These from-scratch breakfast-sausage patties are an easy and great way to avoid preservatives and additives.

Steps:
- In a small bowl, mix together pork, sage, thyme, maple syrup, pinch of nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Divide mixture into 4 patties (about 3 tablespoons each).
- In a medium skillet, heat oil over medium-high. Add patties and cook until browned, about 1 minute. Reduce heat to medium and flip patties. Cover and cook until cooked through, 5 to 8 minutes.

- Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

- In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
- Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
- Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).

FRESH HOT BREAKFAST SAUSAGE LIKE JIMMY DEAN
Fresh breakfast sausage can be made using your own meat grinder and using pork butt or picnic roast or with ground pork you buy at the store. Of course if you cut and grind your own pork, it will take longer. This recipe prep-time assumes your pork is already ground. You can add all the ingredients, mix and fry it, but it is better if you let it rest for an hour or more, mix again, and then fry it.

- Preheat the oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.

SPICY BREAKFAST SAUSAGE
This delicious sausage can be stuffed into casings or formed into patties. I use a wide-mouth canning jar ring and lid to make the patties. Place the ring, top down on the counter. Lay a piece of plastic rap on top of it. With an ice cream scoop, place the sausage into the ring. Lay another piece of plastic wrap on top and smash down with the lid. Perfect size for muffin, egg, cheese and sausage sandwich.

- Mix together ground beef, ground pork, bread crumbs, beef broth, brown sugar, 1 1/2 teaspoons onion powder, 1 1/4 teaspoons kosher salt, 1 1/4 teaspoons pepper, 1 1/4 teaspoons coriander, 1/2 teaspoon nutmeg, and 1/4 teaspoon allspice in a large bowl until well combined. Shape some of the mixture into 2 or 3 small patties and place remaining sausage mixture in the refrigerator.
- Heat oil in a large skillet over medium-low heat. Add sausage patties and cook until browned and cooked through, 3 to 5 minutes per side; do not overcook or sausages will be dry. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
- Taste cooked sausages, adding more salt, pepper, and/or spices to the uncooked mixture as desired. Press uncooked sausage mixture into loaf pans and place in the refrigerator until firm, 2 to 3 hours.
- Remove sausage "loaves" from the pans and slice into 1/2-inch slabs. Separate slabs with plastic wrap and store in the refrigerator if you will be cooking all sausage within 4 days. Cook as directed above, over medium-low heat.
