DAD'S VENISON CHILI

Dad's Venison Chili image

This is my Dad's awesome chili recipe. He got a deer this year so I actually got to make it tonight with some ground venison he had given us. This one puts together quick, with just an onion and a pepper to dice, then waiting and enjoying that great smell. Deeeeee-licious!

Time 1h40m

Yield 6 serving(s)

Number Of Ingredients 16

1 1/2 lbs ground venison
1 medium sweet onion, chopped
1 medium yellow bell pepper, chopped
32 ounces anasazi beans
28 ounces tomato puree
14 1/2 ounces diced tomatoes (chili style)
3 tablespoons chili powder

1 dash cinnamon
fresh ground pepper
1 1/2 cups water

Steps:

  • Brown the venison in a stock pot (I use non-stick).
  • Add onion and pepper, saute until slightly soft, about 5-10 minutes.

  • I serve mine with a little sour cream and diced onion on top, and some crusty bread.
  • My husband insists this is sacrilege, and serves his with shredded cheese and crumbled crackers.
  • We agree that it is best served with an ice cold beer.

Categories     appetizer

Time 2h50m

Yield 4 servings

Number Of Ingredients 16

4 pasilla chiles, seeded
2 ancho chiles, seeded
1 chile de arbol, seeded
1 1/2 cup chicken stock, plus more as needed for pureeing
2 corn tortillas, quartered
6 tablespoons corn oil
1 1/2 pounds ground venison
1 large yellow onion, diced
4 cloves garlic, minced
2 tablespoons ground cumin
1 1/2 cup dark beer
4 cups chicken stock
8 sprigs fresh cilantro
1 cinnamon stick
Fresh lime juice, for serving
Salt and freshly ground black pepper

Steps:

  • For the chili puree: Combine the pasilla chiles, ancho chiles, chile de arbol and chicken stock in a medium saucepan over high heat. Bring to a boil, then lower the heat and simmer, stirring occasionally, until the chiles are soft, about 10 minutes. Cool slightly. Pour into a blender. Add the tortillas and puree until smooth. The chili mixture should be quite thick with just enough liquid to puree. You may need to add a bit of additional stock.
  • For the chili: Heat the oil in a large saute pan over medium-high heat. When the oil smokes, add the venison and cook, stirring twice, until just brown, about 5 minutes. Remove the meat with a slotted spoon and set aside.
  • Add the onion to the pan with the hot oil and cook until well browned, about 5 minutes. Add the garlic and cumin and cook for 1 minute. Add the chili puree and cook, stirring often to prevent scorching, until thick and very dark, about 7 minutes. Stir in the venison, beer and chicken stock. Lower the heat and simmer, uncovered, until very thick and reduced by half, about 1 hour.
  • Tie the cilantro and cinnamon stick together with kitchen twine. Remove the chili from the heat and stir in the cinnamon and cilantro bundle. Let stand, without stirring, for 15 minutes. Remove the cinnamon and cilantro bundle. Let stand, without stirring, for 15 more minutes, then stir in some lime juice to taste. Season with salt and pepper.

Time 2h

Yield 12

Number Of Ingredients 22

6 tablespoons butter
2 tablespoons all-purpose flour
½ teaspoon ground white pepper
4 teaspoons salt, divided
2 tablespoons brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
4 cups chicken broth
1 (4 ounce) can green chiles, peeled and seeded, diced, liquid reserved.
6 cloves garlic, crushed
2 teaspoons chili powder, divided
2 teaspoons cayenne pepper, divided
1 tablespoon ground cumin
1 tablespoon dried cilantro
1 teaspoon ground coriander seed
1 teaspoon dried oregano
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can great Northern beans, rinsed and drained
1 pound ground venison
1 pound sliced bacon, diced
1 red onion, chopped
6 cloves garlic, minced

Steps:

  • Melt the butter in a large pot over medium-low heat. Stir in flour until smooth. Cook and stir until the flour turns dark, about 15 to 20 minutes. Stir in the white pepper, 1 teaspoon of salt, brown sugar, cinnamon and nutmeg until smooth.
  • Gradually whisk in the chicken broth so that no lumps form. Add the green chilies with their liquid, and the crushed garlic cloves. Season with 1 teaspoon of chili powder, 1 teaspoon of cayenne, cumin, cilantro, coriander and oregano. Stir in the corn and beans, and bring to a simmer.
  • Place the bacon in a large skillet over medium-high heat. Cook, turning occasionally until browned. Add the onion and minced garlic; cook and stir for a few minutes. Add the venison, and season with remaining 3 teaspoons of salt, 1 teaspoon of chili powder and 1 teaspoon of cayenne pepper. Cook, stirring to break the venison to your desired texture, until evenly browned.
  • Transfer the meat mixture to the pot, and simmer over low heat for at least 1 hour, stirring occasionally.

