Steps:
- For the confit: In a high-sided skillet, heat the butter and oil over medium heat. Add the onions, apple slices, salt, and pepper. Cook until the onions begin to soften, about 5 minutes. Add the vinegar, maple syrup, and thyme. Reduce the heat to low and cook, stirring occasionally, until onions and apples are very soft, about 50 minutes.
- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Arrange the bread slices on a baking sheet in a single layer. Drizzle with oil and bake until lightly golden, 12 to 14 minutes. Remove the baking sheet from the oven and place the gorgonzola squares on top of the warm toasts. Spoon the confit on top of the cheese. Sprinkle with chopped thyme and serve.
- Cook's Note: Freeze the gorgonzola for 20 minutes for easier slicing.
ONION CONFIT
Onion confit is both one of the easiest and most sophisticated condiments you will ever make.

- Add butter and olive oil to a large skillet and heat over a low flame. Add onions and salt and cook, stirring occasionally, until softened and translucent, 15-20 minutes. If onions begin to dry out, add a tablespoon of water.
- Add sugar, stir to dissolve, and add vinegar and caraway seeds (if using). Continue cooking over low heat, stirring occasionally, until onions are pasty and caramelized, about 15 min.
- Onion confit can be stored in the fridge in an airtight container for up to one week.
ONION AND SHALLOT CONFIT
Slow-cooking onions in olive oil brings out their sweetness, which is offset by the acidity of the tomatoes and vinegar. This confit is wonderful with grilled meats. You'll want to keep some on hand all summer.

- Preheat oven to 275 degrees. Heat oil in a small Dutch oven or other heavy 3-quart pot over medium-high heat. Add shallots and onions, tossing to coat, then bring to a simmer. Add tomatoes, oregano, rosemary, 1 tablespoon salt, and a pinch of red-pepper flakes. Cover, and transfer to oven.
- Bake until onions are very tender, about 2 1/4 hours. Uncover, and bake until onions are slightly golden around edges, about 15 minutes more. Stir in vinegar, and let shallots and onions cool slightly in oil. Before serving, discard herb sprigs. Serve warm or at room temperature.
DAVID TANIS'S ONION CONFIT
The French word "confit" usually refers to food that is slowly cooked in some kind of fat. Originally, confit was a method used for preserving meat, typically duck, goose or pork. When stored and cooled in earthenware crocks, a layer of fat on top kept the food from spoiling by sealing out air. Onion confit, on the other hand, is a savory preparation of sliced onions, cooked to a soft, almost melting consistency, often seasoned with salt, herbs, sugar and vinegar for a somewhat sweet-and-sour effect. Sometimes called onion marmalade, a spoonful or two makes a perfect accompaniment to roasted meats. It may also be used to make onion tarts or pizzas, or as a "bed" for baked fish. The mixture will last for a week or so, refrigerated. To use, reheat gently over low heat.

- Cut onions in half from top to bottom (not crosswise). With a paring knife, peel each onion half. Lay each onion half flat side down. Holding the knife at a slight angle, cut away and discard the hard root end. Using a sharp knife, cut into 1/4-inch half-moons.
- Put a large heavy-bottomed pot, preferably enameled cast iron, over medium-high heat. Melt butter, then add all the sliced onions and stir to coat. Sprinkle with sugar and season generously with salt and pepper. Continue stirring until onions begin to wilt and soften, without browning, about 5 to 8 minutes.
- Add bay leaves, thyme, cayenne, vinegar and wine. Reduce heat to medium and continue to cook, stirring occasionally, until onion mixture is quite soft and most of the liquid has evaporated, about 30 minutes. Taste and adjust seasoning. Remove and discard bay leaves and thyme. Serve warm.

- Peel the onions, top and tail them. Cut them in half, then cut each half into very thin slices or just chop them.
- Put the oil and the onions into a pot, and cook the onions over a low heat until they are transparent.
- When the onions are transparent and tender, add the wine, still over low heat. Add some salt to bring out the flavor, and a little pepper.
- Add the sugar, stirring to blend it.
- Cook this down until the wine is totally cooked away, always over low heat. The consistency should be like a jam, because you will spread this on toasts for the foie gras, and you don't want it to be drippy.
- This shouldn't be too sweet, because it is for meat, but you can up the dose of sugar a little if you want.
- You can add some sultanas and a few cloves while you cook the liquid down to vary the recipe.

- Heat 3/4 cup oil in heavy large saucepan over medium-high heat. Add onions and sauté 3 minutes. Add all bell peppers, garlic, thyme, and sugar; sauté 5 minutes. Reduce heat to medium-low. Cover and cook until vegetables are very soft, stirring occasionally, about 15 minutes longer. Drain confit and cool; discard cooking oil. Season to taste with salt and pepper.
- Puree 1/2 cup bell pepper mixture, lemon juice, and 5 tablespoons olive oil in blender until smooth. Season sauce to taste with salt and pepper. (Bell pepper confit and sauce can be made 1 day ahead. Cover separately and refrigerate.)
- Preheat oven to 400°F. Heat remaining 2 tablespoons olive oil in large ovenproof skillet over medium-high heat. Sprinkle chicken with salt and pepper. Coat in flour; shake off excess. Sauté chicken in skillet until golden, about 1 minute per side. Transfer skillet to oven and bake chicken until cooked through, turning once, about 12 minutes.
- Meanwhile, rewarm bell pepper confit over medium heat. Stir sauce over low heat just until heated through. Spoon bell pepper confit onto 4 plates.
- Slice chicken diagonally and place atop bell peppers. Drizzle sauce around chicken and serve.

- Heat a large nonstick or cast iron skillet over medium-high heat.
- Add olive oil, and once sizzling, add sliced bell peppers and sliced onions.
- Add in the salt, red pepper flakes, black pepper and dried oregano.
- Stir to coat the vegetables with the olive oil and seasonings.
- Cook, stirring occasionally, for about 15 minutes until the peppers and onions have softened and started to caramelize.
- Add the garlic and cook another minute or two until fragrant.

- Peel the onions then slice in half lengthwise. Make a v-shaped cut at the base of each half to remove the root end. This will help to make separating the onion slices easier.
- Slice the onions lengthwise in thin slices about 1/16” – 1/8” thick. Separate the onion pieces into individual strands. If you prefer, slice and chop the onions to a large dice.
- In a heavy pot or Dutch oven, add oil and heat over medium-high heat until the oil shimmers. Reduce the heat to medium and begin adding the onion strands in thirds. When the first third begins to cook, stir well and add the second, repeat and add the third until all onions are cooking.
- Cook the onions for 45 minutes on medium low heat, stirring frequently. When the liquid from the onions has evaporated, add the brown sugar, turn the heat up to medium, and allow the onions to begin brown and caramelize. Keep a close eye that they don’t burn. When they are lightly caramelized, add the wine, vinegar, allspice, salt and pepper and bring to a boil.

- In a large saucepan, heat 1/4 cup of the olive oil until shimmering. Add the onions and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. - Slide the pizza onto the stone and bake for about 10 minutes, or until the crust is browned and the top is bubbling. Let cool for 5 minutes, then cut into wedges and serve. Meanwhile, repeat with the remaining dough and toppings. Alternatively, if you don't have a pizza stone, assemble the pizzas on lightly oiled baking sheets coated with cornmeal. Let rise for 30 minutes before baking directly on the sheet.

- Prepare 3 pints, lids, and rings. Sterilize the jars and keep them in the hot water till its time for processing. Make sure to fill your water bath canner and get the water to a simmer.
