SWISS CHARD RECIPE WITH POTATOES
Naturally vegan, this Swiss Chard Recipe with Potatoes makes a great Italian side dish that goes with almost any meal. It's an easy Italian recipe just like nonna used to make.

Steps:
- Bring a large pot of water to a rolling boil.
- Add the diced potatoes and the salt.
- Reduce heat to a simmer for about 15-20 minutes, until they become tender and can be easily pierced with a knife.
- While the potatoes are simmering, properly clean and chop the chard into ½ inch strips. (refer to details in post).
- When the potatoes are tender, add the chopped chard stems.
- Boil for 3-5 minutes or until just beginning to soften. The total time depends on their size.
- Next, add the leafy chopped portion of the chard and boil for approximately 30 seconds. Gently drain all the vegetables in a colander.

MASHED POTATOES AND SWISS CHARD
I made this recipe up on the fly when I wanted to use up my potatoes and swiss chard from the local farmer's market. This made a perfect side and made a nice change to the normal mashed potatoes. Recipe #464332, a side, used up the swiss chard stems and goes well with this recipe.

Steps:
- Wash, skin (optional) and chop the potatoes.
- Start boiling the potatoes.
- Once the potatoes are halfway done add the swiss chard leaves. You can use more than a single bunch.
- Once the potatoes and swiss chard is done drain the water out. You can keep the water for another use (ie. soup).
- Mash the potatoes and swiss chard.
- Add milk and butter (basically your normal mashed potatoes).

SWISS CHARD AND POTATOES
Steps:
- Fill a large pot with cold salted water, and add the whole peeled potatoes. Bring to a simmer, and cook the potatoes about halfway, about 15 minutes. Add the shredded chard, and cook until the leaves are very tender, 15 minutes or more, depending on the size. Drain well in a colander.
- Wipe out the pot, and return it to the stovetop. Pour 1/3 cup of the olive oil and the crushed garlic into the pot set over medium heat. Cook until the garlic is light golden, about 3 to 4 minutes. Slice in the butter; once it has melted, add the drained potatoes and chard. Drizzle with the remaining 3 tablespoons olive oil, and season with 1 tablespoon salt. Mash coarsely with a potato masher. Let cook a few minutes to remove any excess liquid, stir in the almonds, and serve hot.
- note
- If you buy young Swiss chard, cook the stems and leaves all at the same time. If you buy Swiss chard with larger leaves and stalks, trim the stems from the leaves and cook them for 10 minutes before adding the leaves.

- Place potatoes in a saucepan.
- Add a slight amount of water, salt and pepper.
- Bring to a boil; cook for 5 minutes or until potatoes are tender; drain and set aside.
- In a large skillet, heat oil on medium-low heat.
- Saute onion for 5 minutes.
- Add chard and stir 1 minute or until chard is wilted.
- Remove from heat and cool slightly.
- In a large bowl, beat eggs and egg yolks.
- Stir in potatoes, chard mixture, green onion, cheese, milk, salt, and cayenne; spoon about 1/3 cup of mixture into greased regular size muffin cups or spoon 1 generous tablespoon into greased mini muffin cups.
- Bake at 375 degrees for 14-16 minutes for regular size muffin cups or 10 minutes for mini muffin cups, or until either is set and slightly puffed.
- Serve warm.
SWISS CHARD & POTATO SOUP
This soup comes from Lucy Waverman's St. Patrick's Day menu in the Globe and Mail (March 2009). Lucy Waverman notes "My grandmother used spinach to make this soup, but it tends not to have a strong enough taste for the potatoes; Swiss Chard matches much better." Cooking time includes puree time. It is also fine without the garnish. Serve with fresh buns or bread.

- Heat butter in a pot over medium heat. Add onions and swiss chard stems and saute for 2 minutes or until softened.
- Add potatoes, chicken stock and milk and bring to a boil.
- Simmer soup for 5 minutes; add swiss chard leaves (reserving 1/4 cup for garnish) and simmer 5 minutes longer or until potatoes are very soft and chard is wilted.
- Puree soup in a blender or food processor (An immersion blender also works well). Season with salt and pepper to taste.
- Garnish:.
- Heat oil in a small skillet over medium high heat. Working in batches, add Swiss chard (be careful, as it will pop and splatter oil) and fry for 1 to 2 minutes or until crisped.
- Drain on paper towels.
- Garnish soup with crinkled Swiss chard.
SWISS CHARD, POTATO, AND CHICKPEA STEW

- Bring a medium pot of salted water to a boil. Add the chard and cook for 3 minutes. Drain thoroughly and set aside.
- In a Dutch oven, heat the oil over moderate heat. Add the potatoes and onion and saute, stirring frequently, until the potatoes start to brown, about 5 minutes. Add the garlic, paprika, turmeric, cayenne, and salt and cook, stirring, until fragrant, about 1 minute.

