All-in-one spicy pork and rice image

Lean, tender pork with spicy rice and lots of veggies - what more could you want? This is a scrumptiously simple family supper with big flavours that fulfils your needs. Only problem is stopping yourself eating too much of it!

2 tsp olive oil
1 medium onion, sliced into thin wedges
500g pork tenderloin, trimmed and cut into 1cm slices
50g chorizo sausage, skinned and cut into 5mm slices
2 garlic cloves, thinly sliced
1 red and 1 orange pepper, deseeded and sliced
100g green beans, trimmed and cut into short lengths
1 tsp ground cumin
1 tsp ground coriander
½ tsp hot chilli powder
150g easy-cook long-grain rice
750ml chicken stock, made with 1 stock cube
flaked sea salt
freshly ground black pepper

Steps:

  • Heat the oil in a large, non-stick deep frying pan or sauté pan. Fry the onion wedges over a medium-high heat for 3 minutes until they're softened and lightly browned, stirring regularly. Season the pork with salt and black pepper, then add it to the pan and stir-fry with the onion for 2 minutes until lightly browned. Add the chorizo, garlic, peppers and beans and stir-fry together for 2 minutes more. Sprinkle with the spices and stir in the rice, then pour over the stock and bring to the boil. Reduce the heat to a simmer and cook for 20 minutes, stirring regularly, until the liquid has been absorbed and the rice and pork are both lovely and tender.

1/4 cup fresh parsley, chopped
2 garlic cloves, minced
1 tablespoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
4 pork loin chops with bone
2 tablespoons vegetable oil
2 cups chicken stock
1 cup water
1 1/2 cups long-grain rice
1 cup corn kernel

Steps:

  • In a bowl, mix together half of the parsley, the garlic, cumin, salt, pepper and cayenne and rub it over the chops.
  • In a Dutch oven, heat the oil over medium-high heat.
  • Brown the chops, turning once, about 4 minutes.
  • Transfer to a plate.
  • Drain off the fat from the pan.
  • Add the stock and water and bring to a boil, stirring.
  • Add the rice and corn.
  • Reduce the heat, cover, and simmer for 10 minutes.
  • Stir in the remaining parsley.
  • Nestle the pork chops and any accumulated juices in the rice.
  • Cook until the rice is tender, the liquid is absorbed and just a hint of pink remains inside the chops, 10 minutes.

Steps:

  • Place all ingredients into the inner liner of your pressure cooker in the order listed. Oil and onions at the bottom, rice with salt and pepper on top of that, pork chops on the rice, pour water and strew about the vegetables on top.

4-6 good-quality sausages
1 tbsp olive oil
½ onion , finely chopped
2 garlic cloves , crushed
2 tsp each ground cumin and coriander
140g long grain rice
850ml vegetable stock
400g can chopped tomato
½ small bunch coriander , leaves picked

Steps:

  • Split the sausage skins, squeeze out the meat, then roll it into small meatballs about the size of a large olive. Heat the oil in a large non-stick saucepan, then brown the meatballs well on all sides until cooked - you might need to do this in batches. Set the meatballs aside.
  • Add the onion and garlic to the pan. Soften for 5 mins, stir in the spices and rice, then cook for another min. Pour in the stock and tomatoes. Bring to a simmer, scraping up any sausagey bits from the bottom of the pan. Simmer for 10 mins until the rice is just cooked, then stir in the meatballs with some seasoning. Ladle into bowls, scatter with coriander and serve with crusty bread.

1 cup water
1 teaspoon sea salt
4 thin-cut boneless pork chops
½ cup frozen peas and carrots
3 scallions, sliced (optional, for topping)

Steps:

  • Press the Sauté function on a 6-quart Instant Pot. Pour in the oil and let it heat up for a few minutes.
  • Add the onions and sauté for 2-3 minutes, or until they start to soften.
  • Cancel the sauté function and add the rinsed rice, water, and salt to the pot. Stir to combine.
  • Add the pork chops on top and then the frozen peas and carrots. Do not stir.
  • Lock on the lid and set the time to 5 minutes at high pressure.
