Yield 10 large biscuits or 15 medium ones

Number Of Ingredients 7

75g wholemeal flour
1 tsp baking powder
75g porridge oats
50g caster sugar
75g butter
1 tbsp golden syrup
2 tbsp milk

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a baking tray with baking parchment.
  • Sift the flour into a bowl. Mix in the baking powder, porridge oats and sugar.
  • Melt the butter, syrup and milk in a small saucepan or in the microwave and stir.
  • Add to the dry ingredients. Mix until the liquid covers all the oat mixture and until well combined.
  • Spoon onto a baking tray and shape into rounds, leaving space between each biscuit as they will spread whilst cooking.
  • Bake for 10-15 mins, or until golden brown. Leave to cool for 5 mins before removing from tray.

2 1/2 teaspoons baking powder
3/4 teaspoon salt
4 tablespoons sugar
6 tablespoons shortening

Steps:

  • Mix together the first four ingredients. Cut in the shortening. Stir in oats. Stir in milk just until combined.
  • Pat out, cut and bake for 12-15 minutes, at 450°F
  • Recipe may be doubled. Freeze extra biscuits in a heavy plastic bag - thaw and heat to serve.

1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup shortening
1-1/4 cups quick-cooking oats
3/4 cup milk

Steps:

  • In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in oats and milk just until moistened. , Turn onto a lightly floured surface. Roll out to 3/4-in. thickness. Cut with a floured 2-in. biscuit cutter. Place 1 in. apart on an ungreased baking sheet. Bake at 375° for 15-20 minutes or until lightly browned. Serve warm.

2 cups all-purpose flour
1 1/2 cups old-fashioned oats
1/2 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1/4 teaspoon cinnamon
8 tablespoons (1 stick) cold butter, cut into chunks, plus 4 tablespoons butter, melted
1/2 cup whole milk
2 cups low-fat vanilla yogurt
1 cup apple butter
2 Gala or Honeycrisp apples, chopped

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
  • Combine the flour, oats, sugar, baking powder, baking soda, salt and cinnamon in a large bowl. With your hands, cut in the butter until the butter resembles small pebbles. Make a well in the center of the mixture and pour in the milk. Mix until a dough starts to form, then knead gently, 4 to 5 times, until smooth.
  • Pat the dough out to 1-inch thick. Cut out biscuits, using a 2-inch biscuit cutter, and transfer to a baking sheet.
  • Brush the biscuits with the melted butter. Transfer to the oven and bake until golden brown, 18 to 20 minutes. Remove from the oven and allow the biscuits to cool for 5 minutes.
  • Meanwhile, mix together the yogurt and apple butter in a bowl.
  • Top the biscuits with apple butter yogurt and chopped apples. Serve immediately.

8 tablespoons (1 stick/​115 g) unsalted butter, at room temperature
¼ cup (50 g) granulated sugar
½ cup packed (105 g) dark brown sugar
½ teaspoon kosher salt
1 teaspoon baking soda
½ teaspoon ground cinnamon
1 large egg
¾ cup (100 g) Sonora wheat flour, or any other heirloom wheat flour
¾ cup (80 g) old-​fashioned rolled oats
1 cup (145 g) chopped pitted Medjool dates (about 16 )

Steps:

  • In a stand mixer fitted with a paddle attachment, cream the butter and both sugars at medium speed until smooth, about 3 minutes. Add the salt, baking soda, and cinnamon and mix until well combined, 1 minute. Add the egg and mix for another minute. Add the flour and oats and mix on low speed until combined. Finally, add the dates in two additions to make sure they're distributed evenly throughout. The dough will be very soft at this point.
  • Transfer the dough to a sheet of parchment paper or plastic wrap. Flatten into a disk with your hands, then wrap tightly and refrigerate for at least 30 minutes (and up to 2 days)-​chilled dough will be much easier to handle.
  • Place two racks in the middle positions and preheat the oven to 350ºF. Line two baking sheets with parchment paper.
  • Divide the dough into 16 equal portions, about 1½ ounces (45 g) each. Working quickly so that the dough doesn't warm up, shape each portion into a ball with your hands. You can freeze the cookie dough balls for up to 2 weeks in a freezer bag to be baked from frozen at a later time. Place cookies on the prepared baking sheets, at least 3 inches apart to prevent the cookies from touching as they spread when they bake. Bake for 10 minutes, rotate the baking sheets and switch their positions in the oven, and bake for another 6 to 8 minutes, until the edges are brown and the middle is golden. Rotating and switching the sheets halfway through the baking process will ensure that the cookies bake evenly. Let the cookies cool completely on the baking sheets. The cookies keep well for a couple of days stored in an airtight container.

They are not as sweet as most oatmeal cookies I've had, which is a good thing. We could not stop eating them; especially my preschooler. They are excellent "nutritional supplements!" There is no sugar in this recipe however if you prefer sugar to honey--then simply alter the recipe....cut the baking soda to 1/4 tsp. and add an extra tablespoon of water. Your baking temperature should go to 350 if you are using sugar. When replacing sugar with honey you have to increase the baking soda to increase the acid and you reduce liquid by 1 Tablespoon. Also, with honey baking--lower the baking temp.

1 1/2 cups oats
1/2 teaspoon baking soda

1/2 teaspoon nutmeg (optional)
3/4 cup honey
1/2 cup oil, you can also use some applesauce to replace some of the oil if you wish (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)
3 teaspoons vanilla
1/2 cup raisins (optional)
1/2 cup walnuts (optional)

Steps:

  • In a large bowl, mix all the dry ingredients together.
  • In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • COOL the mix for 20 minutes in the fridge.
  • Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
  • Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.
