Steps:
- Boil rice with the salt until well done, according to package directions.
- Rinse and drain well; cool.
- Make lemon jello, using only 1 cup water.
- Drain pineapple and add enough water to make a second cup of liquid.
- Cool until jello is almost set.
- Whip cream, adding the 1 cup sugar; fold into rice mixture.
- Beat the jello and fold that also, into rice and cream mixture.
- Add crushed pineapple and let cool until set.

- With a creamy, luscious blend of Minute® Instant White Rice, sweet fruit cocktail, crushed pineapple, tiny marshmallows and whipped topping, this dessert is dangerously delicious! Step 1
- Prepare rice according to package directions. Allow to cool. Step 2
- Place rice in a large bowl. Add fruit cocktail, pineapple and marshmallows and stir to combine. Step 3
- Gently stir in whipped topping. Step 4
- Serve immediately or chill in the fridge for later. Recipe Tip Measure the drained juice from the canned fruit and add water to measure 2 cups and use this liquid to prepare the rice.
GLORIFIED RICE (DESSERT-SALAD)
This dessert-salad is a blast from the past! It's basically a rice pudding with crushed pineapple, whipped cream, and maraschino cherries. Serve glorified rice as a salad to accompany your holiday meal. It's also a great dish to bring to potlucks or church picnics. Enjoy! Adapted from "Mennonite Girls Can Cook".

My ex-mother-in-law used to make this for holidays. I never did get her recipe. Years later I was at a potluck picnic when a friend showed up with this. The next day she gave me a copy of the recipe, and I have treasured it ever since.

Steps:
- Combine water and rice in a 3-quart saucepan. Bring to boil; simmer until water is absorbed and rice is tender, about 15 minutes. Allow to cool.
- Mix sugar and flour together in a bowl. Stir sugar mixture, pineapple juice, and beaten eggs together in a saucepan; cook and stir over medium-low heat until the mixture has the consistency of pudding, about 5 minutes. Allow to cool.
- Mix rice, pudding, pineapple, whipped topping, and cherries together in a bowl. Refrigerate until chilled, about 1 hour.

GLORIFIED RICE
I am 55 and it seems like ahundred years ago that my whole family was at my grandmother's house for a week in summer. My cousin was in high school home economics and this was a recipe she made. I loved it although I have almost completely changed the fruits in it. It has become a holiday tradition.

Steps:
- 1. Drain pineapple and fruit salad, reserving syrup in saucepan, combine uncooked rice, 1 cup reserved mixed fruit syrup and 1/2 teaspoon salt. Stir to moisten rice. Bring to a boil; cover; simmer 5 minutes.
- 2. Remove from heat and let stand 5 minutes. Cool completely.
- 3. Add pineapple and fruit, cool.
- 4. Stir in marshmallows and sliced banana that has sprinkled with lemon juice. Beat the cream till stiff peaks form. Fold in cream and cherries. Chill.
- 5. Notes: I had never seen a pomegranate until I was 35 years old. I have since found the very best way in the world to clean a pomegranate I think. Get a big deep bowl and put in the sink and fill with cold water and let the water stay on at a slow run. As you break apart the fruit the heavy juice laden seeds drop to the bottom, the juice from the seeds you burst floats away as does the much lighter empty seed and fruit pith.

- In a heavy bottomed saucepan, heat 3 cups of water to boiling.
- Add the rice and butter to the boiling water. Cook and stir for 1 minute.
- Reduce the stove heat to low, cover the saucepan with a tight fitting lid and let it cook undisturbed for 20-25 minutes.
- Once the rice is done cooking, remove it from the heat, transfer it to a large bowl. Fluff the rice with a fork and allow it to cool to room temperature.
- When the rice has cooled, add the pineapple, strawberries, marshmallows and sugar. Mix well. Allow this mixture to rest for 10 minutes.
- In a medium bowl (or the bowl of a stand mixer), beat the heavy whipping cream on high speed until stiff peaks form.
- Add the whipped cream to the rice mixture. Fold together gently.
- Top with maraschino cherries and additional marshmallows if desired.
- Refrigerate until serving and serve cold.
