ONION PAN-FRIED PORK CHOPS
I made this up one day because I was wanting something different then the same old pan-fried pork chops (that is how my husband asked me to cook them that day). So made this up real fast and boy did he love them. Now he asks for them every time. I do this with boneless and bone-in pork chops. So it doesn't matter what kind you have on hand just cook them up and enjoy. My husband loves these.

Steps:
- With your hands and onion soup mix still in sealed packet crush onions up some what, but you do not want to make them into a powder you just want to break them up.
- Mix flour and onion soup mix in a shallow bowl.
- Add enough oil to bottom of a pan that would cover about half way up your pork chop.
- Heat on medium heat until when you add flour mix to pan it sizzles.
- Coat each pork chop with flour mixture.
- Add to pan, about 30 seconds after adding the chops turn over, and cook until done (about 4-5 minute per side for ½ to 3/4 inch pork chop).

- Before opening the onion soup mix, use your hands to crush the larger bits of onion in the packet. Open the packet, and pour the mix into a shallow bowl. Stir in the flour.
- Heat the oil in a heavy skillet over medium heat. The oil is hot enough when a pinch of the flour mixture sizzles when tossed into the oil. Coat pork chops in the onion soup mixture, and shake off the excess. Carefully place in the hot oil. Turn chops over after about 30 seconds to quickly sear both sides. Cook for about 4 minutes per side, or to desired degree of doneness.

Steps:
- Sprinkle pork chops with creole seasoning.
- Dredge pork chops in flour, shaking off excess.
- Cook pork chops in hot vegetable oil in a large skillet over med-high heat 1-2 minutes on each side or until golden brown.
- Remove from skillet and keep warm.
- Add in onions and water, stirring to loosen particles from the bottom of the skillet; saute 10 minutes or until golden brown.
- Return pork chops to skillet; lower heat to low; cover and simmer 5 minutes.

PAN FRIED PORK CHOPS
Steps:
- Wash the pork chops, pat dry and season with salt and pepper to taste. In a large skillet, heat the oil. Flour the pork chops and sear in the oil. Cook for about 1 minute per side to brown. Remove the pork chops from the skillet and place the cooked pork chops on a paper bag to absorb the excess oil. Put the chops back in the skillet and add the chopped onion and 3 to 4 cloves of chopped garlic to pot with 1/4 cup of water. Put a lid on the pot and steam the chops for approximately 20 minutes.
- For the collard greens: Remove the stems, cut up and wash the collard greens. Then par boil the ham hocks in water for about 5 to 10 minutes. Drain the ham hocks. In a large pot, heat the shortening. Saute ham hocks, then add greens, on low fire with pot covered. Allow greens to cook for about 1 1/2 hours over low heat. Season with salt and pepper, to taste.
- For the cornbread: Mix all ingredients and put in a greased pan. Bake in a preheated 400 degree oven for 30 to 40 minutes, or until a tester comes out clean.
- Serve the pork chops with some collard greens and cornbread.
PAN FRIED PORK CHOPS

- Salt and pepper both sides of the pork chops.
- Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
- Heat the canola oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.
- Delicious and simple! Serve with smashed new potatoes.
ONION-AND-PEPPER PORK CHOPS

- Dust the pork chops on both sides with the flour; season with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over high heat. Add the pork chops and cook until golden brown, 4 minutes. Flip; cook until lightly golden on the other side, 2 more minutes. Remove to a plate.
- Reduce the heat to medium high; heat the remaining 1 tablespoon olive oil in the skillet. Add the bell peppers, onion, chopped garlic, pepperoncini, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are softened, 10 minutes. Stir in the pepperoncini brine and chicken broth. Return the pork to the skillet. - Meanwhile, preheat the broiler. Combine the butter, grated garlic and 1/4 teaspoon salt; spread on the bread. Transfer to a baking sheet and broil until toasted, 1 minute. Slice the bread and sprinkle with the parsley. Serve with the pork chops and vegetables.

- Pound pork chops to about 1/2 inch thick.
- Season with salt and pepper.
- Heat oil in a large skillet (with a lid) over medium-high heat.

- Heat oil in a large skillet over medium heat. Coat the pork chops with flour, and place in the skillet. Brown about 4 minutes on each side.
- In a small bowl, mix the Parmesan cheese, salt, and pepper. Sprinkle 1/2 the Parmesan cheese mixture over the pork chops. Layer chops with the potatoes. Sprinkle with remaining Parmesan cheese mixture. Top with onion slices.
- In a small bowl, dissolve the beef bouillon cubes in hot water. Stir in the lemon juice. Pour over the layered pork chops.
- Cover skillet, and reduce heat. Simmer 40 minutes, until vegetables are tender and pork chops have reached an internal temperature of 145 degrees F (63 degrees C).

- Wash pork chops, pat dry and season with salt and pepper to taste.
- In a large skillet, heat the oil - medium high heat.
- Dredge chops in flour and shake of excess and sear in the heated oil - cook for about 1 minute per side to brown.
- Remove chops from skillet and place on a brown paper bag to absorb excess oil.
- Turn skillet to medium low and add onion and garlic to the pan. Cook for about 2 minutes to soften the onion and then add chops back to the skillet.

- Wash chops, pat dry. Dip in flour, then egg, then breadcrumbs. Heat oil, and add potatoes, and onions. Place breaded chops on top, and let cook slowly over medium heat. Once chops begin to brown, give the pot a "stir", so that any browned potatoes can rise up to the top, and the chops can continue to brown evenly. Drain on a paper towel, and serve one chop with a side of onions and potatoes.
- I like to seve this with a dollop of sour cream, and some green beans!

- Heat the olive oil in pan on top of stove over medium heat until very hot.
- Sear pork chops on both sides; remove from pan.
- Reduce heat and sauté onion and garlic until soft.
- Return pork chops to pan, placing them on top of onions and garlic.
- Add a little water and cover pan tightly with lid.
- Let simmer over medium heat until pork chops are well done, adding a little water as necessary to keep from burning.
- Remove chops from pan and let the sauce cook until thickened.
- Spoon over chops to serve.
- Note: If you want more "gravy" add water and flour at the end to thicken.
