Steps:
- Bring broth, apple juice Dijon, 1 tablespoon butter, salt, pepper, dried thyme, oregano, parsley and bay leaf to a boil in a large nonstick skillet.
- Add rice, cover and reduce heat to low (dial should be just above lowest LOW setting). Simmer 45-60 minutes, or until rice is tender and almost all of the liquid has been absorbed, stirring occasionally and replacing lid. Add additional water if needed if rice has absorbed all the liquid and is still not done cooking. Check for doneness at 45 minutes. Once cooked, drain rice and leave in fine hole strainer.
- To the now empty pan, melt 2 tablespoons butter over medium heat. Increase heat to medium high and add onions and apples; saute for 5-7 minutes, or until onions and apples are tender. Add garlic and saute for 30 more seconds.
- Return rice to skillet along with cranberries and pecans. Add apple cider vinegar a little at a time to taste if desired for more tang (I use 2 teaspoons). Toss to evenly combine. Season with additional salt and pepper to taste. Garnish as desired.
WILD RICE PILAF

WILD RICE PILAF WITH NUTS AND LEMON
Steps:
- Heat the olive oil in a small saucepan over medium heat. Add the pine nuts, garlic, zest, and thyme, swirl the pan until the nuts and garlic are beginning to brown, about 2 minutes. Add the wild rice and cook, stirring with a wooden spoon, until lightly toasted, about 1 minute tops. Stir in the chicken broth and salt. Bring to a boil. Reduce heat to a rapid simmer and cook, stirring occasionally, for 45 minutes to 1 hour. Check the texture of the rice and, if needed, continue simmering until tender. Add more liquid as needed, another 10 to 15 minutes. (Note: The rice should only just begin to crack when done. If it begins to curl it is overcooked. There are numerous varieties of varying qualities, which affect cooking times greatly.)
- Remove from the heat, scatter the scallions over the surface, fluff with a fork, and remove the herb sprigs and lemon zest before serving. Season with salt and black pepper, to taste.

- In a small saucepan, bring three cups of vegetable broth to a boil. Add wild rice, reduce to a medium-low boil/simmer, and cover with a loose-fitting lid. If you can tilt the lid up slightly, so that it lets some steam out, that will help the rice cook. Cook according to package instructions. Some varieties may only take 20-25 minutes, others take 40-50 minutes.
- While the rice is cooking, heat oil over medium heat. Add onion and saute for 3 to 5 minutes. Add mushrooms and cook down for ~10 minutes. You may want to add a splash of vegetable stock for more flavor. Next, add the cranberries and cook for another 5 minutes or until they begin to "pop." Stir in the fresh sage.
- When the rice is finished, drain the excess liquid and add it to the mushroom/cranberry mixture. You can heat it up in the same skillet or in a serving dish in the microwave, or serve cold. Serve with more fresh sage, salt, and pepper to taste.

- Add in the broth, salt, pepper and nutmeg. Bring the mixture to a boil, then cover, turn down the heat and let simmer gently for about 30 to 45 minutes, until tender. Start checking the rice around the 30 minute mark to see if it’s done - it should be tender but have a bit of chew. If any liquid remains when the rice is finished cooking, drain.
- Fluff the rice with a fork, then stir in the cranberries and pistachios. Garnish with the fresh chives.
