CHEWY NO-BAKE GRAIN AND OAT BARS
These easy to make, customizable bars are packed with enough virtuous things that you might almost forget they're dessert. Pack them in lunches, take them on road trips, or serve them for family movie nights-everyone will be happy.

Steps:
- Butter a 13x9" baking dish. Toss puffed cereals, oats, and dried fruits, nuts, seeds and/or coconut (all mix-ins except chocolate chips) in a large bowl with your hands to evenly distribute.
- Bring brown sugar, honey, salt, and 4 Tbsp. butter to a boil in a small saucepan and let cook 1 minute. Remove from heat and whisk in nut butter and vanilla until smooth. Drizzle over puffed rice mixture and stir with a large rubber spatula until everything is evenly coated. If using chocolate chips, let mixture cool about 5 minutes before mixing in.
- Scrape mixture into prepared dish and press and compact down into an even layer with buttered hands. Let cool at least 1 hour before cutting into bars.

- Bars can be made 1 week ahead. Store airtight at room temperature.
OAT AND GRAIN BARS
No-Bake, homemade and healthy granola bars.

Steps:
- Line a 8×8-inch baking dish with parchment paper.
- In a large skillet, over medium heat, add the butter, brown sugar and honey. Cook until you have a smooth mixture, stirring occasionally.
- Remove from the heat, and stir in peanut butter, vanilla and salt.
- Add the oats, rice cereal, almonds, raisins and sunflower seeds to the skillet.
- Stir to combine very well until everything is coated.
- Transfer the oat and grain mixture to the prepared pan.
- Use the bottom of a measuring cup to press firmly the mixture into the pan. Spend extra time on this step, to ensure the mixture is pressed down tightly.
- Spread the chocolate chips on top and press firmly again, using a measuring cup.
- Chill for at least 1 hour.
- Remove the oat and grains from the pan using the edges of the parchment paper.
- Place it on a cutting board.
- Slice into bars and enjoy!

HONEY OATMEAL CHEWY BARS
Quick to mix and quicker to disapear. I like to slightly underbake these for a more softer bar. Dont over bake or you will have rocks! For a really flavorful bar, toast the nuts and coconut in the oven while preheating...watch closely it will burn quickly.

- Preheat oven to 350.
- Cream butter, honey and sugar until light and fluffy.
- Add egg and vanilla.
- Mix together dry ingedients.
- Slowly add to creamed mixture.
- Stir in oatmeal, coconut and nuts.
- Spread into greased 13x9 pan.
- Bake 20-25 minutes in 350 degree oven.
- Cool and cut into bars.
- Store airtight with a piece of fresh bread to keep them soft.

- Preheat oven to 350°. Lightly coat an 8½x4” loaf pan with nonstick spray and line with parchment paper, leaving an overhang on long sides; spray parchment.
- Bring dates and maple syrup to a boil in a small saucepan, reduce heat to medium-high, and boil, stirring often, until dates are very soft and maple syrup is slightly reduced, 8–10 minutes. Remove date mixture from heat and stir in butter until it is melted. Mash dates with a potato masher or fork until as smooth as possible. (If you have an immersion blender, it will work, too.) You should have about 1 cup.
- Toss oats, almonds, pumpkin seeds, sunflower seeds, amaranth, and salt in a large bowl. Mix in date mixture until evenly coated. Scrape half of oat mixture into prepared pan and press very firmly and evenly with a rubber spatula to compress it as much as possible. Add remaining oat mixture and press until very tightly packed into pan.
