ONE-POT SPAGHETTI WITH BROCCOLI AND MEAT SAUCE



One-Pot Spaghetti with Broccoli and Meat Sauce image

Healthy comfort food made in one pot with seven ingredients in 30 minutes. It doesn't get much easier than that!

1 lb. ground beef* ((see note 1))
1 yellow onion
1 can crushed tomatoes ((15 oz. can))
1/2 lb. spaghetti
4 cups low-sodium chicken stock ((see note 2))
1 head broccoli ((about 4-6 cups cut into pieces))
1/2 cup parmesan
1 tsp. salt
Greek yogurt (optional)
fresh basil (optional)

Steps:

  • Prep Ingredients: Chop onion. Remove stems of broccoli and cut into small pieces.
  • Cook Beef: In a large deep pan or large pot, cook the ground beef, onion and salt over medium/high heat for 8-10 minutes or until the ground beef is cooked through.
  • Add Pasta & Veggies: Add crushed tomatoes, spaghetti, chicken stock and broccoli to the pan. Stir to combine. Bring to a boil (a lot of rapid bubbles) and then reduce the heat to a simmer (slower moving bubbles). Stirring occasionally, cook until the pasta is al dente(almost cooked through/slightly firm) and most of the liquid has been absorbed (about 9-13 minutes). The remaining liquid should look like a thin sauce. TIP: Break spaghetti in half before adding it to the pot for easier cooking.
  • Add Parmesan: Remove from heat and stir in the parmesan cheese. This will slightly thicken the remaining liquid/sauce.
  • Enjoy: Serve immediately with a dollop of Greek yogurt (optional) and topped with fresh basil (optional). Refrigerate leftovers.

It doesn't get much easier than this by cooking everything in one pot. Italian sausage and pasta sauce with spaghetti noodles that you can have on the table in less than 45 minutes. Switch it up by using ground beef, chicken, or turkey along with any other of your favorite ingredients, such as sliced mushrooms.

1 pound ground Italian sausage
1 small white onion, diced
4 cloves garlic, minced
2 cups water
1 (26 ounce) jar tomato-basil pasta sauce
1 teaspoon Italian seasoning
1 (8 ounce) package spaghetti noodles, broken in half
½ cup freshly grated Parmesan cheese for serving

Steps:

  • Combine ground sausage, onions, and garlic in a large pot or skillet with tall sides. Cook over medium heat until sausage is cooked through, 5 to 8 minutes. Drain and discard grease.
  • Stir water, pasta sauce, and Italian seasoning into the pot; bring to a boil. Stir in spaghetti noodles, return to a boil and cook, stirring occasionally, until noodles are cooked through and sauce has thickened, 17 to 20 minutes.
  • Serve topped with grated Parmesan cheese.

CAJUN CHICKEN ONE-POT

Make a crowd-pleasing pasta dish for dinner. We've taken inspiration from creamy alfredo sauce with Cajun-style seasoning to add a bit of punch.

1 tbsp olive oil
400g chicken breasts, chopped into large chunks
3 garlic cloves, finely chopped or grated
2 tbsp Cajun-style seasoning
400g can chopped tomatoes or passata
1 chicken stock cube, crumbled
500g penne or another tube- shaped pasta
150ml double cream
20g parmesan, finely grated, plus extra to serve
½ lemon, juiced
chopped parsley, to serve (optional)

Steps:

  • Heat the olive oil in a large, shallow saucepan or deep frying pan over a medium heat, then add the chicken, season lightly and fry for 6-8 mins, stirring occasionally until just golden all over - no need to worry about it being cooked through at this stage.
  • Stir in the garlic and cook for 2 mins more, then scatter over the Cajun-style seasoning and stir so the chicken pieces are evenly coated. Tip in the tomatoes, a quarter of a can of water and the stock cube. Stir, then bring to a simmer and cook for 5 mins.
  • Meanwhile, bring a large pan of salted water to the boil and cook the pasta for a minute less than pack instructions. Stir the cream into the chicken and continue to simmer gently. When the pasta is cooked, drain well and stir into chicken mixture. Finish cooking the pasta in the sauce over a low heat for 2 mins, then stir in the parmesan and lemon juice, and cook for 1 min more. Serve the pasta straight from the pan, or tip into a large serving bowl. Scatter with parsley, if you like, and extra parmesan.
