Old-Fashion Oatmeal Pie image

This great pie recipe goes back over 100 years. The recipe came from my grandmother's grandmother who was living in Charleston, South Carolina during the 1860's. Family history has it, that during the Civil War, since pecans were in short supply in the South, oatmeal was substituted for the traditional pecan pie and the results were astonishing. Now served at every family gathering since that time.

1 (9 inch) pie crusts
4 eggs
1 cup sugar
2 tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup light corn syrup
1/8-1/4 cup melted butter
1 teaspoon vanilla
1 cup quick-cooking oatmeal (uncooked)

Steps:

  • Preheat oven to 350°F.
  • Beat eggs until frothy.
  • Combine sugar, flour, cinnamon and salt in a small bowl.
  • Add eggs; mix well.
  • Add corn syrup, melted butter, and vanilla.
  • Mix oatmeal.
  • Pour into uncooked shell.
  • Bake for 45 minutes.

This is just like a pecan pie, using oatmeal instead of pecans. During baking, the oatmeal forms a chewy, 'nutty', crust on top.

1 recipe pastry for a 9 inch single crust pie
⅓ cup butter, melted
⅔ cup white sugar
½ teaspoon salt
3 eggs
1 cup corn syrup
1 cup quick cooking oats

Steps:

  • Beat together the eggs, sugar, salt, butter, and syrup together. Stir in oats.
  • Pour into the unbaked pastry shell and bake in a preheated 350 degrees F (175 degrees C) oven until set, about 45 minutes to 1 hour. Let cool before cutting.

1 - pie crust, unbaked
4 - eggs
1 cup(s) sugar
2 tablespoon(s) flour
1 teaspoon(s) cinnamon, i used heaping
3/4 cup(s) light corn syrup
1/4 cup(s) melted margarine
1 teaspoon(s) vanilla, i just splashed in, i didnt measure
1 cup(s) oatmeal, i used the old fashioned kind

Steps:

  • Oven to 350 degrees. Beat eggs until well combined. Add corn syrup and slightly cooled margarine (so you don't cook the eggs) and blend well. Add combined remaining dry ingredients but oats. Mix well, then add in oats. Mix then pour into crust. Bake 45 minutes.

1 teaspoon vanilla extract

Steps:

  • In a medium bowl, beat the eggs well. Stir in sugar, butter or margarine, corn syrup, oatmeal, vanilla, and salt. Pour mixture into the pie shell, and top with coconut.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool before serving.

3/4 cup rolled oats
1/2 cup sweetened shredded coconut
1/2 cup butter, melted

1 teaspoon vanilla extract
1 unbaked pastry shell (9 inches)
1 package (3 ounces) pecan halves

Steps:

  • In a large bowl, combine sugar, corn syrup, oats, coconut, butter, eggs and vanilla. Pour into crust. Bake at 350° for 15-20 minutes. Arrange pecans on top of pie; bake 30 minutes more or until well browned.

1/2 cup quick-cooking rolled oats
3 tablespoons ice water (3 to 4 tb)
4 tablespoons vegetable oil

Steps:

  • Combine flour, rolled oats and salt in mixing bowl.
  • Slowly drizzle in oil, mixing with a fork until mixture resembles fine crumbs.
  • Add ice water slowly until mixture begins to form a ball.
  • Pat into 9 inch pie plate. Bake according to filling recipe.
  • For baked pastry shell: Prick pastry with fork in several places. Bake at 400F 10 min until light golden brown.
