I used to buy baskets of delicious blueberries from a man who had numerous bushes. One of my co-workers gave me this recipe, and it's become a favorite.

1/4 cup shortening
3/4 cup sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups fresh or frozen blueberries
TOPPING:
1/2 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed

Steps:

  • In a bowl, cream the shortening and sugar. Beat in egg; mix well. Combine the flour, baking powder and salt; add alternately to creamed mixture with milk. Fold in blueberries. Pour into a greased 9-in. square baking dish., For topping, combine the sugar, flour and cinnamon; cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before cutting. Serve warm or cooled.

1/4 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup 2% milk
2 cups fresh blueberries
TOPPING:
2/3 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/3 cup cold butter, cubed
Whipped cream, optional

Steps:

  • Preheat oven to 375°. In a small bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg; beat well. In another bowl, combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Fold in blueberries. Spread into greased 9-in. square baking pan., For topping, in a small bowl, combine the sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over blueberry mixture. , Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool on a wire rack. If desired, serve with whipped cream and additional blueberries.

2 teaspoons baking powder
½ teaspoon salt
¼ cup unsalted butter
¾ cup white sugar
1 large egg
½ cup milk
2 ½ cups fresh blueberries
½ cup white sugar
⅓ cup all-purpose flour
½ teaspoon ground cinnamon
¼ cup unsalted butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter and flour a springform pan.
  • Sift 2 cups flour, baking powder, and salt into a bowl.
  • Beat 1/4 cup butter, 3/4 cup sugar, and egg with an electric mixer in a large bowl until smooth. Gradually add milk and beat until fluffy; stir in flour mixture, making a stiff batter. Gently fold in blueberries and spread batter into prepared springform pan.
  • Mix 1/2 cup sugar, 1/3 cup flour, cinnamon, and 1/4 cup butter in a bowl until blended and crumbly in texture. Sprinkle on top of batter, then lightly press topping into batter using fingertips.

1/4 cup sugar, plus more, for the ramekins
3 cups blueberries
1 cup all-purpose flour
1/3 cup cornmeal
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
4 tablespoons cold unsalted butter, thinly sliced
2 teaspoons grated lemon zest
3/4 cup plus 2 tablespoons milk
Confectioners' sugar, for serving
Vanilla ice cream, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Lightly butter the insides of six 1-cup ramekins, and coat the bottom and sides with granulated sugar (pour out an excess sugar). Put on a rimmed baking sheet. Toss the blueberries with 1/4 cup granulated sugar in a medium bowl and set aside.
  • Whisk the flour, cornmeal, granulated sugar, baking powder and salt in a medium bowl. Rub the butter and zest into the flour mixture with your fingers until the mixture is powdery. 1 cup self-rising flour*
1 cup granulated sugar
1 cup whole milk
1 teaspoon kosher salt
1 cup fresh or frozen blueberries
Vanilla ice cream

Steps:

  • Preheat oven to 375°F (190°C).☞TESTER TIP: For easier cleanup, line your pan with foil or parchment paper.
  • Place butter in a 9- by 5-inch (23-by-13 cm) loaf pan and put it in the hot oven. When the butter has melted, remove the pan from the oven.
  • Meanwhile, in a large bowl, whisk together flour, sugar, milk, and salt (it's okay if the batter is a little lumpy). Pour batter into the pan with the melted butter and use a spoon to lightly mix it. There should be visible streaks of melted butter that don't get completely mixed; this yields buttery, caramelized edges.
  • Place the blueberries on top of the batter in an even layer. Bake until the top is golden brown all over, 45 to 50 minutes. (If you remove it too early, the buckle will indeed "buckle" in the middle and fall-which would still be tasty, though sunken!) Wait until it's golden all over the top and set in the center.
  • Place the buckle on a cooling rack for 10 minutes before serving warm with a scoop of ice cream. Leftover buckle can be covered and refrigerated for up to 3 days.

1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon ground ginger
2 ounces unsalted butter, room temperature
5 1/4 ounces sugar, approximately 3/4 cup
1 large egg
1/2 cup whole milk
15 ounces fresh whole blueberries, approximately 3 cups
3 1/2 ounces sugar, approximately 1/2 cup
1 1/2 ounces cake flour, approximately 1/3 cup
1/2 teaspoon freshly ground nutmeg
2 ounces unsalted butter, chilled and cubed

Steps:

  • For the cake: Preheat the oven to 375 degrees F.
  • Spray a 9 by 9-inch glass baking dish with nonstick spray and set aside.
  • In a medium mixing bowl whisk together the flour, baking powder, salt and ground ginger. Set aside.
  • In the bowl of a stand mixer, with the paddle attachment, beat together the butter and sugar on medium speed until light and fluffy, approximately 1 minute. Add the egg and beat until well incorporated, approximately 30 seconds. Add 1/3 of the flour mixture and beat on low speed just until incorporated and then add 1/3 of the milk and beat until incorporated. Repeat, alternating flour and milk until everything has combined. Gently stir in the blueberries and pour the mixture into the prepared baking dish.
  • For the topping: In a small bowl combine the sugar, flour and nutmeg. Add the butter and work into the dry ingredients using a fork to combine. Continue until the mixture has a crumb-like texture. Sprinkle the mixture on top of the cake. Bake on the middle rack of the oven for 35 minutes or until golden in color. Cool for at least 10 minutes before serving.
