ROSEMARY OLIVE OIL BREAD



Rosemary Olive Oil Bread image

A healthy dose of olive oil gives this rosemary-infused bread from Mark Bittman's How to Bake Everything a rich, moist crumb and pale golden hue. Among other things, this is a wonderful and unconventional loaf for sandwiches.

Yield Makes 1 large boule

Number Of Ingredients 5

3 cups all-purpose or bread flour, plus more as needed
2 teaspoons instant yeast
2 teaspoons coarse kosher or sea salt
1/3 cup olive oil
1 tablespoon fresh rosemary leaves

Steps:

  • Combine the flour, yeast, and salt in a food processor. Turn on the machine and add the olive oil through the feed tube, followed by 3/4 cup water. Process for about 30 seconds, adding more water, 1 tablespoon at a time, until the mixture forms a ball and is slightly sticky to the touch.
  • Turn the dough onto a floured work surface and, by hand, knead in the rosemary until the dough feels smooth. Put it in a bowl, cover with plastic wrap, and let rise until the dough doubles in size, about 2 hours. (You can cut this rising time as short as 1 hour if you are in a hurry, or you can let the dough rise more slowly, in the refrigerator, for up to 8 hours. At this point, you may also wrap the dough tightly in plastic and freeze for up to a month; defrost in a covered bowl in the refrigerator or at room temperature.)
  • Lightly dust a work surface with flour. Shape the dough into a boule, sprinkling with flour as necessary but keeping it to a minimum. Line a colander or large bowl with a well-floured kitchen towel, set the loaf in the bowl, and cover with another towel (this keeps it from spreading too much). Let the dough rise for at least an hour and preferably longer, up to 2 hours.
  • About 45 minutes before the dough has risen, heat the oven to 425°F. Put an ovenproof skillet (preferably cast iron) on the floor or the lowest rack while the oven heats. If you're using a baking stone, put it on the rack above the skillet while the oven heats; if not, line a baking sheet with parchment paper.
  • Once you're ready to bake, slide or turn the dough out onto a lightly floured peel or flexible cutting board, seam side down, or just transfer it to the prepared baking sheet. Rub the loaf with a little flour (this helps prevent scorching) and slash the top with a sharp knife or razor blade. Use the peel or cutting board to slide the loaf onto the baking stone or slide the baking sheet into the oven. Partially pull out the rack with the heated skillet and very carefully pour 1 cup hot water into the skillet (it will create a lot of steam). Slide the rack back in and immediately close the oven door
  • Bake for 45 to 50 minutes, turning the bread or the baking sheet halfway through, until the crust is golden brown, the bottom sounds hollow when tapped, and the internal temperature reaches 200°F on a quick-read thermometer. If the bread is browning too quickly, lower the temperature to 400°F. Remove and cool on a wire rack.
  • Variations:
  • Rosemary Olive Oil Bread With Olives or Tomatoes: In Step 2, knead 1 cup halved pitted oil-cured olives, roughly chopped dried tomatoes, or a combination into the dough along with the rosemary.
  • Olive Oil Bread With Onions and Mint: A nice combo; you can make this with olives too (see the preceding variation), but omit the rosemary. In Step 2, knead 1 large onion, chopped, into the dough in place of or along with the olives. Add 1 tablespoon chopped fresh mint if you like.
  • Pancetta and Black Pepper Bread: Rich, savory, and packed with flavor: You can use olive oil here if you'd rather not use the pancetta pan drippings: Omit the rosemary. Chop 1 pound pancetta (or bacon) and cook until it's crisp. Drain the meat and set it aside, reserving 1/3 cup of the rendered fat. If you don't have enough, add olive oil or good-quality lard to make up the balance. Proceed with the recipe, using the reserved fat in place of the oil. In Step 2, knead in the pancetta pieces and 2 tablespoons coarsely ground black pepper.

1 tablespoon canola oil
1 medium onion, finely chopped
2 cups all-purpose flour
1 tablespoon minced fresh rosemary
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1 cup buttermilk
2 tablespoons butter, melted
1/4 cup plus 2 tablespoons shredded sharp cheddar cheese, divided
1/4 cup each chopped pitted green and ripe olives

Steps:

  • Preheat oven to 350°. In a skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 2-3 minutes. Remove from heat., In a large bowl, whisk flour, rosemary, baking soda and salt. In another bowl, whisk eggs, buttermilk and melted butter until blended. Add to flour mixture; stir just until moistened. Fold in 1/4 cup cheese, olives and onion., Transfer to a greased 8x4-in. loaf pan. Bake 40 minutes. Sprinkle remaining cheese over top. Bake until a toothpick inserted in center comes out clean, 5-10 minutes longer. Cool in pan 10 minutes before removing to a wire rack to cool.

