DIABETIC SPLENDA APPLE PIE
This is the original recipe. I made it more like a cobbler (using no bottom crust at all to save on calories). Also, I used 1 tsp of apple pie spice in place of the cinnamon. It's rustic and homey and legal!!

Steps:
- Brush egg white on crust, bake until light brown, about 6 minutes.
- Combine next 6 ingredients, mix well, spoon into crust.
- Mix remaining ingredients and either sprinkle over top OR roll and put on as the top of the pie in thin sheets haphazard for a rustic look. You may need to add a bit more butter if you wish to roll it.
- Bake at 375 Fahrenheit for about 50 minutes or until bubbly.*.
- Cool for about 4 hours.
- *Note: I used a round glass casserole dish and cooked the apples for about 30 mins with the lid on then removed the lid, sprinkled the crust on top and finished baking.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

- Preheat oven to 425°F
- Place one crust into a 9-inch pie pan.
- Place sliced apples into a large mixing bowl and set aside.
- Combine Splenda, cornstarch, cinnamon, nutmeg and salt in a small bowl.
- Sprinkle mixture over apples and toss.
- Spoon apple mixture into piecrust.
- Place the second crust over the filling. Seal edges, trim and flute. Make small openings in the top crust.
- Bake for 40-50 minutes or until the top crust is golden. Serve warm or chilled.

Steps:
- Mix flour, salt and sugar.
- Grate in butter and Crisco tossing flour regularly.
- Rub mixture with hands until crumbly.
- Sprinkle with ice water and mix with spatula (DO NOT OVERMIX).
- Divide into 2 balls and flatten into 4" discs, wrap and chill for 20 minutes before rolling out (or freeze for later use).
- Preheat oven to 425°.
- Mix sugars, cornstarch, cinnamon, salt and nutmeg and coat apples well.
- Mound coated apples into bottom of the unbaked pie shell.
- Place lid onto pie shell and make some decorative slits for steam to escape.
- Glaze with egg white and sugar.
- Wrap a strip of tin foil around the edge of the pie (leaving the top open, this is just to stop the crust from burning) and bake at 425° for 25 minutes.
- Remove foil and reduce oven temperature to 375° and bake for another 30 minutes or until pie is a deep golden brown.
- Let cool to room temperature, and reheat if desired. (pie will be runny if it's eaten while it's hot from the oven, but not if it's reheated once it's cooled).

- Peel, core, and thinly slice apples.
- In a small bowl, combine brown sugar, 1/4 cup sugar, cornstarch, cinnamon, and nutmeg.

- press down gently.

- Bake pie for 20 minute
- Reduce oven temp to 375* and bake another 30 minute.
- Brush top of crust with egg mix and bake another 10 minute.

- Preheat the oven to 350 degrees. Position the racks in the center of the oven and in the lower third.
- Squeeze the lemon juice into a large bowl. Peel, quarter, core, and thinly slice one apple at a time. Toss the slices in the lemon juice to prevent browning. Repeat with each apple.
- On a well-floured surface, roll out one piece of dough to about 12 inches in diameter and lay it in the bottom of a standard 10-inch pie plate. Trim the edges of the dough flush with the edge of the pie plate's rim.
- Add the 1/4 cup sugar, the flour, cinnamon, cloves, and salt to the apples and toss to coat. Pile the apples into the dough-lined pie plate. Dot with butter.
- Roll out the top crust to a diameter of 12 inches. Lay it over the apples. Trim the edge of the top crust so it hangs over the bottom crust by at least 3/4 inch. Tuck the top crust under the bottom and roll it under all around. Pinch it together to close. Crimp the edges with fingers or press with a fork. Chill the pie for a few minutes.
- In a small bowl, whisk together the egg yolk and milk. Cut a few slits in the crust top to allow steam to escape during baking. Brush the egg mixture evenly over the whole crust, being careful not to block the slits. Sprinkle with the remaining 2 teaspoons of sugar.
- Place a cookie sheet on the lower rack to catch any overflowing juices from the pie. Place the pie on the center rack and bake for 1 hour and 15 minutes, or until the crust is golden brown and there is a sign of bubbling juices. Cool on a wire cooling rack for at least 1 hour. Slice and serve.

- Pare, core and slice apples 1/4" thick and toss with lemon juice to keep from turning dark.
- Note: 20oz is a kind of apple and the best I have found for this recipe.
- Blend sugars, flour and spices.
- Toss sugar mixture together with apples and mix.
- Pile apples into unbaked pie shell and dot with butter; Add top crust and score top to allow steam to escape.
- Bake at 425 degrees for 15 minutes, then 350 degrees for 45 minutes.

- Put the butter, flour, and salt in the food processor, and pulse lightly just until the mixture resembles wet sand. Add 1/4 cup ice-cold water, and pulse the processor 5 times. Keep adding water, 1 tablespoon at a time, until the dough begins to gather into larger clumps, processing as you go.

Then remove from heat and pour the thick sauce over apples, using a rubber spatula to make sure you get all of the sauce out. Gently fold the sauce in so it coats all of the sliced apples.
- Remove one of the dough disks from the freezer. On a floured surface, roll dough out to at least a 10-inch round. Gently lift dough into a 9-inch pie plate, carefully pressing down in the center. Pour apple mixture in, getting as much of the sauce as you can.
