OLD FASHIONED TUNA-POTATO CHIP CASSEROLE
This recipe was popular in the 60's. It was one of the first tuna casserole's and is still a great comfort food today. Easy to make and has all the things that are usually on hand. This can also be made with the same size can of chicken. Sometimes I add mushrooms and english peas.

Steps:
- Cook noodles in unsalted water.
- Drain noodles. Mix soup, milk and tuna with noodles.
- Add shredded cheese and onion.
- Pour into casserole dish.
- Crush potato chips and sprinkle on top. Bake 15 minutes at 425 degrees.

EASY AMERICAN POTATO AND TUNA CASSEROLE
My casserole is amazing! As an aspiring chef, I spend a lot of time in the kitchen. I'm 18 and this is one of my creations. Your family will love this dish for its melted cheese and soft potatoes. It's a good way to get calcium in your diet as well.

- Preheat oven to 400 degrees F (200 degrees C).
- In a large pot over high heat, place the potatoes with water to cover and bring to a boil. Let boil for about 20 minutes, or until potatoes are tender. Drain and transfer potatoes to a large bowl. Add the milk, mozzarella cheese and 2 tablespoons of the Parmesan cheese.
- Using an electric mixer, beat the potatoes until almost smooth. Then beat in the eggs, drain the tuna and stir the tuna into the potato mixture. Then stir in the green onion, and season with salt and pepper to taste.
- Transfer mixture to a lightly-greased 10-inch diameter glass pie dish and top with the remaining Parmesan cheese.
- Bake at 400 degrees F (200 degrees C) for 45 minutes, or until golden brown.

- Bring a pot of water to boil, and cook egg noodles for about 6 minutes. Drain. These will finish cooking in the oven.
- Spray a 1- 2 quart casserole dish or an 8x8 inch dish with cooking spray.
- Mix together soup, milk, tuna, peas, salt, and drained noodles.
- Pour into casserole dish and top with potato chips.
- Cook in a 350 degree F oven for 30 minutes.

- Preheat oven to 400°
- Prepare baking dish (approximately 1-quart casserole dish) by buttering edges or using pam spray. Set aside.
- Place noodles, and tuna in a mixing bowl. (Flake the tune gently so the pieces are broken apart.
- In a saucepan, melt butter on medium-high. Then add minced onion. Cook for 2 minutes until onion is translucent.
- Add flour while constantly stirring with a whisk. Cook for 2 minutes to cook out the powdery taste and bring out the nutty rich flavor.
- Add milk, and continue to whisk for 5-7 minutes until mixture thickens. Then add cheese, salt and pepper to taste Cook for 2-3 minutes more until all cheese has melted.
- Remove from heat and pour over tuna and noodles. Add peas. Stir to combine.
- Place into a buttered baking dish -- If making ahead, cover the dish with plastic, and place in the fridge. Don't place topping on until you are ready to bake it. (see notes)
- Stir panko and melted butter together and sprinkle over tuna and noodles.
- Bake for 20 minutes and serve.

- Crush chips and place half in greased 2-qt. baking dish. Arrange tuna over chips. Top with asparagus and the remaining chips. Combine sauce ingredients and pour over top. OLD FASHIONED TUNA CASSEROLE
This is a favorite from my childhood, think 1950-60's, that is one of my all-time comfort foods. There are ways to bring it up to today's standards like using fresh asparagus, fat free cream soup and baked potato chips - I do all but the chips :) ! When using fresh asparagus get 2 bunches and steam lightly first but not too soggy, if using canned try to feel out the woody stems and toss out. This can be used with leftover or canned chicken or turkey (about 1.5-2 cups chopped) but never substitute the cream of chicken soup or another cream soup, like mushroom, it seems like a good idea but it doesn't taste right.

- Using a large (9"x13") casserole dish begin by crushing a layer of chips on the bottom not into powder but just broken pieces to make a full layer, I usually use less than half a bag but you want to cover the bottom well.
- Proceed to layer the remaining ingredients using all in the order listed - celery, asparagus, tuna - then spread the undiluted cream of chicken soup carefully so you don't mix up your layers.
- Sprinkle with cheese, it's OK to use a little extra if you like or less if you are looking to reduce calories.
- Top with crushed chips and bake in a 325 oven for 45 minutes or till hot all the way through. If your chips are beginning to brown you may want to cover with foil at the end but not the whole way through or they will get soggy.
- Enjoy with green or fruit salad or sliced tomatoes!

- Preheat oven to 350°F. Prepare pasta according to package directions.
- Meanwhile, cook green beans in boiling salted water to cover 30 seconds to 1 minute or until crisp-tender; drain. Plunge into ice water to stop the cooking process; drain.
- Melt 2 Tbsp. butter in a large skillet over medium-high heat. Add leeks, and sauté 2 minutes; add mushrooms, and sauté 5 minutes or until lightly browned. Transfer leek mixture to a small bowl. Wipe skillet clean.

- Stir together potato chips, next 2 ingredients, and remaining 2 Tbsp. Parmesan cheese in a small bowl; sprinkle over pasta mixture.
- Bake at 350°F for 35 to 40 minutes or until bubbly. Let stand 5 minutes before serving.
PIONEER WOMAN TUNA CASSEROLE

- Start by preheating your oven to 350 degrees F.
- Next, you want to grease a 1 1/2 quart casserole dish then set it aside.
