includes it.

Steps:
- Mix dry ingredients together and add oil and water, mixing well.
- Pat onto lightly oiled pizza pan with hands.
- Bake in pre-heated 425 oven for 20 minutes.
- Add your choice of delicious toppings.
- Bake another 15 minutes, or until cheese and crust start to get golden brown.
- Enjoy!

SUPER FAST LOW FAT PIZZA CRUST
This is a super fast pizza crust I fall back on when there is absolutely no time. It makes a thick doughy crust. I top it with a jar of spaghetti sauce, shredded mozzarella, and veggies for a quick and reasonably healthy meal the kids will eat! Modified from "500 Fat Free Recipes"

- Preheat the oven to 425.
- Mix all ingredients.
- Spray a 9x13 inch baking pan (casserole size) with cooking spray or grease in your usual manner.
- Top with your favorite pizza sauce, cheese, and toppings.
- Bake for 25 minutes or until the crust is crispy and golden.

OOPS, IT'S A FAT FREE PIZZA CRUST
I was making pizza for my kids and their friends tonight. I had 3 crusts to make and was already on my second when I realized that I had forgotten to add the oil to my first crust. I made yet another in case the fat free one did not work out, but it was just great. Therefore, this is my new normal crust!

Steps:
- In a small bowl mix 1/4 cup of the warm water with the yeast and the sugar. Stir it well to try to dissolve the yeast and sugar. Let it sit for about 5 minutes or until it gets foamy.
- Meanwhile, in a food processor, combine the flour and salt. Pulse for about 5 seconds.
- When the yeast mixture is foamy add it to the flour and pulse for about 10 seconds.
- Turn the machine on. Start adding the remaining water a little at a time until the dough forms a ball.
- Once it forms a ball let it spin 25 times.
- Spray a cookie sheet with cooking spray. Put the ball of dough on top and cover it with a metal bowl you have sprayed with cooking spray. Let it sit there between 15 and 30 minutes depending on how much you want it to rise.
- Heat the oven to 425. When the dough is done rising, pat it out on your cookie sheet into the shape you want for your pizza.
- (Mine are often triangles because I am not very good at this step! But they sure are tasty!) Prick the crust repeatedly with a fork and bake it for about 5 minutes.
- Take it out of the oven. You can top it immediately or let it sit depending on your need.
- Once you have topped it, the pizza will need about 15-20 minutes to cook, or until brown.