2 cups labneh ((store-bought or home-made) replace that with 3 cups yogurt to make it from scratch)
1/4 teaspoon salt
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped pistachios ((toasted preferably but optional))
1 tablespoon chopped pitted Kalamata olives
pinch of red pepper flakes ((optional))
1/4 cup Zaatar spice
2/3 cup Mina's Moroccan Olive oil (extra virgin)
1/4 cup pomegranate seeds
2 large Pita breads ((not Greek style) cut up into wedges)
2 tablespoons Zaatar spice
1/4 cup Mina's Moroccan Olive Oil

Steps:

  • Start by Making the labneh. Use quality yogurt and mix that with salt.
  • A cheesecloth or ideally a pillow case is best used to strain the labneh.
  • Place the yogurt salt mix in the pillowcase.
  • squeeze out as much moisture as possible .
  • place that over a sieve over a bowl and let it strain overnight or at least 8 hours.
  • The labneh cheese is ready when it's trained and dried out.
  • Make the pita chips.
  • Preheat the oven to 375 degrees F. Cut up each pita bread into 8 wedges and then separate the 2 layers of the pita bread giving you 16 wedges in total per bread.
  • In a small bowl, mix the zaatar spice and olive oil.
  • Lay the pita bread wedges in a single layer on a baking sheet and brush them with the Zaatar and olive oil mixture. Bake for 6-8 mins until crispy (keep an eye on them because they burn easily!)
  • In a small bowl, add in the chopped mint, pistachios, olives, pepper flakes, zaatar spice, pepper flakes, zaatar and olive oil. Mix the topping ingredients well.
  • Spread your labneh on a flat plate mounding the labneh to about an inch high.
  • Spoon the topping ingredients over the top of the labneh and allow it to drip from the sides. Sprinkle the pomegranate arils on top.
  • Serve with pita bread and some minty red tea.

2 1/2 cups all-purpose flour
2 tablespoons double-acting baking powder
2 tablespoons sugar
1 teaspoon salt
1/2 cup fresh mint leaves, chopped
2 large eggs
1/3 cup olive oil
1/2 cup grated onion
2/3 cup milk

Steps:

  • Crush the olives lightly with the flat side of a large knife on a cutting board and discard the pits. Drain the olives on paper towels and chop them. In a large bowl stir together the flour, the baking powder, the sugar, the salt, and the mint, add the olives, and toss the mixture well. In a small bowl whisk together the eggs, the oil, the onion, and the milk and add the egg mixture to the flour mixture, stirring until the batter is just combined. Transfer the batter to a greased loaf pan, 8 by 4 by 2 1/2 inches, and bake the bread in the middle of a preheated 350°F. oven for 1 hour and 15 minutes, or until a tester comes out clean. Turn the bread out onto a rack and let it cool.

1 1/2 teaspoons instant yeast
2 3/4 cup all-purpose flour
1 cup lukewarm water
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 teaspoons olive oil
1/2 cup pitted (chopped Kalamata olives)

Steps:

  • Combine the first six ingredients in the bowl of a stand mixer. Use a spatula to roughly combine the ingredients. Let rest for 15 minutes to activate the yeast.
  • Fold in the olives. Attach the dough hook and knead on medium for 5 minutes. Sprinkle in a bit more flour as needed if the dough won't release from the sides of the bowl.
  • Transfer the kneaded dough to an oiled bowl, cover, and allow to rise for 60 minutes in a warm place.
  • Punch the dough down, then transfer to a parchment-lined baking sheet. Use your hands to shape it into a loaf. Allow to rise for another 60 minutes.
  • Preheat your oven to 400 degrees Fahrenheit and place a second baking sheet on the bottom rack. Dust the loaf with flour and use a serrated knife to make three shallow cuts across the top.
  • Place the baking sheet containing the dough on the middle rack of the preheated oven. Toss a half cup of water onto the hot baking sheet on the bottom rack and close the door. Bake for 30 minutes.
  • Let cool completely on a wire rack before slicing.

1 tbsp fast action dried yeast
600ml/20fl oz warm water, plus extra for the yeast
1 tsp caster sugar
1kg/2lb 4oz strong bread flour
30g/1oz salt
olive oil, for greasing
knob of butter, for greasing
60ml/2fl oz extra virgin olive oil
350g/12oz feta, crumbled
pinch freshly ground black pepper
handful fresh mint, chopped
1 free-range egg, beaten
75g/2¾oz unsalted butter
100g/3½oz honey
250g/9oz medjool dates
1 tbsp shelled pistachios

Steps:

  • Dissolve the yeast in a little of the warm water. Add the sugar and gently mix.
  • Mix the flour and salt, then place in a pile onto a clean work surface. Make a well in the centre of the flour.
  • Add the remaining water and the yeast mixture to the well in the flour and mix, from the centre outwards, to form a dough.
  • Knead the dough for 7-8 minutes, until it stops being sticky. (The dough is ready when it stretches out between your hands without breaking.)
  • Oil a bowl with the olive oil and place the dough into it. Cover with a damp cloth and leave for at least two hours. The mixture should double in size during this time.
  • Turn out the dough onto a clean work surface and, using your hands, knock it back, to reduce the size of the dough.
  • Add the oil, feta, freshly ground black pepper and mint and knead into the dough, until completely combined.
  • Divide the dough into four equal-sized portions, then shape into loaves.
  • Place the loaves onto a floured baking tray. Cover with a damp cloth and leave to rise at room temperature for 40-60 minutes.
  • Preheat the oven to 180C/360F/Gas 4.
  • Brush the loaves with the beaten egg.
  • Place into the oven to bake for 20-30 minutes, or until cooked through and golden-brown. Remove and leave to cool.
  • For the honeyed dates, place the butter and honey into a pan over a medium heat. Bring to the boil and add the dates and pistachios and cook for two minutes.
  • To serve, slice the loaves and serve the honeyed dates in a bowl alongside.
