HAMBURGER PIE
I'm not sure where this recipe came from, but it's been one of my favorites since I was a kid. Now that I'm grown up, I make it for my husband and he loves it, too.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Peel and quarter potatoes, and introduce into boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside.
- In a large skillet over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese.
- Bake in preheated oven 30 minutes, until potatoes are golden.

BEEF SHEPHERD'S PIE

Steps:
- Preheat oven to 375 degrees F.
- Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. Cook until vegetables are tender, about 10 minutes. Stir in the tomato paste and cook until mushrooms are soft and tomato paste has turned brick red, about 8 minutes more. Stir in the beef, the broth, the remaining salt, the Worcestershire, and some pepper, breaking up any large clumps of meat, cook until the meat is no longer pink, about 3 minutes.
- Transfer the meat and vegetables to a 2-quart oval casserole dish and spread the mashed potatoes over the top, leaving a 1/4-inch boarder around the edge. Make a decorative pattern on the top of the potatoes, if desired. Sprinkle with cheese, if using, and dot with the remaining tablespoon of butter. Bake until potatoes brown and the juices bubble around the edge, about 40 minutes. Let cool for 10 minutes before serving.
- Put the potatoes in a saucepan with cold water to cover by about 1-inch and add the salt. Bring to a simmer over medium-high heat, uncovered, until the potatoes are tender but not mushy, about 15 minutes. At the same time, combine the milk and butter in a small saucepan and warm over low heat until the butter is melted. Remove from the heat and cover to keep warm.
- Drain the potatoes and return to the saucepan. Toss the potatoes over medium heat until dry. Add the heated milk mixture and mash the potatoes until just slightly chunky, then stir in the parsley and season with salt and pepper, to taste.

- Combine 1 cup Bisquick and milk. Roll on floured board to form crust. Cook beef and onions until meat is done. Add seasonings and some bisquick to absorb juices. Spread in pan. Beat eggs and mix in cottage cheese. Pour over meat. Sprinkle with paprika. Bake 30 minutes at 375.

- Spray a 9 inch pie plate with cooking spray then preheat your oven to 400 °F .
- Place the ground beef, onion and bacon into a large skillet. Fry until the ground beef is browned, the onions are soft and translucent and the bacon is cooked. Drain the grease and place in the bottom of the prepared pie plate.
- Sprinkle the cheese on top o the ground beef mixture in an even layer.
- Whisk together the baking mix, the milk and the eggs until it's as smooth as you can get it ( there will be little lumps, don't worry about that.)
- Pour over the cheese and ground beef evenly.
- Bake in the oven for 25-30 minutes or until a knife or toothpick inserted comes out clean.
- Remove and cool slightly, then serve.

HAMBURGER HASH

- Preheat broiler to high.
- Peel the potatoes and cut them into small cubes. Place cubed potatoes in a bowl of cold water, swishing them around to remove starch. Drain in a colander and rinse. Spread potatoes out paper towels and pat dry.
- Add oil to a cast iron skillet and heat over medium-high heat. Add the potatoes and cook, stirring as needed, until the potatoes are fork tender and browned on most sides.
- Sprinkle potatoes with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer to a plate and set aside.
- Stir in the onions, red bell pepper and garlic to the skillet. Cook over medium heat, stirring until golden brown.
- Stir in the beef, chili powder, and 1/2 teaspoon salt, 1/4 teaspoon black pepper and cook, breaking up any clump, until brown, about 5 minutes. Drain any excess fat.
- Add the potatoes back to the skillet and mix in. Sprinkle cheese evenly over the top of the skillet.
- Place skillet under preheated broiler until cheese is melted, about 1 minute. Garnish with fresh parsley and serve.

COTTAGE PIE
This Easy Homemade Cottage Pie is a classic comfort food recipe with beef & veggies in savoury gravy, & topped with crispy mashed potatoes!

- Preheat your oven to 400 degrees Fahrenheit. Prepare a large 9-inch by 13-inch (or equivalent)
- Peel the potatoes and cut them in quarters. Place them in the salted cooking water, cover the pot, and cook on high heat (turn to medium-high when the pot begins reaches a hard boil).
- Heat a large skillet over medium-high heat and add the olive oil.
- Brown the ground beef, adding the onion, garlic, chopped carrots, thyme, paprika, parsley, and salt and pepper just before the beef is cooked through.
- Cook over medium heat just until the vegetables begin to soften and the onions become translucent.
- Add the wine and cook until reduced.
- Sprinkle the flour over the meat mixture and stir well to toast the flour.
- Pour in the stock and stir well, adding the green beans (or peas), cooking until the sauce thickens. Remove the skillet from the heat and pour the meat mixture into the bottom of the prepared baking pan.
- Drain the cooked potatoes and mash them in the pot along with the butter, milk, and salt and pepper until the mashed potatoes are smooth.
- Dollop the mashed potatoes over the top of the meat mixture, smoothing them out completely and creating some grooves with a fork on top of the mashed potatoes (this helps with browning).
- Place the baking dish on a baking sheet (it might bubble over the top of the dish in the oven), and bake the Cottage Pie for about 20-25 minutes at 400 degrees Fahrenheit or until the potatoes begin to turn golden brown on top and the filling starts to bubble up around the sides of the baking dish.
- Let sit at room temperature for 5 minutes before serving.

HAMBURGER ONION PIE

- Mix the beef, onions, pepper & Accent in a pan. Simmer until the onions are transparent and the meat is the consistency of that which you use for spaghetti.
- Leave approximately 1/3 of the grease in the pan. Add the Tablespoon of Bisquick to the mixture including the grease to make a gravy. Set aside.
- Next, mix the Bisquick and roll to form a 9" round deep dish pie pan. Put the dough into the pan. Then in a separate bowl mix the cottage cheese and egg together.
- Put the meat mixture into the uncooked pie crust. Take the cottage cheese/egg mixture and spread it on top to make the top crust of your pie. Sprinkle with paprika.
- Bake in a 350 degrees F oven for 1 hour. Remove and let stand approximately 15 minutes. Slice in wedges and serve with a light salad.

This recipe is from an old (maybe 1950's) Betty Crocker Bisquick recipe that came on the side of the box. The copy I have from my Mom was cut out from the box with the picture. There is no date on it but Betty is dressed 1950-1960's style I think.