VENISON CHILI FROM THE LAND

Venison Chili from the Land image

Provided by Nancy Fuller

Categories     main-dish

Time 2h15m

Yield 6 servings

Number Of Ingredients 19

2 tablespoons extra-virgin olive oil
4 slices bacon, chopped
2 pounds venison stew meat, cut into 1- or 2-inch chunks
Kosher salt
Freshly ground black pepper
1 medium onion, chopped
1 red bell pepper, chopped
1 (4-ounce) can chopped green chilies, drained
3 cloves garlic, chopped
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon paprika (preferably smoked)
1/4 teaspoon chipotle chili powder
1 cup dark beer (such as Dos Equis)
1 (28-ounce) can fire-roasted whole tomatoes, crushed by hand
1 (14 1/2-ounce) can low-sodium beef broth
1 chipotle chili in adobo, chopped, plus 2 tablespoons sauce from the can
2 tablespoons light brown sugar
2 tablespoons unsweetened cocoa powder

Steps:

  • Heat a large Dutch oven over medium heat. Add the olive oil and bacon and cook until the bacon renders its fat, about 4 minutes. Remove the bacon to a paper towel-lined plate to drain.
  • Pat the venison dry with paper towels and season with salt and pepper. In batches, cook the meat in the Dutch oven until browned all over, about 6 minutes per batch. Remove the meat to a plate as it browns.
  • Once all of the meat is out of the pot, add the onion, bell pepper, green chilies, and garlic and cook until the onion and pepper begin to soften, about 5 minutes. Add the chili powder, cumin, paprika, and chipotle powder and cook until the vegetables are coated with the spices, about 1 minute. Pour in the beer, bring to a boil, and boil until reduced by half, about 2 minutes. Add the tomatoes, beef broth, chopped chipotle and chipotle sauce, brown sugar, and cocoa powder. Bring to a simmer and add the bacon and venison back. Simmer the stew, partially covered, until the meat is tender and the sauce is thick and flavorful, 1 1/2 hours to 1 hour and 45 minutes, uncovering for the last half an hour. If the meat is tender but the sauce is too thin, simmer rapidly over high heat for a minute or two to reduce, stirring to keep the bottom from burning.

  • In a large pot add lard, fat or oil and ground meat. Season meat with 1 Tbsp kosher salt, 1/2 Tbsp pepper and 2 tsp garlic powder. Cook ground meat on medium high to high heat until brown and caramelized. This will give amazing depth of flavor to the chili so don’t rush this step!
  • Turn heat down to medium high and add onion, peppers and garlic and cook for 5-7 minutes or until veggies start to soften. The veggies will help pick up all the browned meat bits and help deglaze the pan.
  • Cover and simmer on low for about 30 minutes, stirring occasionally. Remove lid and simmer for another hour or more, until meat is tender and the chili is your desired consistency. The chili will reduce and thicken while it simmers uncovered. If you like a thinner chili, just leave the cover on. The longer the chili simmers the more tender and decadent it gets…I have let is sit on the stove on a low simmer all afternoon!

  • No Frills, No Heat Venison Chili. Being from Texas, I personally think it's a crime to make chili without chilies, but to each his/her own. This simple recipe is easy enough to whip up and will make for an all-around crowd pleaser for those who like to be able to season things on their own.
  • Venison Chili Con Carne. Something about bacon makes it the perfect addition to everything. No, seriously, everything - even chocolate. This chili recipe includes some of my favorite pepper (chipotle), a little dose of jalapeno, and a hearty portion of bacon to add fat to the lean venison meat.
  • Hearty Chunk Venison Chili. While this recipe comes from someone who definitely didn't know how good they had it with being gifted a backstrap, I'm still a fan of the soaking meat in vinegar method, which will definitely give you a unique, tender texture.
  • No Beans, Tex-Mex Style Venison Chili. If you like a little zest to your chili, here's a good one. Tex-Mex is one of the great benefits of living down South, where finding things like Mexican Oregano isn't that difficult.
  • The Chile-Lover's Venison Chili. We're huge fans of Hank Shaw over at Hunter, Angler, Gardener, Cook, and this recipe stands as witness to his mastery of wild game meats and traditional cooking methods.

  • Combine all ingredients into the slow cooker and cook for 3 hours with the lid on. Stir the mixture occasionally.
  • After three hours, remove the lid and allow the chili to cook for an addition 3-4 hours until you get the desired thickness. Leaving the lid off allows the moisture to cook off from the chili, resulting in a thicker, chunkier stew.
  • If you’re using a lean mixture of ground meat, you can serve immediately over spaghetti topped with cheese and diced onions.

  • Crockpot Instructions I'm only going to tell you this once... throw everything into the pot and cook on low for 6-8 hours. I know, this is hard work!
  • Stovetop Instructions Cook the meat with the onions and garlic. As the meat cooks, I usually open up all of the cans and add the spices to the top of them, so I can easily dump everything in to the pot.
  • Throw everything into the pot after the meat is done cooking and cook a minimum of 1 hour. It's much better to cook it at least 2 hours.
