30 MINUTE DINNER ROLLS
There is truly no smell as amazing as fresh warm bread or rolls coming out of the oven! These 30 minute dinner rolls are the perfect addition to any meal!

Steps:
- Preheat oven to 400*F.
- In a large bowl, combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt.
- With a stand mixer or by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.
- Divide dough into 18 even pieces, and form into balls. Place in a greased pan and cover with parchment paper and a kitchen towel.
- Let rise 10 minutes in a warm place. (You can allow them to rise up to an additional 30 minutes if time allows).
- Lightly brush with milk and bake on the middle rack for 10-12 minutes or just until browned.

I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

Steps:
- Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
- Add salt and beaten egg; blend well.
- Add flour, one cup at a time until soft dough if formed.
- Knead on a floured surface 5-10 minutes or until dough is smooth and elastic.
- Shape into small balls (walnut sized) and put into a greased baking pan.
- Let rise at least 5-10 minutes.
- Bake at 425 degrees for 15-20 minutes.
- *If you have more time, you can let the rolls rise in the pan until they have doubled in size.

- Return to boiling; boil and stir for 1 minute.
- Remove from heat; stir in vanilla and pecans.

CARAMEL-PECAN CINNAMON ROLLS
Steps:
- In a large bowl, dissolve yeast in warm milk. Add the eggs, butter, sugar, salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, for sauce, melt butter in a large saucepan. Stir in brown sugar and corn syrup. Boil over medium heat for 2 minutes, stirring constantly. Pour into a greased 13x9-in. baking dish. Sprinkle with pecans; set aside., Punch the dough down. Turn onto a floured surface. Roll into a 17x15-in. rectangle. Spread butter to within 1/2 in. of edges. Combine sugar and cinnamon; sprinkle over dough. Roll up jelly-roll style, starting with a long side; pinch seam to seal., Cut into 15 slices. Place cut side down over caramel sauce. Cover; let rise until doubled, about 30 minutes. , Bake at 350° until golden brown, 30-35 minutes. Let stand 5 minutes; invert onto a serving platter.

- In small bowl, combine brown sugar and margarine beat until light and fluffy. Stir in 1/2 cup nuts set aside. In large bowl, combine 1 cup flour, sugar, baking powder, salt and yeast blend well. In small saucepan, heat milk, water and margarine until very warm (120 to 130°F.). Add warm liquid and egg to flour mixture. Blend at low speed until moistened beat 3 minutes at medium speed. By hand, stir in remaining 3/4 to 1 3/4 cups flour to form a soft dough.Grease cookie sheet. On floured surface, toss dough until no longer sticky. Roll into 15 x 10-inch rectangle spread with half of filling mixture. Starting with 15-inch side, roll up tightly, pressing edges to seal. Cut into 15 slices. Place cut side down on greased cookie sheet flatten to 1/2 inch. Spread tops of rolls with remaining filling. Sprinkle with 1/4 cup nuts. Cover loosely with greased plastic wrap and cloth towel. Let rise in warm place (80 to 85°F.) until light, about 45 minutes.Heat oven to 400°F. Uncover dough. Bake 10 to 12 minutes or until light golden brown. Immediately remove from cookie sheet place on wire racks. Serve warm. I'm posting this recipe in response to a request. I found it in the Nov. 19, 2002 issue of Woman's World magazine, where my sister had mini-mystery published! You could make these treats and then curl up with this magazine, your favorite magazine, or novel!

Steps:
- Heat oven to 350°.
- Arrange graham crackers in single layer in ungreased 15 x 10" jelly-roll pan.
- Heat brown sugar and margarine to boiling in 2-qt. saucepan.
- Boil 1 minute, stirring constantly.
- Remove from heat.
- Stir in vanilla.
- Pour sugar mixture over crackers; spread evenly.
- Sprinkle with pecans.
- Bake 8-10 minutes or until bubbly.
- Cool slightly.
- Break into squares.

- In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
- Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

- Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. - Stir the yeast into the water. While the yeast blooms, stir the 2 ¼ cup of the flour, granulated sugar, baking powder, and salt together in a large mixing bowl. Use a pastry blender or your fingertips to cut 1/3 cup of the cubed butter into the flour mixture. Stir in the milk, the egg, and the yeast/water mixture. If the dough is too soft, add up to ¼ cup more to make a workable dough.
- Stir ½ cup of the brown sugar with the remaining 1/3 cup of butter until smooth. Roll the dough into an approximately 15×10 inch rectangle on a floured surface. Spread the brown sugar & butter mixture over the dough and sprinkle with ½ cup of the pecans. Roll up starting with the long edge and use a serrated knife to carefully cut into 16 rolls. Arrange the rolls into a 9×13 pan.
- Sprinkle the remaining brown sugar over the rolls, then sprinkle with the remaining pecans. Drizzle the melted butter over the top. Cover with a kitchen towel or plastic wrap and allow to rise for about 45 minutes. Bake at 425 degrees for 12 to 15 minutes. Serve warm or at room temperature.
