1 cup chopped dates
1-1/2 teaspoons baking soda, divided
1-1/2 cups boiling water
3/4 cup shortening
1-1/2 cups sugar, divided

Steps:

  • Place dates and 1 teaspoon baking soda in a large bowl. Stir in boiling water; cool completely. , In another large bowl, cream shortening and 1 cup sugar. Beat in egg. Combine the flour, salt and remaining baking soda; add to creamed mixture alternately with date mixture., Pour into a greased 13x9-in. baking pan. Sprinkle with remaining sugar; top with chocolate chips and nuts. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/2 cup granulated sugar
1/3 cup packed light brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1/3 cups mini semisweet chocolate chips
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon fine salt
1 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup milk
1/4 cup multicolored sprinkles, plus more for sprinkling
1 ounce cream cheese, at room temperature
1 tablespoon granulated sugar
1/2 cup heavy cream
1/4 teaspoon pure vanilla extract

Steps:

  • Position an oven rack in the center of the oven, and preheat to 350 degrees F. Line the bottom of a 9-inch round cake pan with a parchment circle. Butter the parchment and the sides of the pan.
  • For the cookie layer: Whisk together the flour, baking soda and salt in a large bowl; set aside. Beat the butter and both sugars with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 4 minutes. Add the egg, and beat until incorporated. Beat in the vanilla. Scrape down the bowl as needed. Reduce the speed to medium, add the flour mixture and beat until just incorporated. Stir in the chocolate chips.
  • Press the cookie dough into an even layer in the prepared cake pan, and bake until golden brown and a knife inserted in the center comes out clean, 25 to 30 minutes. Let the layer cool for about 10 minutes. It will collapse slightly as it cools. To make the layer even, press the bottom and sides down with the bottom of a measuring cup.
  • For the cake layer: Whisk together the flour, baking powder and salt in a medium bowl; set aside. Beat the granulated sugar and oil with an electric mixer on medium-high speed in a large bowl until light in color and fluffy, about 5 minutes. Beat in the eggs one at a time. Beat in the vanilla. Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Stir in the sprinkles. (The cake batter will be on the thin side, like a thick pancake batter.)
  • Pour the cake batter over the cookie layer, and bake until the middle of the cake springs back when pressed and a knife inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edge of the cake, and let cool completely in the pan on a rack. Transfer the cake from the pan to a serving plate, with the cookie layer on the bottom.
  • For the frosting: Beat the cream cheese and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth and all the sugar has dissolved (rub some between your fingers; if it's gritty, keep beating). Add the cream and vanilla, and continue to beat until medium peaks form. Frost the cake, and decorate with more sprinkles.

1 cup dates, chopped
1 tsp. baking soda
1 cup plus 3 Tablespoons hot water
1 cup shortening
1 cup sugar
2 eggs
2 cups flour
1/2 tsp. salt
1 tablespoon cocoa
1 tsp. vanilla
1 cup semi sweet chocolate chips
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Place chopped dates in a small bowl and sprinkle with baking soda and pour on hot water. Set date mixture aside to cool. Using your mixer cream shortening and sugar. Add eggs and mix about 30 seconds. Add cooled date mixture. Combine flour, salt and cocoa and gently mix in. Add vanilla and mix until combined. Stir in 1/2 cup of the chocolate chips. Pour into greased 9" x 13" pan. Sprinkle pecans and remaining chocolate chips over the cake. Bake approximately 40 minutes until toothpick inserted in the middle comes out clean. Enjoy!

1 cup shortening

Steps:

1 2/3 cups all-purpose flour, plus more for the pan
1/3 cup heavy cream
1/2 cup unsweetened Dutch-process cocoa powder
3 large eggs, plus 1 egg yolk, at room temperature
2 teaspoons pure vanilla extract
1 1/4 cups organic cane sugar
1/2 cup mini chocolate chips
Confectioners' sugar, for dusting

Steps:

  • Make the pound cake: Preheat the oven to 350˚. Butter the bottom and sides of a 9-by-5-inch loaf pan, then line with parchment paper in two overlapping strips, leaving an overhang. Butter the parchment and lightly dust with flour, tapping out the excess.
  • Microwave the heavy cream in a small microwave-safe bowl until steaming, about 1 minute. Pour over the cocoa powder in a medium bowl and stir to make a thick smooth paste; let cool.
  • Whisk the eggs, egg yolk and vanilla in a medium bowl until frothy; set aside. Beat the butter and cane sugar in a large bowl with a mixer on medium speed until well combined, 1 to 2 minutes. Scrape down the bowl and increase the mixer speed to medium high. Beat until pale and fluffy, 6 to 7 minutes.

  • 3.Mix the cocoa and chopped chocolate in a heatproof bowl. Pour boiling water over the chocolates and stir to melt.
  • 4.Let the mixture stand to cool (about 2 to 3 minutes). Meanwhile, combine the flour, salt, and baking soda in a medium bowl.
  • 5.Cream the butter, brown sugar, vanilla until creamy in a large bowl. Add the eggs to the butter mixture and blend well.

1 1/2 c chopped dates
1 1/2 c boiling water
1 tsp baking soda
1 c sugar
3/4 c shortening
2 eggs
1 1/2 c all purpose flour

TOPPING
1/2 c chopped walnuts
1 c semi-sweet mini chocloate chips
1/2 c brown sugar, firmly packed

Steps:

  • 1. Chop dates and place in a medium size heat proof bowl. Add baking soda and pour boiling water over dates and soda. Stir and cool. Water will foam up.
  • 2. Cream shortening and sugar until well creamed. Add eggs and beat until smooth
  • 3. Mix together dry ingredients in separate bowl.
  • 4. Drain cooled water from dates and alternately add flour and date water to creamed sugars. Start and end with flour adding a little of each at a time. Stir in vanilla.
  • 5. Grease and flour a 9x13 cake pan. Pour batter in pan.
  • 6. Mix topping ingredients together in medium size bowl and sprinkle on top of batter.
  • 7. Bake at 350 degrees for 30-35 minutes. Bake until toothpick comes out with a moist crumb on the toothpick. Do not overbake.
