OATMEAL CARMELITAS
This is an often requested recipe that is easy to make and delicious to eat. Prepare it for your next potluck or bake sale.

Steps:
- Heat oven to 350*.
- Grease 13x9 inch pan.
- In large bowl, blend all crust ingredients at low speed until crumbly.
- Press half of crumb mixture, about 3 cups, in bottom of greased pan.
- Reserve remaining crumb mixture for topping.
- Bake at 350* for 10 minutes.
- Meanwhile, in small bowl combine caramel topping and 3 tbls.
- flour; set aside.
- Sprinkle warm crust with chocolate chips and nuts.
- Drizzle evenly with caramel mixture; sprinkle with reserved crumb mixture.
- Return to oven and bake an additional 18 to 22 minutes or until golden brown.
- Cool completely.
- Refrigerate 1 to 2 hours or until filling is set.
- Cut into bars.
- Enjoy!

OATMEAL CARMELITAS
Chewy gooey caramel, nuts and chocolate. We call them Goober Cookies. They taste great the next day if you get them to last that long.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x9 inch square pan.
- Combine the 1 cup flour, baking soda, oats, brown sugar, salt and melted butter. Mix to combine, mixture will be very crumbly. Press half of the mixture into the bottom of the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 10 minutes.
- Let cool slightly then sprinkle over the crust the chocolate chips and chopped nuts. Mix the caramel ice cream topping with the 3 tablespoons of flour and drizzle over the chocolate chips. Top with the remaining oatmeal mixture. You will need to break it into small pieces to cover.
- Bake at 350 degrees F (175 degrees C) for 15 minutes. Let bars cool before cutting.

- Preheat oven to 350°. Grease a 12 x 8 x 2-inch baking dish. In a medium saucepan over low heat, melt caramels in half-and-half. Stir until smooth set aside.In a medium bowl, mix butter or margarine and brown sugar. Stir in flour, baking soda and salt. Stir in oats. Press half the mixture into the bottom of baking dish. Sprinkle with chocolate chips and nuts. Drizzle with caramel mixture. Sprinkle with remaining crumb mixture. Bake for 15 to 20 minutes or until golden brown. Cool baking dish on a wire rack. Chill at least 1 hour before cutting into 2 x 1 1/2 -inch pieces.

FANTASY CHOCOLATE-CARAMEL DELIGHTS
I have had these delicious cookies as a part of my Christmas cookie trays since 2003. They are well loved. I have sometimes skipped the chocolate drizzle when time was short.

Steps:
- In a large mixing bowl cream butter and sugar.
- Separate egg, reserve white for later use add yolk to creamed mixture.
- Add milk and vanilla to creamed mixture, mixing well after each addition.
- In a separate bowl combine dry ingredients and whisk to combine.
- Combine creamed and dry mixtures with electric mixer; beat until well combined.
- Wrap dough in plastic wrap and chill for 2 hours or until dough is easy to work with.
- Preheat oven to 350°F.
- In a small sauce pan melt caramels into whipping cream over low heat.
- Stir until mixture is smooth; set aside.
- Slightly beat reserved egg white.
- Shape dough into 1-inch balls.
- Roll balls in egg white then in pecans.
- Place balls one inch apart on cookie sheet sprayed with vegetable oil spray.
- Using your thumb, make an indentation in each cookie.
- Bake for 10 minutes or until edges of cookies are firm.
- Spoon caramel into indentation.
- Move cookies to wire racks to cool.
- Melt chocolate chips and shortening; cool mixture slightly then place in a zip top bag.
- When all cookies have been filled, clip tiny corner off of bag and drizzle chocolate over cookies.
- Let cookies stand until chocolate and caramel are set.
- Prep time does not include chilling time.

This recipe came from Mrs. Jaca. She made them for my neice's tea party. So yummy and then to find out they were easy to make was just kind of a bonus. She said the recipe came from a kids cookbook.

- Heat oven to 350 degrees.
- Mix the cake mix, oats and brown sugar in a bowl. Carefully stir in the oil and egg. Stir until everything is mixed together.
- With your hands pat down half the dough into a well greased 9x13 inch baking dish. The dough will be gooey.
- With the back of a spoon spread teh ice cream topping over the dough. Now crumble the rest of the dough on top.
- Bake for 30-35 minutes or until the top crust is a golden brown. They are easiest to cut about 5-10 minutes after you take them from the oven. Let them cool completely before you remove them from the pan.

- Melt 1 tablespoon butter in a saucepan over medium heat. Add apple and 1/4 cup brown sugar; cook and stir until browned, about 2 minutes. Transfer to a small serving bowl.
