This homemade Blueberry Cake is a simple single-layer snack cake loaded with juicy blueberries, you'll want to keep this recipe on hand for all your summer gatherings.

Provided by Rebecca Hubbell

Categories     Dessert

Time 55m

Number Of Ingredients 8

1 cup all-purpose flour
1 cup granulated sugar (+ 2 tablespoons)
1/2 teaspoon kosher salt
1/2 cup unsalted butter (melted)
2 large eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups blueberries

Steps:

  • Preheat oven to 350 degrees F. Grease and line 8 or 9-inch round cake pan with parchment paper (like this) and set aside.
  • In a large bowl, whisk together flour, 1 cup sugar, and salt. Reserve about 2 tablespoons of the flour mixture to a medium-sized bowl and set it aside.
  • Whisk in the melted butter, eggs, and extracts into the flour and sugar mixture.
  • Add the blueberries to the medium bowl with the reserved flour and toss to coat. DO NOT skip this step, tossing the blueberries in flour prevents them from sinking to the bottom of the cake while it's baking. Then fold them into the batter.
  • Add the batter to the prepared cake pan and spread until evenly distributed. Top the batter with a few extra blueberries and sprinkles with 2 tablespoons of granulated sugar.
  • Baked for 40 to 50 minutes or until a toothpick or cake tester comes clean from the center of the cake. Allow the cake to cool for 10 minutes before serving. Serve with ice cream or icing.

EASY 2-LAYER BLUEBERRY CAKE

Easy 2-Layer Blueberry Cake image

This is a great recipe that is simple and delicious! The base consists of using a box cake mix, so it's easy and saves on time. I did not include the 4 hour refrigeration time in the "prep time". I suggest making the cake before bed and assembling the rest in the morning. I use fresh blueberries, but if they are hard to find, well drained frozen blueberries should taste just as well.

BLUEBERRY STACK CAKE

Blueberry Stack Cake image

This is a recipe I got from a friend's grandmother; everyone who has ever tried it has wanted the recipe. They're also usually surprised at how easy it is to make; they think it takes alot more work than it does. If you don't like blueberries, you can try other types of fruit; one of the ladies at work told me she tried it with raspberries and it was just as good.

Steps:

  • Heat the oven to 180C/160C Fan oven. Grease a 900g/2lb loaf tin then line the base and ends with grease proof paper.
  • Put the butter, sugar, flour, eggs and vanilla extract into a large bowl and beat with an electric hand mixer for 5 minutes until pale and creamy - the mixture will be very thick.
  • Spread one-quarter of the mix into the tin, then scatter over a third of the fruit.
  • Carefully dot and spread another quarter of the cake mix on top, and scatter with another third of the fruit, repeat this step.
  • Finally dot the rest of the cake mix over and gently spread with the back of a spoon.
  • Bake for 1 hour until an inserted skewer comes out clean, then leave to cool.
  • Mix the icing sugar and soft cheese to make the frosting then smooth onto the top of the cake. I normally start with 100g of soft cheese and add as much icing sugar as I think it needs.

  • In a large mixing bowl, whisk together the yogurt, sugar, vanilla and eggs for a few minutes until creamy and smooth. Whisk in the oil, then set aside the wet batter. • Cut the cooled angel food cake into cubes about 1 inch in size. Pro Tip: If you are baking the cake yourself for this recipe, make sure to let it cool fully before cutting it so that it doesn’t make the other ingredients too warm. Pro Tip: The best knife to use when cutting angel food cake is one with a serrated blade, it will cut the cake easier, and you won’t lose the airy, fluffy texture of the cake.
  • Layer half of the cake pieces evenly in the bottom of a 9x9 cake pan (metal or glass). Pro Tip: If you have a trifle bowl and are serving this at a potluck, the trifle bowl would show the fancy layers of this dessert even better.
