Steps:

  • Make Jerk Chicken Marinade - In a food processor jar, combine all ingredients listed in Jerk Chicken list except chicken. Pulse to make a fine pureed marinade paste. Transfer paste to a wide bowl.
  • Marinate Chicken - Place chicken on a work board. Using meat tenderizer, pound slightly from both sides. Add chicken to bowl with marinade. Using tongues, coat chicken in marinade. Cover and refrigerate for 30 minutes (up-to 8 hours).
  • Grill - Pre-heat a barbecue grill to medium. Spray grill with cooking oil spray. Transfer chicken to a wide plate. Season lightly with remaining 1 tsp of all-spice. Place chicken on grill. Cook on low-medium heat until chicken is fully cooked.

2 Scotch bonnet or habanero peppers*
1 small knob fresh ginger (peeled)

1 teaspoon dried thyme

2 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/4 cup soy sauce
2 tablespoons olive oil
1 tablespoon apple cider vinegar (or any vinegar)
Juice of 1 lime
2 pounds chicken breasts or thighs
2 cups diced pineapple (fresh is best but any will do)
1 jalapeno (diced)
1/4 red onion (finely diced)
juice from one lime
2 tablespoons cilantro (chopped)
pinch salt

Steps:

  • Place all the ingredients, except the chicken, in a food processor or blender. Pulse/blend until the mixture is mostly smooth. Place the chicken in a large plastic bag or bowl and pour in the marinade. Toss chicken in the marinade until well-coated. Cover the bowl or seal the bag. Place in the refrigerator to marinate at least 1 hour or up to overnight, which will bring out the best flavor.
  • Heat the grill to medium-high heat. Grill the chicken for 10-15 minutes total, flipping halfway through.

1 lime, juiced

Steps:

  • Blend all of the marinade ingredients together in a food processor until smooth.

Steps:

  • Begin by making the jerk marinade. Combine all the marinade ingredients in a blender and process until you have a smooth puree.
  • Add chicken pieces into a large resealable plastic bag and pour in the marinade. Put the bag into a baking dish and let marinate in the refrigerator overnight.
  • Preheat grill to high.
  • Prepare a table-top smoker or take a roasting tray, line it with foil and add some soaked wood chips to the bottom. Place a wire rack over the top, upside down, and lay chicken pieces over the chips on the rack. Cover with foil and grill over high heat. Smoke for 10 minutes.
  • Preheat oven to 300 degrees F.
  • Transfer the chicken pieces to a baking sheet and drizzle with extra-virgin olive oil. Bake in the oven "low and slow" until chicken is tender, about 1 hour. Remove the chicken from the baking sheet to a serving platter and garnish with limes and parsley before serving.

12 chicken thighs, bone in
1 lime, halved
hot sauce, to serve (optional)
1 big bunch spring onions, roughly chopped
thumb-sized piece ginger, roughly chopped
3 garlic cloves
½ a small onion
3 scotch bonnet chillies, deseeded if you want less heat
½ tsp dried thyme, or 1 tbsp thyme leaves
1 lime, juiced
2 tbsp soy sauce
2 tbsp vegetable oil
3 tbsp brown sugar
1 tbsp ground allspice
200g basmati rice
400g can coconut milk
1 bunch spring onions, sliced
2 large thyme sprigs
2 garlic cloves, finely chopped
1 tsp ground allspice
2 x 410g cans kidney beans, drained

Steps:

  • To make the jerk marinade, combine the spring onions, ginger, garlic, onion, scotch bonnet chillies, dried thyme, lime juice, soy sauce, vegetable oil, brown sugar and ground allspice in a food processor along with 1 tsp salt, and blend to a purée. If you're having trouble getting it to blend, just keep turning off the blender, stirring the mixture, and trying again. Eventually it will start to blend up - don't be tempted to add water, as you want a thick paste.
  • Taste the jerk mixture for seasoning - it should taste pretty salty, but not unpleasantly, puckering salty. You can now throw in more chillies if it's not spicy enough for you. If it tastes too salty and sour, try adding in a bit more brown sugar until the mixture tastes well balanced.
  • Make a few slashes in 12 chicken thighs and pour the marinade over the meat, rubbing it into all the crevices. Cover and leave to marinate overnight in the fridge.
  • If you want to barbecue your chicken, get the coals burning 1 hr or so before you're ready to cook. Authentic jerked meats are not exactly grilled as we think of grilling, but sort of smoke-grilled. To get a more authentic jerk experience, add some wood chips to your barbecue, and cook your chicken over slow, indirect heat for 30 mins.
  • To cook in the oven, heat to 180C/160C fan/gas 4. Put the chicken pieces in a roasting tin with the halved lime and cook for 45 mins until tender and cooked through.
  • While the chicken is cooking, prepare the rice & peas. Rinse the basmati rice in plenty of cold water, then tip it into a large saucepan. Add the coconut milk, spring onions, thyme sprigs, garlic and ground allspice.
  • Season with salt, add 300ml cold water and set over a high heat. Once the rice begins to boil, turn it down to a medium heat, cover and cook for 10 mins. Add the kidney beans to the rice, then cover with a lid. Leave off the heat for 5 mins until all the liquid is absorbed.
  • Squeeze the roasted lime over the chicken and serve with the rice & peas, and some hot sauce if you like it really spicy.

3 scotch bonnet peppers, SLICED (jalapeno's may be used if scotch bonnet peppers are unavailable)
2 tablespoons thyme

2 tablespoons salt
2 teaspoons ground black pepper
1/2 cup olive oil
1/2 cup soy sauce
1 lime, juice of

Steps:

  • Wearing protective gloves, remove the seeds from peppers and discard. chop course and place peppers into the blender. you can now carefully remove the gloves. BUT! use gloves when handling the liquid marinade on the chicken itself, even touching the marinade can cause skin to burn and tingle. BE SURE TO WASH YOUR HANDS WELL!
  • Chop the onions and garlic. These do not need to be chopped too fine as they will be liquidized by the blender.
  • Blend all of the ingredients in a blender to make the jerk sauce.
  • use cut up chicken or quartered chicken. with a fork poke several holes in the chicken on each side before applying marinade.
  • place 1-2 cups of sauce in a tight container for basting and for dipping later. Rub 1 cup of sauce in to the meat at a time and place in a ziploc bag. pour a cup or two over the chicken in the bag to make sure there is plenty coating all pieces.
  • Leave the chicken in the fridge to marinade overnight. flipping and massaging bag at least once.
  • Cooking:.
  • Bake in the oven for 30 minutes, turn the meat then bake for a further 30 minutes.

  • Grill the meat slowly until cooked, turning regularly. Baste with some of the remaining marinade whilst cooking. For best results, cook over a charcoal barbecue (ideally over a rack of pimento wood).

2 bay leaves, center ribs discarded and the leaves crumbled

  • Make the marinade:
  • In a food processor or blender purée the scallion, the 2 chilies, the soy sauce, the lime juice, the allspice, the mustard, the bay leaves, the garlic, the salt, the sugar, the thyme, and the cinnamon.
  • Divide the chicken parts between 2 heavy-duty resealable plastic bags and spoon the marinade over them, coating them well. Seal the bags, pressing out the excess air, and let the chicken marinate, chilled, turning the bags over several times, for at least 24 hours and up to 2 days.
  • On an oiled rack set 4 to 6 inches over glowing coals grill the chicken, in batches if necessary, and covere if possible, for 10 to 15 minutes on each side, or until it is cooked through.
