- Stir 2 cups water, milk, and oats together in a large saucepan; bring to a boil. Reduce heat to medium-low and cook oats at a simmer until softened and beginning to thicken, about 15 minutes.
- Stir 1 cup water, mashed banana, flax seed, cocoa powder, cinnamon, and nutmeg through the oats; continue cooking at a simmer until thick, about 10 minutes. Fold walnuts into the oatmeal.

- 1. For the oatmeal: in a medium saucepan, bring the water (or milk) and salt to a boil. Stir in oats. Cook about 1 minute, stirring occasionally.
- 2. Serve with brown sugar and/or fruit of your choice.
- 3. For the cocoa: In a saucepan, mix cocoa, sugar and salt; add water. Bring to boiling, stirring constantly. Boil 1 minute. Stir in milk; heat to boiling point (do NOT boil). Add vanilla; beat with rotary beater just before serving. Float two large marshmallows on top of each serving. Makes about 4 servings.

- If you are using frozen blueberries, add these the night before also.
