3 teaspoons oil
2 lbs ground beef
14 ounces carrots, slivered
12 ounces onions, chopped
14 ounces celery, diced
48 ounces diced canned tomatoes
2 cups red kidney beans
2 cups white kidney beans
88 ounces beef stock
3 teaspoons oregano
2 1/2 teaspoons pepper
5 tablespoons fresh parsley, chopped
1 1/2 teaspoons Tabasco sauce
48 ounces spaghetti sauce
8 ounces dry pasta shell macaroni

Steps:

  • Sauté beef in oil in large 10 quart pot until beef starts to brown.
  • Add onions, carrots, celery and tomatoes and simmer for about 10 minute.
  • Drain and rinse beans and add to pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles .
  • Simmer until celery and carrots are tender, about 45 minute.
  • NOTES : Makes 9 quarts! Just cut the recipe down for smaller batches.

Hearty and layered with Italian flavors, this soup is simple to make.

2 tbsp olive oil
1 lb ground beef OR ½ lbs. ground beef and ½ lbs. Italian Sausage
1 large onion, diced
3 stalks of celery, sliced
1-2 cups sliced or diced carrots
3 cloves of garlic, crushed
1½ tsp dried basil
2 tsp dried Italian Seasoning
1 tbsp brown sugar
Pinch of red pepper flakes
1 15 oz can diced tomatoes
3 8 oz cans tomato sauce
4 cups beef broth or chicken broth (or 1 tsp bullion per cup of water)
1 cup more of water, if needed.
Salt and pepper to taste
1 15 oz can Kidney Beans, drained (dark or light)
1 15 oz can Great Northern beans, drained (or Cannellini Beans)
1 cup Ditalini Pasta
Parsley, dried or fresh (optional)
Parmesan cheese (optional)

Steps:

  • Heat oil in your favorite large soup pot.
  • Add ground beef or Italian sausage and ground beef. Brown the meat.
  • Add onion, celery and carrots. Cook for 5 minutes or so. Add garlic and cook for 1 more minute.
  • Next, add spices, sugar, pepper flakes.
  • Add canned tomatoes, tomato sauce and broth. Stir well. Taste and add salt and pepper as needed.
  • Add drained beans. Bring to a boil.
  • Once soup is boiling, add ditalini pasta and cook according to the time called for on package directions.
  • Once noodles are cooked, soup is ready to serve. Serve with dried or fresh parsley and Parmesan cheese.

Steps:

  • Brown the ground turkey in a large saucepan or pot over medium heat. Strain the fat.
  • Add onion, carrot, celery and garlic and sauté for 10 minutes.
  • Add remaining ingredients, except pasta, and simmer for 1 hour.
  • About 50 minutes into simmer time, cook the pasta in 1 1/2 to 2 quarts of boiling water over high heat. Cook for 10 minutes or just until pasta is al dente, or slightly tough. Drain.
  • Add the pasta to the large pot of soup.
  • Simmer for 5-10 minutes and serve.
  • ***I sometimes cook the noodles and leave out of the soup-this way, the guests can add as many as they would like and it freezes better without the noodles in it!

Some are shared on message boards, others are displayed on sites in a collection of "actual restaurant recipes" (yeah, right!). But they all leave out obvious ingredients you can see, like the carrots, ground beef or two kinds of beans. Others don't get the pasta right--it's obviously ditali pasta (short little tubes). Then there's the recipe that really squeezed the seeds from my gourd--one that's floating around in MasterCook format that lists "Top Secret Recipes" as the source. But wait a minute! I've never created a clone for this dish--not here on the site and not in any book. So, after logging some time over a chopping block, an open flame, and a couple tasty glasses of Merlot, out popped this puppy. And this is the one, kitchen cloners! If you want the taste of Pasta e Fagioli at home, this is the only recipe that will fool in a side-by-side taste test. Accept no other imitation." So says Mr. Wilbur.
