EASY PAN-ROASTED CHICKEN AND SHALLOTS

Easy Pan-Roasted Chicken and Shallots image

Shallots are the perfect size for roasting whole with larger cuts of meat. When halved or quartered with chicken breasts, they make a quick weeknight dinner, complete with a pan sauce. If you have champagne vinegar or white wine vinegar on hand, add a splash to the sauce just before serving.

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 2 servings

Number Of Ingredients 7

2 bone-in chicken breasts, skin on, halved (about 10 ounces each)
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
4 medium shallots, peeled and quartered lengthwise through the root (about 8 ounces)
4 medium shallots, peeled and quartered lengthwise through the root (about 8 ounces)
2 sprigs fresh rosemary
3/4 cup chicken stock, plus 1/2 cup more if needed

Steps:

  • Preheat the oven to 425 degrees F. Sprinkle both sides of the chicken breasts with salt and pepper.
  • Preheat a large skillet over medium-high heat for 2 minutes. Working quickly, melt 1 tablespoon of the butter, swirling it around the pan. Add the chicken, skin side down. Add the shallots, cut side down and not overlapping. Cook until the chicken and shallots are browned on the bottom, 2 to 3 minutes. Flip the shallots and chicken, nestle in the rosemary sprigs, then carefully pour in the chicken stock.
  • Transfer the skillet to the oven and roast until the chicken is cooked through and the shallots are tender, 12 to 14 minutes, removing the smaller pieces of chicken first as they become cooked. Transfer the chicken to a serving plate.
  • Check the skillet with the shallots to make sure the stock has not evaporated; if less than a few tablespoons remain, add 1/2 cup more stock or water. Reduce the pan juices over medium heat until about 1/2 cup of liquid remains, about 2 minutes. Remove the skillet from the heat and stir in the remaining 2 tablespoons of butter with a wooden spoon to thicken the pan sauce until it coats the spoon. Remove the rosemary and season the sauce with salt and pepper. Spoon some of the sauce over the chicken and scallions and the rest onto the plate.

BASIC ROASTED CHICKEN

Basic Roasted Chicken image

Provided by Guy Fieri

Categories     main-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 7

Two 4-to-5 pound chickens (organic and free range if possible)
Kosher salt and freshly cracked black pepper
6 sprigs fresh thyme
4 cloves garlic
2 bay leaves
1 small onion, sliced
1 lemon, quartered

Steps:

  • Preheat the oven to 425 degrees F.
  • Sprinkle the inside of the chickens liberally with salt and pepper. Stuff each bird with 3 sprigs thyme, 2 cloves garlic, the bay leaf, onion and lemon. As the chickens cook, this will help keep them moist and also flavor the bird from the inside.
  • Using kitchen twine, tie the legs together of each bird, and then tuck the wing tips underneath each body so it cooks evenly. Place the birds on a roasting rack over a roasting tray then sprinkle them with salt and pepper.
  • Place in the oven and roast for 15 minutes. Then reduce the temperature to 375 degrees F and cook until an instant-read thermometer inserted into the joint between the leg and thigh registers 165 degrees F, approximately 1 hour more. When the chicken is done, the skin will be crispy and golden and the juices of the chicken will run clear. Remove from the oven and allow to rest for 15 minutes before serving.

  • Preheat the oven to 450°. Bend back the chicken wing tips and tuck them under their first joints. Using your fingertips, carefully loosen the chicken skin without tearing it, working your hand under the skin all the way up the breast and down into the thighs.
  • Tuck 2 bay leaves in the cavity of each bird. Tuck the remaining leaves under the loosened skin: 2 on each thigh and 3 on each side of each breast. Distribute the garlic evenly under the skin. Tie the legs together with string.
  • Set the chickens in a large, shallow roasting pan. Rub them all over with the olive oil and season generously with salt and pepper. Roast the chickens for 55 to 65 minutes, or until the chickens are browned and the juices run clear; rotate the pan halfway through.
  • Remove the chickens from the oven and let stand in a warm place for 10 minutes. Transfer to a platter and garnish with the bay branches. Remove and discard the bay leaves from under the skin before carving the chickens.
