BACON SWISS BURGER
This bacon Swiss burger is smashed and cooked in a cast-iron skillet on the grill to achieve a crispy crust and juicy interior. Topped with bacon, Swiss cheese, and all the fixings, it's our newest go-to burger.

Steps:
- If using a charcoal grill, open the bottom vent of a charcoal grill completely. Light a charcoal chimney starter filled with charcoal. When the coals are covered with gray ash, pour them onto the bottom grate of the grill. Adjust the vents as needed to maintain an internal temperature of 400°F (204°C).If using a gas grill, preheat to medium-high (400°F | 204°C).
- While the grill is heating, loosely form the beef into six 1/3-pound (151 g) patties, about 1-inch (25-mm) thick. Season each patty with salt and pepper.
- Once the grill reaches 400°F (204°C), place a large, seasoned cast-iron skillet on the grill grate over direct heat and let the skillet heat for 2 minutes.
- Add 3 of the patties to the skillet and gently smash each once with a spatula. You should hear a sizzle. Cook undisturbed and uncovered, until they develop a sear, 3 to 3 1/2 minutes, depending on how well done you like your burgers.
- Flip the patties, and cook to the desired doneness, 2 to 3 1/2 minutes for medium-rare.
- Divvy half of the bacon and cheese among the patties, cover the grill, and cook just until the cheese has melted, 30 to 45 seconds. Transfer the patties to a plate and keep warm while repeating with the second batch.
- If desired, add the buns to the hot skillet, cut-sides down, working in batches again, and toast in the pan drippings until lightly browned, about 1 minute.
- Generously spread some of the mayonnaise on the cut sides of each toasted bun, add the burgers, and top with your desired toppings. Sandwich 'em up and serve immediately.

BACON-MUSHROOM-SWISS BURGER
Basic gets a boost when you pair burgers with crisp, smoky bacon, earthy mushrooms and melty Swiss cheese. The herbed mayonnaise adds instant sophistication, and toasting the buns gives an extra layer of texture. Sweet potato fries or chips go great with this burger.

Steps:
- 1. If you will be grilling the burgers, preheat a barbecue grill to medium-high.
- 2. While the grill is heating up, cook the bacon on the stovetop in a large skillet over medium-low heat until it is just crisp, 6 to 7 minutes. Transfer the bacon to a plate lined with paper towels and set it aside to drain. (If you prefer to panfry the burgers, reserve 2 tablespoons of the bacon fat in the skillet.)
- 3. Place the beef, Worcestershire, Tabasco, thyme, and salt and pepper in a bowl, and toss lightly with a fork to combine. Form the mixture into 4 patties, each about 3 inches in diameter and 1 inch thick.
- 4. When you are ready to grill the burgers, oil the grill grate well. Add the burgers and grill for about 3 minutes for rare, 4 minutes for medium-rare meat. Turn them over and grill for another 3 or 4 minutes, topping the burgers with the cheese in the last minute of cooking. (Or panfry the burgers in the hot bacon fat over medium heat for 3 minutes per side for rare meat, adding the cheese as described.)
- 5. Place the burgers on the toasted buns, and top them with the bacon, tomato, onion, avocado, and lettuce. Cover with the tops of the buns and serve immediately.

- In a bowl or shallow dish, mix the buttermilk with the hot sauce well. Should be a lovely shade of pink. Place the onions into the buttermilk mixture and make sure they’re submerged. Cover tightly and place in the fridge to get happy for at least 3 hours, longer is better.
- Mix the flour, cornmeal, panko together well. Add a tbsp of dried parsley. Liberally season the flour with your seasoning of choice.
- When you’re ready to batter up your onion rings: lift them out with a fork and toss into the flour mixture. Make sure they’re evenly coated. Do this with every ring, then place into the refrigerator for about 20 minutes (no longer than 10 minutes in the freezer) to help them set up and prevent your flour mixture from floating off into the oil.
- When ready to fry, heat your oil to 375 degrees. Remove the onion rings from the freezer and gently place into the oil and fry until golden brown. Immediately season with salt when you take them out of the oil.

- Line a half-sheet pan with foil. Weave bacon on prepared pan according to instructions in post. Place the pan on the center rack of a cold oven. Set oven to 325°F. When oven reaches temperature, bake the bacon for 25-30 minutes, or until a mahogany brown and cooked through. Remove the pan, let the bacon sheet rest for 2 minutes before transferring to a paper towel lined plate. Let it rest while you prepare the burgers.
- Form 4 roughly equal sized patties and season evenly with adobo or salt and pepper on both sides. Preheat grill or frying pan to medium high. Lay the patties down over direct heat and don't mess with them! After 3 minutes or so (each grill and stove is different, so watch for the visual cues), you'll begin to see juices starting to pool on top of your burger. Flip them gently and leave them alone again. At about 3 minutes on each side, your burger should be medium rate, but do yourself a favour and use an instant read thermometer to check! Lay a slice of Swiss cheese on each burger about 2 minutes after the first flip to give it time to melt. - Five Guys Bacon Cheeseburger. The Five Guys Bacon Cheeseburger is the greatest hits package of fast food bacon cheeseburgers. Do you like the smokey flavor of Carl’s Jr’s Western Bacon Cheeseburger?
- Wendy’s Baconator. The Baconator is probably the first cheeseburger that comes to mind when someone says the words “bacon cheeseburger.” It has set the standard for the modern fast-food bacon cheeseburger — two quarter-pound beef patties, two pieces of melted American, and no lettuce.
- Shake Shack SmokeShack. The SmokeShack is your choice of a single or double cheeseburger with delicious Niman Ranch applewood smoked bacon, chopped cherry peppers, and ShackSauce — which is basically a thousand island-type sauce — on a spongey potato bun.
- Carl’s Jr. Western Bacon Cheeseburger. If you think the Western Bacon Cheeseburger is way too high on this list, I can understand that, but most of the good bacon cheeseburgers out there are clearly influenced by the standards set by Wendy’s Baconator.
- Rally’s/Checkers BaconZilla. Like the Bacon King, the BaconZilla is also inspired by the monstrous presentation of the Baconator. Unlike the Bacon King, Rally’s BaconZilla actually has its own thing going on.
- Burger King Bacon King. The Bacon King is a fairly new bacon cheeseburger on the scene, debuting a few years back along with the Crispy Chicken sandwich when BK revamped much of their menu.
- McDonald’s Bacon Quarter Pounder With Cheese. Remember when we said there wouldn’t be any trendy promotional burgers on this list? Well, we lied. Kind of.
- Jack in the Box Bacon Ultimate Cheeseburger. Jack in the Box has had a fall from grace unlike any other fast-food restaurant. JiB use to be the place that didn’t “make it until you order it” but anyone who has been in the last… I want to say ten years, knows full well that Jack in the Box is the type of food you don’t eat unless you’re drunk and everything else is closed.
