Steps:
- In a 3-qt. saucepan over medium heat, saute onions in butter. Add broth, pepper, thyme and salt if desired; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add 1-2/3 cups milk. Stir flour into remaining milk until smooth; add to soup. Bring to a boil; boil and stir for 2 minutes or until thickened.

Steps:
- Trim ends and all but 3 inches of green tops from leeks; remove tough outer leaves.
- Split leeks lengthwise; rinse well, then thinly slice crosswise.
- Melt butter in a 5-6 quart pan over medium-high heat.
- Add leeks; cook, stirring often, until soft (8-10 minutes).
- Stir in flour and white pepper; then stir in broth.
- Bring to a boil over high heat, stirring, add onions; cook, stirring, just until onions turn bright green (2 minutes).
- Stir in lemon juice and season to taste with salt.
- To serve, ladle soup into bowls.
- Garnish each serving with lemon slices and a dollop of sour cream.
- Makes 6 servings.

MY BEST CLAM CHOWDER

- Drain juice from clams into a large skillet over the onions, celery, potatoes and carrots. Add water to cover, and cook over medium heat until tender.
- Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables and clam juice. Heat through, but do not boil.
- Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, stir in vinegar, and season with salt and pepper.

- In a large bowl, combine beef, onion, egg and ketchup. Season with salt, pepper, oregano, and Worcestershire sauce. Lightly mix in cheddar cheese. Shape beef mixture into 6 thick patties. Preheat oven on broiler setting.

- Heat the vegan butter in a large soup pot on medium high. Add all the thinly sliced onions and start to saute them. Stirring constantly. Sprinkle with a bit of salt and pepper. Saute until they are translucent, reducing heat as needed. About 5 minutes.
- Now, reduce heat to medium low, and continue to cook until fully caramelized. Stirring every few minutes. It will take about 30-45 minutes to caramelize the onions. You know they are done when they are very brown and could melt in your mouth.
- Once the onions are caramelized, add the garlic, bay leaves, thyme, diced potatoes and white wine(if using). Simmer for about 10 minutes or until the wine is mostly absorbed by the onions and potatoes.
- While the wine cooks, make cashew cream. Drain the raw cashews that you soaked for at least 8 hours in cold water, I like to do it overnight. If you are in a pinch, you can soak them in boiling water for 15-30 minutes. Add the drained cashews to a blender with 1 cup of the vegetable broth, the nutritional yeast, lemon juice and a pinch of salt and pepper. Blend on high until it is completely smooth.
