SPICY CHICKEN AND BACON MAC
I've been working to perfect a creamy, spicy mac and cheese for years. After adding smoky bacon, chicken, jalapenos and spicy cheese, this is the ultimate! I use rotisserie chicken and precooked bacon when I'm pressed for time. -Sarah Gilbert, Aloha, Oregon

- Cook pasta according to package directions for al dente; drain. Preheat broiler. , In a 10-inch cast-iron or other ovenproof skillet, heat butter over medium heat. Stir in flour until blended; cook and stir until lightly browned, 1-2 minutes (do not burn). Gradually whisk in cream, milk, Cajun seasoning, salt and pepper. Bring to a boil, stirring constantly. Reduce heat; cook and stir until thickened, about 5 minutes. Stir in cheese until melted. Add pasta, chicken, bacon and jalapeno; cook and stir until heated through. Sprinkle chips over top., Broil 3-4 inches from heat until chips are browned, about 30 seconds.

Less dishes, less time, equals a happy MAMA! This is also great with some cooked ham rather than chicken! NOTE: Instead of the box mix you can use my homemade recipe for mac and cheese recipe #135662 Also, when using a lot of pantry items you can UP the taste and freshness level by adding some fresh ingredients like fresh parsley or other herbs, fresh cheese or even sneak in some fresh veggies like a little diced/minced celery, bell pepper, garlic or onion. Some green veggies like peas or broccoli would be a great addition here too! Consider this recipe as a spark to light your creativity!

Steps:
- Spray large skillet with cooking spray and saute chicken on medium-high heat for about 5 minute or until cooked through.
- Drain liquid from tomatoes into a 2 cup liquid measuring cup and add enough hot water to measure 1-3/4 cups.
- Add macaroni, tomatoes and the tomato liquid mixture to the pan and mix well.
- Bring to boil and reduce heat to medium-low. Cover and simmer 9 to 10 minute or until macaroni is tender.
- Remove from heat and stir in cheese sauce from mac and cheese package and sour cream until well blended.
- Sprinkle with shredded cheese on top and cover.
- Let stand 1 to 2 minute or until cheese is melted.
- TIP: Reduced fat items can be used but I don't recommend nonfat.

- Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheddar cheese, ham, Parmesan cheese and macaroni., Transfer to a greased 2-qt. baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350° until bubbly, 20-25 minutes. Let stand for 5 minutes before serving.

- Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
- Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

- Bring a large pot of salted water to boil and cook noodles until al dente, according to the package instructions. Drain and set aside.
- Heat the same pot to medium heat and add olive oil. Add peppers and onions and cook about 5 minutes to soften.
- Season chicken with chili powder, salt and pepper. Add to pot and cook about 6-7 minutes to cook through.
- Add 3 tablespoons butter and allow to melt. Add flour and stir. Cook a couple minutes until the flour browns.

- Season chicken with salt, pepper, paprika, dried parsley and 2 teaspoons of the oil. Heat the remaining oil in a large (30cm or 12-inch) pot or pan over medium-high heat.
