SARAH'S OKLAHOMA ONION BURGER

Sarah's Oklahoma Onion Burger image

Onion burgers are one of America's greatest regional renditions, but be warned--these are diner style, and prepare for those drops of grease, but don't let it scare you. They're so craveable, you may want to eat a second! You do not want to use anything under an 80/20 fat ratio. If you do, they won't be good.

Time 25m

Yield 4

Number Of Ingredients 11

2 tablespoons salted butter
1 tablespoon olive oil
1 large onion, very thinly sliced
½ teaspoon granulated garlic
1 pound 85% lean ground beef
½ teaspoon salt
1 teaspoon Hamburger Seasoning
½ cup sliced portobello mushrooms
ground black pepper to taste
4 slices Swiss cheese
4 rolls rolls or buns, hamburger, white, enriched, plain

Steps:

  • Heat a skillet over medium heat. Add butter and oil; heat until butter is melted. Add onion and garlic. Cook until onion is soft and translucent, about 5 minutes.
  • Meanwhile, divide ground meat into 4 portions and shape into patties. Season with salt and seasoning.
  • Heat a large skillet or flat-top over medium-high heat for a few minutes. Place patties into the hot skillet and smash with a spatula or bacon press. Hold patties down for 30 seconds, then cover each patty with some of the cooked onion. Cook for 2 minutes. Carefully flip burgers, making sure to scrape the browned bits off the skillet.
  • Press down on the flipped patties to sink the onions into the meat.
  • Meanwhile, add sliced mushrooms to the skillet used for the onion and cook until softened, about 5 minutes.
  • Season patties with salt and pepper and place a slice of cheese on each. Cook until burgers have reached the desired doneness, 2 to 4 minutes more. Top each patty with leftover onion and mushrooms and serve on buns.

1 whole large onion, halved and sliced
1 1/2 pounds ground beef
5 dashes Worcestershire sauce
Salt and fresh ground black pepper
8 slices rye bread
8 slices Swiss cheese

  • Melt 2 tablespoons of the butter in a separate skillet over medium heat. Cook the patties on both sides until totally done in the middle.

  • On a clean griddle or in a large skillet over medium heat, melt 2 tablespoons of the butter and grill the sandwiches until golden brown. Remove the sandwiches and add the remaining 2 tablespoons butter to the skillet. Return the sandwiches to the skillet, flipping them to the other side. Cook until golden brown and crisp, and until the cheese is melted. Slice in half and serve immediately!

WORLD'S GREATEST MUSHROOM-ONION BURGERS

World's Greatest Mushroom-Onion Burgers image

I love a great burger... in fact even if I were mega-rich and could eat the priciest food available, burgers would still be gracing my meals more often than anything else I can think of! I've heard of $24 dollar gourmet burgers and such... but you can make this for a whole lot less money and still be in burger heaven... Another fabulous comfort food fix from "Great Food From Mom's Diner".

Time 38m

Yield 4 serving(s)

Number Of Ingredients 11

3 cups sliced onions
4 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1 lb lean ground beef
2 tablespoons Worcestershire sauce
1/2 teaspoon fresh coarse ground black pepper
2 garlic cloves, minced
3/4 cup shredded swiss cheese (3 ounces)
4 slices French bread, 3/4-inch-thick diagonally cut
1 tablespoon olive oil

Steps:

  • In a large skillet cook onion in the 4 teaspoons hot oil over medium heat about 10 minutes or until golden brown; stir occasionally. Stir in salt and a 1/4 teaspoon pepper. Cover; keep warm.
  • Meanwhile, in a large bowl combine beef, Worcestershire sauce, the 1/2 teaspoon of pepper, and the garlic. Divide into eight equal portions. Shape each portion into a 4-inch diameter patty. Place one-fourth of the cheese on each of four of the patties. Top with the remaining patties, pressing down lightly and sealing edges well. Grill patties directly over medium coals for 14 to 18 minutes or until done (160 degrees F), turning once halfway through grilling. (Or, place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from heat for 14 to 18 minutes or until done, turning once halfway through broiling.).
  • Brush bread slices lightly with the 1 tablespoon olive oil. Add bread slices to grill rack or broiler pan the last 2 to 3 minutes of cooking time or until toasted, turning once. To serve, place patty on a toasted French bread slice; top with onion mixture.

MOLTEN CHEESE-STUFFED BURGERS

Molten cheese-stuffed burgers image

Take burgers to the next level by stuffing them with cheddar and mozzarella for a gooey centre, and topping them with a dollop of herby burger sauce

Provided by Esther Clark

Categories     Dinner, Main course, Supper

Time 1h20m

Number Of Ingredients 19

1½ tbsp olive oil
1 onion , very finely chopped
70g smoked pancetta , finely chopped
1 garlic clove , crushed
4 thyme sprigs, leaves picked
500g lean beef mince (no more than 10% fat)
50g fresh breadcrumbs
1 egg yolk
60g mature cheddar , grated
60g grated mozzarella
120g mayonnaise
2½ tsp English mustard
½ small bunch of parsley , finely chopped
½ small bunch of basil
50g baby gherkins , finely chopped
4 seeded burger buns , split
2-3 Little Gem lettuces , leaves separated
2 ripe tomatoes , sliced
crispy fried onions

Steps:

  • Heat the oil in a frying pan over a medium heat and fry the onion with a good pinch of salt for 15 mins until soft and translucent. Add the pancetta and cook for 5 mins more, then add the garlic and thyme, and cook for 2 mins. Remove from the heat and leave to cool for 15 mins.
  • Tip the mince into a large bowl. Massage with your hands for 5 mins to tenderise the meat, then add the cooled onion mix, the breadcrumbs and egg yolk. Season generously. Divide evenly into four, weighing for accuracy, if you like. Mix the cheddar and mozzarella together. Form the beef portions into patties, patting each into a 10cm round. Divide the cheese mixture into four, and, in your hands, form each portion into a firm ball, then press into a roughly 4cm disc. Working one at a time, put a cheese disc into the centre of a beef patty, then bring the meat around the cheese to cover. Lightly pat with the palm of your hand to flatten slightly, then chill, covered, for at least 30 mins or up to 48 hrs.
  • Make the sauce by whizzing the mayonnaise, mustard and herbs together in a small food processor. Stir through the gherkins, then cover and chill until ready to use.
  • Light the barbecue. When the flames have died down, grill the burgers on each side for 4-5 mins until charred (if you don't have a barbecue, see tip, below). Wrap individually in foil and leave on the barbecue for 5-7 mins so the cheese centre melts.
  • Grill the buns, cut-side down, for 1-2 mins until toasted. Spread all the cut sides with the sauce, then fill with the beef patties, lettuce, tomatoes and crispy onions.

  • Slice the onion very thinly, then toss it with a little salt in a bowl and set aside for a few minutes. Divide the meat into four patties.
  • Heat a large frying pan or flat top over medium high heat for a few minutes. When it's hot, add the canola oil. When it's hot, place a patty on the pan and smash it with a spatula or bacon press. Hold for 30 seconds. Sprinkle black pepper on the patty, then cover the patty with onions. It's OK if a few spill onto the hot pan. Cook like this for 2 minutes.
  • Carefully flip the burger. You want to scrape the pan to get everything, in case you have some spots that have stuck. I use my off hand to hold the onions onto the patty as I flip. Once flipped, Press down on the patty to sink the onions into the meat.
  • Add salt and pepper to the patty and lay a slice of cheese onto it. Let this cook for 2 to 4 minutes, depending on how cooked you want your meat. Two minutes will give you a nice medium.