Steps:
- Trim coarse leaves and thick center ribs from chard; cut tender stems and leaves into 1/2-inch slices.
- Heat 1 tablespoon of the oil in a large skillet; add bread crumbs; cook, stirring often, until crisp and golden; remove from skillet and set aside.
- Cool skillet slightly; add remaining oil and garlic; cook, stirring, 2 minutes; add chard and cook until wilted, 1-2 minutes; add tomatoes, salt, and red pepper flakes to taste.
- Remove from heat and sprinkle bread crumbs over the top.
SAVORY SWISS CHARD WITH PORK CHOPS AND POTATOES
A favorite ... This came from a little cook book a girlfriend sent me for a Christmas present one year. Now I added my twist, but basically, this was the recipe. A one dish wonder. Now I love swiss chard and kale and I think they are way under used, so I absolutely love this dish. Now the original dish didn't have potatoes, but I love to add some sliced new potatoes to this dish and it makes it a complete dish. Add some fresh homemade or a good bakery loaf of pumpernickel and roasted peaches over vanilla ice cream for desert.

- Casserole -- First remove the pork chops from the refrigerator and let them come to room temperature. Brush well with 1 tablespoon olive oil and then season well with salt, pepper and paprika on both sides.
- Next, spray the casserole dish with a non stick spray and add the swiss chard and top with the sliced onions. Add some salt and pepper and drizzle with olive oil (1 tablespoon). Lightly toss. Then top with the chicken broth and the 4 pork chops.
- NOTE: If you want you could pan sear the pork chops first if you want as one reviewer mentioned, but I don't. But if would give a nice color to the chops if you prefer.
- Cheese -- Sprinkle the cheeses on top of the swiss chard and onions, around the pork chops.
- Potatoes -- In a small bowl add the potatoes, remaining olive oil, salt, pepper and dried thyme and then add them on top of the swiss chard and cheese around the pork chops.
- Bake -- 400 degrees for 20-30 minutes until the chops are done.
- Garnish -- I love to put a good balsamic vinegar on the table so each person can just drizzle a little on if they want. For me the flavor is amazing.

BLITVA (CROATIAN SWISS CHARD DISH)
A traditional dish in Dalmatian cuisine, this is very easy to make. It makes a perfect side for fish, cooked meat or, my favorite, cured meat such as prosciutto. It can be made more creamy when potatoes are very well cooked, or soupy when more liquid is preserved. On my scale this would be 3.5 Stars (please see how I rate recipes).

- Bring a large pot of salted water to a boil.
- Add peeled and cubed (1/2-1 in cubes) potatoes.
- Rinse the Swiss chard, remove tough stems, and cut into 1/2 in strips (or just tear into large pieces).
- When potatoes are almost done, add the Swiss chard, and cook all together for an additional 10 minutes (15 minutes if the chard is older).
- Sauté garlic on olive oil, and add the cooked drained chard and potatoes to it (you may keep some water so that it looks like a thick soup).
- Salt and pepper to taste.
- Stir and cook for 1 more minute in order to bring all flavors together.

- Trim the ends from the stems of the chard leaves. Cut off and discard any wilted or yellow parts of the leaves. Strip the stems from the leaves, and cut the stems into 1/2-inch lengths. Cut the leaves in half lengthwise, then crosswise into 1/2-inch strips. Wash the leaf and stem pieces thoroughly; then drain them well.
- Bring 4 quarts water to a boil in a large pot. Add the potatoes, and cook until almost tender, about 15 minutes. Add the Swiss chard, and cook until the vegetables are tender, an additional 10-15 minutes. Drain well.
- Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the garlic and cook just until it begins to turn golden, about 1 minute. Add the Swiss chard and potatoes, and season them lightly with salt and pepper. Cook, stirring and smashing the potatoes, until the liquid is evaporated and the potatoes are coarsely mashed. If the potatoes begin to brown, adjust the level of heat to medium low and continue stirring. Add the remaining 2 tablespoons olive oil, season to taste with salt and pepper, stir, remove garlic and serve hot.
