1 cup peanut butter
3 cups mini marshmallows
4 cups chow mein noodles

Steps:

  • In a large bowl, melt butterscotch chips in the microwave.
  • Mix in the peanut butter.
  • Add the marshmallows and the noodles.
  • Stir to coat noodles.
  • Drop by spoonfuls on waxed paper.
  • Allow to set up (takes an hour or so at room temperature).
  • Best kept covered in refrigerator (if you have any left!).

It's NO secret, we have a LARGE family :) So for this years Christmas party (2014) I made several cookies and I wanted a fair share of varieties and in so, I wanted butterscotch of some kind in my mix of goodies, so here are the haystacks that went over so well at our Christmas dinner the past weekend. 1 c butterscotch chips
3 c chow mein noodles/broken up a little
1 c salted peanuts
1 c peanut butter

Steps:

  • 1. Melt the butterscotch chips according to package directions. Add peanut butter/ ( I used the double boiler method) A double boiler consists of a bowl placed on top of a pan of simmering water. The bowl does not touch the water, but creates a seal with the bottom pan to trap the steam produced by the simmering water, the temperature at which water turns to steam and a far lower temperature than could be achieved by putting the bowl directly on that burner. Inside the top bowl, you can melt chocolate without worrying that it will stick and burn.
  • 2. In a Large mixing bowl, have the chow mein noodles, peanuts mixed up and ready to go, once the butterscotch/peanut butter is melted, poor on top of the mixture and stir QUICKLY then drop onto wax paper and let cool.
  • 3. Allow to cool for about an hour, or until the cookie holds it's shape and the butterscotch is dry to the touch. Enjoy!

●3/4 cup creamy peanut butter
●1 can (8.5 ounces) or 2 cans (5 ounces each) chow mein noodles

Steps:

  • Line trays with wax paper.
  • Microwave morsels in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in peanut butter until well blended. Add chow mein noodles and marshmallows; toss until all ingredients are coated. Drop by rounded tablespoon onto prepared trays. Refrigerate until ready to serve.
  • Double Boiler Method: Place morsels in top of double boiler over hot (not boiling) water. Do not cover. When most of the morsels are shiny, stir just until melted. (Prevent water from coming in contact with morsels.) Remove from heat; stir in peanut butter. Transfer to large bowl. Add chow mein noodles and marshmallows; proceed as above.

I made these out of a lot of leftovers that I had that I needed to use up so I guessed at the measurements and wrote them down as I tossed them together and to my surprise they turned out good! Well, anything with Nutella usually is. Right?! So, you know what you have to do when that happens. You have to share!

1 cup semi-sweet chocolate chips
1/2 cup nutella
3 cups chow mein noodles
1 cup peanuts (optional) or 1 cup miniature marshmallow (optional)

Steps:

  • In a microwave safe bowl add butterscotch chips and chocolate chips.
  • Microwave on high for 1 minute.
  • Stir chips together and heat on high, stirring every 50 seconds, until melted. (For me, It took around 1 1/2 minutes with a 1,000 watt oven).
  • Remove chips mixture from oven and add Nutella.
  • Stir to blend.
  • To chips mixture, add chow mein noodles and nuts, if desired, and stir to coat and combine.
  • Line cookie sheets with waxed or parchment paper and drop mixture by well rounded spoonfuls onto waxed paper.
  • Place cookie sheets in refrigerator for 30 minutes.
  • Transfer haystacks to a tightly covered container and store in refrigerator.
  • Yield is approximate depending on how large or small you make them.
  • Cook time is chill time.

3/4 cup creamy peanut butter
10 oz chow mein noodles
1 cup salted peanuts

Steps:

  • Line cookie sheets with parchment or wax paper.
  • Put the morsels into a double boiler and heat over medium hot but not boiling water. When the morsels begin to melt; stir them occasionally until completely melted and smooth. Turn the heat to low and stir in the peanut butter until well blended.
  • Combine the chow mein noodles and peanuts in a large bowl and pour the butterscotch/peanut butter mixture over them and stir until all the ingredients are well coated.

I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

  • Line a baking tray with parchment paper.
  • Melt the butterscotch chips in a large glass bowl. You can do this over a double boiler or in the microwave. If you use the microwave, be sure to do it in 15 second intervals, stirring well in between each so that the chips don't burn.
  • Once the butterscotch chips are melted, add in the chow mein noodles.
