GREAT-GRANDMA CATHY'S DATE LOAF CANDY
Handed down from my great-grandmother, and one of my father's all-time favorite holiday treats. Store in the refrigerator (rolled in the cloth), and it will keep for weeks. Otherwise, it becomes hard and sugary.

Steps:
- Stir sugar, milk, and butter together in a saucepan; bring to a boil without stirring once the boiling begins. Heat until a small amount of syrup dropped into cold water forms a rigid ball or until the mixture reaches 250 degrees F (120 degrees C), about 20 minutes. Immediately remove saucepan from heat and stir dates, pecans, and vanilla into the milk mixture.
- Thoroughly wet a piece of cheesecloth and lay out onto a flat work surface. Pour the candy mixture into the middle of the cloth and roll the cloth around it to shape into a log.
- Refrigerate until hard, 8 hours to overnight. Remove log from cloth and slice.

Steps:
- In a medium sauce pan, mix sugar, dates, butter and milk.
- Cook for 10 - 15 minutes.
- Remove from heat and add walnuts, and vanilla.
- Beat until it thickens.
- Pour onto a cleaned dish towel (NOT TERRY CLOTH). Make sure the towel is wet but not soaking wet--little over damp. Roll it lengthwise and put into fridge until it has completely cooled.
- Unroll the wrap and slice.

- You will also need: 1 clean damp cloth.
- Cook first 3 ingredients, in a med boiler on top of stove.
- Bring to a rolling boil, after 3 minute of this, put a spoon full in a bowl of cold water and check for a soft ball.
- (It should be firm enough to pick up with your fingers.) Keep checking till you get the soft ball.
- Then add the dates, and mix until dates have melted.
- Then add nuts and roll out onto damp cloth, and roll into a log shape.
- Put into Refridgerator until cold,cut into thin slices.

MAY'S DATE NUT LOAF
My childhood friend's mom used to make this delicious old fashioned loaf. We love it with cream cheese smeared on it. It is dark, moist and yummy.

Steps:
- 1. 2 greased loaf pans Put baking soda in boiling water and pour over fruit and nuts. Let stand one hour. Beat egg whites until stiff. Combine yolks, salt and all liquids and alternately mix with dry ingredients. Fold in egg whites and then the melted butter. Bake for 1 hour at 375.
OLD FASHIONED DATE LOAF CANDY RECIPE

- Boil sugar with milk until it forms a soft ball in water. Pour in dates, boil stirring constantly until dates are dissolved. Remove and add 1 c. of pecans and beat until cool. Pour on wet cloth and wrap up!
MOTHER'S DATE LOAF CANDY(SALLYE)
My mother made this every year for the holidays. I always thought it was some exotic mystery thing, because she kept it wrapped in a damp towel on top of the fridge (I think the towel might have been saturated in whiskey but not sure). Anyway, we were not allowed to touch it; she only gave us a small piece now and then.

- 1. Boil sugar and milk until the mixture forms a soft ball in water (or 236º on candy thermometer) Add dates and pecans and cook until a firm ball forms in water (or 240º on thermometer)
- 2. Remove from heat, add butter and let stand until lukewarm Beat with wooden spoon like fudge until mixture begins to thicken Pour onto a damp cloth and roll into a loaf (in damp cloth)
- 3. Place in refrigerator until cold and firm, then slice
MILLIONAIRE DATE LOAF
This is as good as the old-fashioned date loaf, but much easier and almost fail-proof.

- Grease an 8x8 inch dish.
- In a heavy saucepan over medium-high heat combine sugar and evaporated milk; boil 5 minutes. Stir in dates and cook 4 minutes more, stirring constantly. Remove from heat and stir in marshmallow creme, pecans and vanilla extract. Beat until cool. Pour into prepared pan.
- Cool and cut into squares.
