MIDDLE EASTERN BURGERS
My husband wanted burgers and I wanted something a little more interesting, so I came up with this little gem last night! You won't be dissapointed!

Steps:
- Combine ground beef, egg, onion, garlic, nuts, lemon juice and spices in a large bowl.
- Form patties and fry over medium-high heat until cooked through (about 10-15 minutes).
- Serve in naan and top with hummus, and if you're feeling adventurous, a little chili oil to spice it up!

MIDDLE EASTERN VEGETABLE GRAIN BURGERS
I enjoy lentils and love brown rice, these burgers sound very good. Found this recipe on Howstuffworks website.

- In a medium saucepan place lentils and cover with one inch of water. Bring to a boil, reduce heat to low and simmer covered for 25 to 35 minutes or until tender. Drain the lentils, rinse, and set aside. Cook the rice according to the package directions and set this aside also.
- Using a heavy large skillet heat the oil over medium heat. Add the mushrooms and chopped onion cooking and stirring for 20 to 25 minutes or until mushrooms are brown. In a large bowl combine the mushroom and onion mixture with the cheese, walnuts, lentils, rice, cliantro, eggs and pepper, mix together well. Cover the bowl and chill.
- Preheat broiler and grease a 15 x 10 inch jelly roll pan with oil. Take lentil mixture out of refrigerator and shape into six 1/2 inch thick patties. Place patties on oiled jelly roll pan and broil four inches away from heat source for 3 to 4 minutes on each side, turning once, or until golden brown. Serve immediately on buns topped with mayo, red onion, lettuce, and tomatoes.

GREAT GRAIN BURGERS
I haven't actually tried this; but it actually looked and sounded good. If I don't post it, I'll loose it! Burger without the meat. The recipe comes from Light and Tasty February/March 2002.

Steps:
- Combine the first 5 ingredients in a large saucepan.
- Bring to a boil, reduce heat, cover and simmer for 30 to 40 minutes or until rice is tender.
- Remove from heat and cool completely, refrigerate.
- Combine the mushrooms, oats, mozzarella, cheese cheddar cheese and onion.
- In a food processor, process the cottage cheese and egg substitute until smooth.
- Add mushroom mixture, parsley, salt, basil, celery seed and chilled rice mixture.
- Using 1/2 cup of mixture, shape into 12 patties.
- In a non-stick skillet, cook four patties in 1 teaspoon of oil for 5 minutes on each side or until browned and crisp.
- Repeat with remaining patties and oil.
- Serve on hamburger rolls with lettuce and tomato slices.
- Please note the preparation time includes cooking and cooling rice.
- The cooking time is for the burgers only.

FALAFEL POTATO BURGERS
This is NOT especially a substitute hamburger, more like a potato patty with a middle eastern flair. But it is filling and works well in pita with tahini, tomatoes, lettuce, etc (or dh likes his with ketchup...oh well). If you want a richer flavor, you could add an egg and some zippy spices; we use this for fasting days when we are looking for low key vegan foods so it is deliberately pretty mild. (The kids also prefer it this way anyway...and eat theirs with ketchup as well - it's dh's fault!) I do sometimes add rosemary, basil, a splash of olive oil, etc...this is more of a 'base' recipe to which you can add on. Also good with sauteed mushrooms and onions, baked potato-type toppings, or spaghetti sauce on it...be creative! :o) I leave out the powdered milk when we want to go fully vegan and truthfully have never noticed a difference one way or the other so don't worry if you don't include it. You can also shaped them into balls instead of patties and serve with tahini sauce (sesame seed dressing) for appetizers.

- Saute onion and garlic in oil.
- Mash or puree garbanzos and potatoes together.
- Add sauteed onion, tahini, lemon juice, milk powder, soy sauce, and other spices as desired.
- Shape into patties and place on greased cookie sheet.
- Bake at 350 for 10 min on each side (they will be very soft when turning the first time) Alternately, you can pan fry them in a little oil (I use olive oil) if you prefer them golden and crispier on the outside.
- Serve in pita with lettuce, tomato, and cucumber.

CURRIED WALNUT GRAIN BURGERS
This is from the George Foreman Great Grilling Recipe book. Being soy intolerant, I can never eat regular veggie burgers. These are a snap to throw together, especially if you have left over brown rice. I love the carrot, curry and walnut together...really delicious!

- Combine eggs, yogurt, worcestershire sauce, curry, salt, red pepper in large bowl.
- Beat with an electric mixer until blended.
