Steps:
- With a sharp knife, slice open the sausage lengthwise without going all the way through.
- In a skillet with a lid over medium-high heat, add the vegetable oil. Add the sausage and brown on both sides, laying it flat. Add the beer and cover, and lower the heat to simmer. Cook for 30 minutes. Remove the sausage and keep warm. Pour off the liquid and reserve.
- In the same skillet with a lid over medium-high heat, add the olive oil and the onions. Cook until the onions brown and begin to caramelize, about 10 minutes. Add ½ cup of the beer braising liquid and cover to let steam for 5 minutes. Uncover and add the sugar and Cajun seasoning along with a sprinkle of salt and pepper. Cook uncovered until the liquid evaporates and turn off the heat. Keep warm.
- In a mixing bowl, add the mustard and mayonnaise. Stir to incorporate and set aside.
- Preheat the oven to 400ºF. Place the buns on a baking sheet and brush the interior and exterior with melted butter. Move to the oven and bake until crispy, about 10 minutes. Remove and keep warm.
- For serving, slather the inside of the bun with mustard sauce. Place a sausage in the center, open it up, and pour the barbecue sauce along the inside of the link. Pile on the onions. Serve more barbecue sauce on the side with potato chips and an ice-cold beer.

- Cut a slit down the length of the smoked sausage.
- Take the mozzarella cheese and cut into 6 slices.
- Place the sausages in the air fryer basket. Fry at 350 degrees for 6 minutes.
- Chop up the peppers and red onions.
- Add olive oil and peppers and onions to a pan.
- Sautee over medium/high heat for 5 minutes.
- Add garlic and cook for 2 minutes more.
- Sprinkle with the salt, pepper, and sugar.
- Pour in the spaghetti sauce and the balsamic vinegar.

- Preheat oven to 350 degrees
- Prepare the Homemade Red Sauce in Less Then 40 Minutes! as directed.
- Place 10 Italian sausage links on a cookie sheet.
- Bake for 30 minutes turning once until cooked though and brown on both sides.
- Slice sausages lengthwise and across for 4 pieces per link.
- Slice pepper jack into thick slices.
- Slice Italian bread loaves lengthwise.
- Sauce the insides of both halves of the bread and lay them side by side on a large cookie sheet.
- Lay the cheese slices on the sauce on the bread half that will be the sandwich top.
- Place the sausage link pieces on top of the sauce on the bread half that will be the bottom of the sandwich.
- Carefully place the top of the sandwich on top of the bottom.
- Cover the sandwiches on the cookie sheet tightly with foil.
- Bake for 15-20 minutes until the cheese melts.
- Using a bread knife, slice into sandwich size pieces and serve.

- Preheat your fire to a medium-high heat. Add your cast iron pan or plancha over the fire 1-2 minutes before cooking. Add your onions with oil to the skillet and cook for 3-4 minutes or until soft.
- Add your Eckrich Original Skinless Smoked Sausage Rope to the skillet and cook for 4 minutes per side. Put butter and brown sugar into your onions and let caramelize. Top with provolone cheese once caramelized.
- Pull off your onions with cheese & smoked sausage. Grill your baguette segments in the plancha for 2-3 minutes.

- Perpare Jezebel sauce first so that it has time for the flavors to blend, can make a day ahead if you want to.
- For Jezebel Sauce combine apple jelly, pineapple preserves, dry mustard, horseradish and tsp of pepper together in a bowl.
- Combine thoroughly and refrigerate until ready for use.
- For Sandwiches:.
- Cut sausage into bun-length pieces, and butterfly each piece, leaving halves connected.
- Grill or fry sausage until browned and cooked through.

- Cut the smoked sausage in widthwise slices that are a little thicker than 1/2-inch (between 1/2-inch and 3/4-inch wide).
- Heat a large skillet on medium heat and add the sliced sausage.
- Using a spatula or a pair of cooking tongs, turn the sausage over as it cooks so that each side of the sausage will brown.
- Once the sausage is browned on both sides (about 5 minutes) turn the heat off of the pan and transfer the sausage onto a paper towel-lined plate. Pat the sausages with a paper towel to remove any excess grease.
- Remove any excess grease left in the pan if needed. Heat the same skillet on medium heat and add the browned slices of sausage back to the pan.
- To the pan, add prepared barbecue sauce. Stir the sausages and BBQ sauce together until each slice is completely coated with the sauce.
- Continue stirring as the barbecue sauce gets thicker and caramelizes. The barbecue sauce should get sticky.
- As soon as the barbecue sauce is thick, caramelized and sticky (about 5 minutes), remove the pan from the heat.
- Serve while warm. When dishing up the sausages on serving plates, use a spatula to get all of the delicious caramelized sauce from the pan and add it to the plated sausages.
- Serve as a main dish or add toothpicks to each slice of sausage and serve as an appetizer.
