CLASSIC BEEF STROGANOFF
According to legend, this recipe was invented by a chef working for a Russian General, Count Pavel Stroganov in the 1890's. Beef Stroganoff is basically tender strips of beef and mushrooms, cooked in a creamy sauce and rounded off with sour cream. You may want to make this with a tender cut of beef, such as tenderloin or top sirloin. Traditionally served over egg noodles, it also tastes delicious on rice or spaetzle.

- Cut the beef in very thin strips. The easiest way to do that is to put the meat in the freezer until slightly frozen. Add salt and pepper and 1 TBS oil to the beef strips and mix together.
- Melt 3 TBS butter and 1 TBS oil in a large skillet on medium heat. Increase heat and add strips of beef. You want to cook the beef quickly, browning it on each side. You may need to work in batches.When both sides are brown, remove the beef into a bowl and set aside while keeping warm.
- Add remaining butter and oil to the pan and saute the onions until golden, add the sliced mushrooms and cook for a few minutes, allowing them to soak up the pan drippings.
- Add the flour and continue stirring, add the broth and let it simmer until the sauce has thickened and the floury taste is cooked out. Stir in the lemon zest, lemon juice and mustard, add salt and pepper to taste.
- Put the meat back in the sauce, heat through and add 1/2 a cup of sour cream, do not let the sauce cook anymore otherwise it will curdle.
- Serve on egg noodles, topped with a dollop of sour cream and garnish with chopped parsley. Enjoy!

- Slice the beef against the grain into thin slices. Dust with flour to coat. Set aside.
- Cook egg noodles according to package directions. Drain well.
- Meanwhile, heat olive oil in a large heavy skillet over medium high heat. Add in onions and mushrooms and saute until tender, about 7 minutes. Remove from skillet and set aside.
- Without cleaning the skillet, add in butter and let melt over medium high heat. Add in steak slices and cook until browned, 4 to 5 minutes.

BEST EVER RUSSIAN BEEF STROGANOFF
Being of Norwegian descent, I really don't know how this Russian beef stroganoff came into the family. My grandma has made this recipe for 50 years that I know of and it is truly my favorite. Serve over noodles. For a wintertime comfort food this is the best. I actually like it so much that my wife and I will have this for dinner and the next morning we will eat the leftovers with a couple of eggs on the side for brunch. You can't beat it!

- Cut meat into 1/2 inch thick slices. Place between sheets of waxed paper and pound until its 1/4 inch thick (be careful not to tear meat). Cut pounded meat into 2x1/2 inch slices. Sprinkle meat with salt and pepper, let stand for 15 minutes.
- Heat 2 TBS butter in a frying pan large enough to hold everything. Add sliced onion, cook over medium heat for 5 minutes.
- Add meat to pan and cook for 3 minutes, turning meat to brown evenly.
- Stir in flour and mustard, and cook 1 minute more. Add 1/2 cup wine and optional tomato paste. Reduce heat to low, cover pan and simmer for 5-10 minutes, stirring frequently.
- In another frying pan, heat 2 TBS butter. Add minced onion and mushrooms. Cook over medium heat 2 minutes. Add 2 TBS wine and cook 2 minutes more. Add mushroom mixture to meat mixture. Check seasonings and add warmed sour cream.
- Over lowest possible heat, simmer for 5 minutes to heat through. Do NOT let it boil.
- Serve over hot rice with a green vegetable on the side.

- Cut chuck roast into 1/2" by 2" strips. Lightly salt and pepper. Set aside.
- Saute onion and garlic in 1 Tbl. butter and 1 Tbl. oil in a stockpot. Remove and set aside.
- Add beef to pot and brown.
- Add beef broth, sauted onion and garlic and soy sauce to pot.
- Cover and simmer 1 hour or until beef is very tender.

- In a large skillet brown ground beef (Use 1 to 2 pounds, depending on how meaty you like it) & drain fat. Return beef to skillet, add onions (chop these pretty finely), sliced mushrooms (again, you can use more or less than 8 ounces, depending on what you like) & garlic (more or less to taste), cook until tender. Mix in 1 ½ cups water, 1 teaspoons flour, 2 teaspoons (or cubes) beef bouillon, pepper (to taste),1 can of condensed mushroom soup, 1 can of mushrooms, Worcestershire sauce & ketchup. Bring to a boil. Reduce heat and allow to simmer for 15 minutes. While that is cooking, mix together 1 8 oz. package of sour cream, the other teaspoons flour & parsley. Add to beef/mushroom mixture when it's done simmering. Stir very well. Add salt & pepper to taste. If you prefer the sauce to be thinner, stir in small amounts of water until you reach the consistency you prefer. Serve over egg noodles & enjoy!
THE BEST CLASSIC BEEF STROGANOFF
No shortcuts here! This is the best beef stroganoff recipe there is! Recipe can be doubled, but don't freeze. Tenderloin can be expensive, so sometimes I opt for a cheaper cut of beef like sirloin, but this recipe is best with tenderloin. Serve over cooked noodles or rice.

- Closely trim steak and slice into thin slices.
- Pepper meat, then brown in butter in skillet.
- When meat is browned, add sherry and stock or bouillon, bring to a boil and immediately reduce to simmer.
- Add mushrooms and cook until mushrooms are done, but not shriveled.
- Dissolve cornstarch in hot water and add to broth, stirring until broth thickens*slightly*.
- To serve, place seperate bowls of noodles, meat and sauce, sour cream, and slivered almonds on table (you can garnish sour cream with chopped parsley if desired).
- To eat, layer first noodles, then beef, then sour cream and sprinkle with almonds.
