1 lb ground beef
1 can olives
1 Taco seasoning
1 Taco sauce
1 Cheese
1 Corn tortillas

Steps:

  • Cook beef and taco seasoning; drain
  • Add olives and some taco sauce, just enough to cover meat (I used LA Victoria green sauce but you can use whichever sauce you prefer)
  • Put mixture in corn tortillas and roll each, lining a 13x9 inch pan (about 14 tortillas)
  • Cover with more taco sauce and sprinkle with cheese
  • Bake at 425°F for about 18 minutes or until cheese is golden

This is a recipe from my Good friend. I made these for a Mexican themed party to rave reviews and no leftovers!!!!.

1 lb ground beef
1/2 cup onion, diced (1 large)
1 1/4 ounces taco seasoning mix
15 ounces enchilada sauce
6 ounces enchilada sauce
2 cups cheddar cheese (or more)
15 ounces Wolf brand chili (no beans)
flour tortilla

Steps:

  • cook ground beef and onion together over medium high heat until browned and drain off grease.
  • Add the small can of Enchilada sauce and taco seasoning to the beef mixture and cook until heated through about three to five minutes.
  • Combine 15 oz can of Enchilada sauce and wolf chili in medium sauce pan over medium to low heat. Stir occasionally till heated through.
  • Take a tablespoon of ground beef mixture and place on flour tortilla with a tablespoon of cheddar cheese and roll and place in a 9x13 baking dish seam side down. repeat step until all of the ground beef mixture is used.
  • Pour Enchilada wolf chili sauce mix over enchiladas and cover with remaining cheddar cheese.
  • Place in 350 oven and cook for 20 minutes until cheese is melted.

Easy enchiladas can be made with ground meat or omitted for cheesy enchiladas. This is a family recipe.

1 lb ground beef
2 cups sharp cheddar cheese
14 corn tortillas
1 (15 ounce) can of hormel no bean chili
1 (7 ounce) can el pato tomato sauce
1 yellow onion, diced
4 garlic cloves
2 tablespoons chili powder
1 tablespoon cumin
salt and pepper
1 dash red pepper flakes
1 (4 1/2 ounce) can sliced black olives

Steps:

  • Brown ground beef in a skillet. Saute onion and garlic and add to meat. Add chili powder, cumin, pepper flakes, salt and pepper to meat. Add a 1/4 cup of water and simmer meat until most of the water is evaporated.
  • Combine Hormel chili and el pato. Warm corn tortillas and dip into chili mixture one at a time. Fill each tortilla with meat, olives, and cheese. Roll and place seam side down in a 13 x 9 baking dish. Pour remaining chili over top as well as cheese and olives. Bake for 20 minutes in a 350 degree oven.
