ONE CUP OF EVERYTHING COOKIES RECIPE
Add one cup of everything (and a few extra ingredients) for these amazing Everything Cookies that are perfect as a school or dessert treat.

Steps:
- Preheat oven to 350 degrees.
- In one large bowl, cream together butter and both sugars.
- Add eggs and vanilla, mix until blended.
- Add peanut butter and mix again until blended.
- Add in oatmeal, flour, coconut. Mix until blended.
- Add in chocolate, nuts and dried fruit, then mix until blended.
- Drop by spoonfuls onto a cookie sheet (12 to each pan).
- Bake for 12-15 minutes at 350 degrees.
- For softer cookies, take out of the oven after around 12 minutes. The cookies will appear slightly under baked. Loosen with a spatula and transfer immediately to a rack for cooling.
- For crispy cookies, take out of the oven after around 15 minutes. Cookies will be darker around the edges. Loosen with a spatula. Let cookies rest on baking sheet for one additional minute before transferring to a rack for cooling.
PAIGE'S ONE CUP COOKIES
An amazingly delicious white cookie with a soft blanket of sweet coconut. This is a favourite of my whole family since I was a little girl. I brought this recipe into my grade for teacher for a class recipe book and her and all the students tried it and loved it.

- Preheat oven to 350 degrees F.
- In a large bowl, cream butter and sugar together until fluffy. Beat in the egg, vanilla, and almond extract. Sift the flour over the top, add the salt and the chopped almonds and fold to combine.
- Pull off little pieces of the dough and roll them into balls about 1-inch in diameter, enclosing a whole almond in the center of each one. Place on an ungreased baking sheet and bake on the center rack of the oven for 15 to 20 minutes, until light brown. Transfer to racks to cool slightly. - For the cookies: Whisk together the flour, baking powder and salt in a small bowl.
- Beat the brown sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes; beat in the egg, then the vanilla. Add the flour mixture and mix on medium-low speed until completely incorporated. Divide the dough in half, pat into 2 discs about 1/4 inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour and up to overnight.
- Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Let the dough sit at room temperature for a few minutes to make rolling easier. Roll out 1 disc of dough at a time between 2 pieces of parchment paper until 1/8 inch thick. Cut out shapes with the cookie cutters and arrange about 2 inches apart on the prepared baking sheets.
- Bake until the cookies are golden brown on the bottom, 10 to 12 minutes. Let the cookies cool on the baking sheets until firm enough to transfer to a wire rack; let cool completely.
- Gently gather any scraps into a ball and press into a disc; wrap in plastic wrap and refrigerate the disc until firm enough to roll, about 1 hour. Cut out as many cookies as possible and bake.
- For the royal icing: Beat the confectioners' sugar, meringue powder and 1/3 cup water with an electric mixer in a large bowl until stiff peaks form. Beat in the food coloring if using. (The icing can be stored in an airtight container at room temperature for up to 2 days.)
- Decorate the cookies with the icing; top with decorating sugar and sprinkles if using.

- Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
- Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.
- Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.
- Scoop heaping tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans. Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies with a spatula to a rack to cool. Serve.
- Store cookies in a tightly sealed container for up to 5 days.
- For a Rocky Road Bar:
- Lightly butter a 9 by 13-inch baking pan. Make the batter as per cookie recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Spread batter in prepared pan. Bake until the edges are light brown and the batter sets, about 45 minutes. Cool slightly and cover surface with 4 cups marshmallows and 1 cup chocolate chips. Broil at least 8 inches from the heat until marshmallows turn golden brown, about 2 minutes. (Keep an eye on the marshmallows, and turn the pan frequently--they go from golden to char in a wink.) Cool, cut and serve.

- Preheat oven to 190c (or 170c fan forced).
- Line a 26cm x 16cm lamington pan with baking paper.
- Place coconut, nuts and fruit in a large mixing bowl.
- Add milk and 1/4 cup of choc bits, mix well to combine and coat ingredients.
- Press mixture evenly into pan and cover with foil.
- Bake for 20 minutes, uncover slice and reduce heat to 160c (140c fan forced) and bake for a further 20 minutes more or until firm and golden; remove pan from oven.
- Immediatly scatter 3/4 cup of chocolate bits over hot layer and allow to melt and using a flexible spatula spread the chocolate evenly.
- Cool and cut into slices.

Simple recipe for when you just want a cookie or two, (and don't want a whole batch waiting to get eaten!) It is easily adaptable to most any flavor; and also great to eat as dough (no eggs). I leave out the baking soda and salt because I don't care if my cookie rises, as long as it tastes good.

- In a small bowl stir together butter, sugar, vanilla, and 1 tbsp of water with a fork till blended.

- Preheat oven to 375°F. Spray 12-cup muffin pan with vegetable oil spray. Mix coconut, sugar, egg and vanilla in medium bowl. Stir in butter.
- Unfold 1 crust on work surface. Using 3-inch-diameter cutter, cut out 12 rounds from crust, patching crust scraps as needed to form 12 rounds. Press rounds gently into prepared muffin cups; bake until light brown, about 10 minutes. Drop about 1/2 teaspoon jam, then 1 scant tablespoon coconut filling into each warm pastry. Bake until filling is brown, about 15 minutes. Cut around cookies to loosen. Using spatula, transfer cookies to rack and cool.
