WARM BACON VINAIGRETTE
This recipe was developed to go dress the greens on a braised bacon tartine recipe, but it's so delicious there isn't a salad it wouldn't improve. Spinach and mushroom would be the classic pairing for this kind of vinagrette - all the better with a poached egg - but let your imagination and taste buds go wild. This recipe makes a hefty portion, but it keeps well in the fridge and is great to have on hand. Just gently warm up before serving.Recipe by chef Ben Grupe of Tempus

Steps:
- Step 1: In a pan, cook the 4 strips bacon until crisp. Add the 1/4 cup minced onions, 1 clove minced garlic, and minced shallot to the bacon fat and cook until tender without getting any color on them. Season with salt and pepper.
- Step 2: Add 2 tablespoons each granulated and brown sugars and cook for 1 minute.
- Step 3: Add 1 cup apple cider vinegar and thyme spring. Continue to simmer.
- Step 4: Once the vinegar is reduced by 25 percent, remove the thyme and pour the vinegar mixture into a food processor.
- Step 5: While food processor is on high, add olive oil in a slow steady stream to emulsify. Taste and use immediately or reserve.

SHALLOT VINAIGRETTE

- In a small mixing bowl, whisk together the vinegar, mustard, salt, and pepper to taste. Stir in the shallots. Gradually whisk in the oil to make a smooth dressing. Use immediately or store covered, in the refrigerator, for up to a week.
WARM BACON VINAIGRETTE
From Southern Living. Great salad dressing. The directions state to puree in blender, however, it works just as well simply shaking in a jar.

Steps:
- Cook bacon in large skillet until crisp; remove bacon and drain on paper towels. Reserve 2 T drippings in skillet.
- Cook shallots and garlic in hot drippings for 3 minutes, or until tender. Add brown sugar and cook stirring constantly for one minute or until sugar is dissolved.
- Process garlic mixture, orange juice, and remaining ingredients in blender until combined.
- FYI the cooked bacon is not actually used in this recipe, but you can top your salad with it if desired.

FRISEE SALAD WITH WARM VINAIGRETTE
Steps:
- Fill a large skillet with water, bring it to a boil, and add the vinegar and a large pinch of salt. Reduce the heat until the water is just barely bubbling. Crack each egg into a small bowl and carefully slide the egg into the water. Cook until the eggs are set, about 3 1/2 to 4 minutes. Remove the eggs with a slotted spoon and dab the bottom with paper towels to dry them off; set aside and keep warm.
- Put the bacon and shallots into a cold skillet with a tablespoon of olive oil and cook over medium heat until the bacon is browned and crisp; be careful not to let it burn. Remove with a slotted spoon, drain on paper towels, and set aside. Meanwhile, get a jar with a tight fitting lid. Add the mustard, remaining 4 tablespoons olive oil, red wine vinegar, and lemon juice. Shake well to combine the ingredients, add the chives, taste, and season with salt and pepper.
- Put the frisee into a large bowl and toss it with the dressing the cooked bacon and shallots. To serve, place a large mound of salad onto a plate and top with a poached egg. Garnish with some chives and a drizzle of olive oil.
WARM ASPARAGUS AND BACON TOAST WITH RED PEPPER-SHALLOT VINAIGRETTE

- Preheat the oven to 350 degrees. Place the asparagus on a baking sheet in 4 bunches of 4 or 5. Place 2 pieces of bacon over each bunch, forming an X. Bake for about 15 minutes, or until the asparagus is partially cooked. Remove from the oven, leaving the oven on.
- Lightly toast the bread in the oven. In a small bowl, combine the oil and garlic and brush on the bread. Transfer each bundle of asparagus and bacon to a slice of bread and top with a slice of cheese. Place on the baking sheet and bake for an additional 3 to 5 minutes, or until the cheese is melted.
- To serve, spoon 1/4 of the vinaigrette on each of 4 plates. Place a warm toast on each pool vinaigrette.
- To make the vinaigrette: In a medium bowl, whisk together the oil, vinegar, salt, and pepper. Stir in the chives, olives, shallots, and bell pepper; set aside.

- In a large skillet, cook the bacon in the olive oil over moderately high heat until browned and crisp, about 6 minutes. Remove from the heat and stir in the shallot, vinegar, mustard and thyme.
- Scrape the dressing into a large bowl. Add the plums and spinach, season with salt and pepper and toss. Add the nuts and crumbled blue cheese and toss again. Transfer the salad to plates, top with the sliced ham and serve.
