1/4 cup ancho chili powder
1/4 cup finely ground espresso
2 tablespoons Spanish paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder
2 bone-in or boneless rib-eye steaks, 2-inches thick, approximately 1 1/2 pounds each
Canola or olive oil
Salt and coarsely ground black pepper

Steps:

  • Combine all spices in a bowl.
  • Preheat oven to 425 degrees F.
  • Preheat a cast iron pan over high heat. Brush each side of the steak with oil and then season each side liberally with salt and pepper. Rub 2 tablespoons of the coffee rub onto 1 side of each steak. Cook the steak, rub side down until golden brown, about 3 to 4 minutes. Flip the steak over, cook for 2 minutes and then transfer to a baking sheet and cook in the oven to medium-rare doneness, about 8 to 10 minutes. Remove and let rest 5 minutes before slicing.

1 pound double New York strip steak
1/2 tablespoons brown sugar
1/2 tablespoon apricot salt
1/2 tablespoon freshly ground black pepper

1/2 tablespoon coffee grounds
1/2 tablespoon granulated garlic
1/2 tablespoon smoked paprika

Steps:

  • Apply the olive oil to the entire steak and then sprinkle the rub onto the meat. Allow the flavors to develop for 2 hours.
  • Heat coals on a grill. When the coals are hot, move them to one side of the grill. Sear the steak for 2 minutes on each side over the coals. Move the steak to the cool part of the grill and cook with the lid on for 20 minutes.
  • Rest the steak for 10 minutes before slicing.

2 16-ounce boneless New York strip steaks (about 1 inch thick)
2 tablespoons vegetable oil

Steps:

  • Mix ancho chile powder, ground coffee, brown sugar, paprika, dried oregano, pepper, coriander, mustard, chile de árbol powder, ginger, and 1 Tbsp. salt in a small bowl.
  • Season steaks with salt, then coat with 5 tsp. spice rub per steak (save any extra rub for your next steak). Place on a wire rack set inside a rimmed baking sheet and chill uncovered 3-6 hours.
  • Let steaks sit 1 hour to come to room temperature, which will help them cook quickly and more evenly.

2 steaks (your favorite rib eye, T-Bone, New York Strip)
4 teaspoons your favorite ground dark roast coffee, Fine or 4 teaspoons espresso
2 teaspoons oil
salt and pepper
add your favorite other spices

Steps:

  • Select your favorite cut of steak - Ribeye, T-Bone, or New York works well. Make sure the cut is 2" or better. The grade should be choice or above.
  • Select your favorite dark roast coffee. Fine, Espresso, or Turkish grind will suffice.
  • Select an Olive or Canola Oil.
  • Preheat a cast iron skillet. Brush the oil on both sides of the steak. Apply salt and pepper liberally. Any other favorite spices can be applied, such as mustard, ginger, oregano, etc.
  • Hand rub 2 tablespoons of coffee onto one side of the steak. Cook approximately 3-4 minutes or until golden brown.
  • Flip each steak and repeat the coffee rub.
  • Finish each steak off on the grill.
  • Enjoy!
