1 pound ground beef chuck
1 pound ground pork
1 1/4 cups milk
3 eggs, lightly beaten
4 cloves garlic, minced
1/2 cup fresh basil
1/2 cup chopped fresh flat-leaf parsley
1 teaspoon cayenne
1 teaspoon kosher salt
1/2 cup dried breadcrumbs
1/2 to 3/4 cup grated Romano cheese
Roasted Tomato Sauce, recipe follows
15 cloves garlic, peeled and crushed
6 oil-packed anchovy fillets
1/4 cup extra-virgin olive oil
1 teaspoon red pepper flakes
1 teaspoon kosher salt
Two 28-ounce cans whole peeled tomatoes, with their juices
1/2 teaspoon dried oregano

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the ground beef and ground pork in a large bowl. Set aside.
  • In a food processor, combine the milk, eggs, garlic, basil, parsley, cayenne and salt. Process until pureed.
  • Add the wet ingredients to the meat and mix to combine. Then add breadcrumbs and Romano, and gently combine; be careful not to overwork the meat.
  • With the help of an ice cream scoop (for even sizing), shape the mixture into 2-ounce meatballs and place on a baking sheet.
  • Transfer the baking sheet to the oven and bake the meatballs for 30 minutes.
  • Add the meatballs to the Roasted Tomato Sauce and simmer for another 30 minutes.
  • Preheat the oven to 425 degrees F.
  • In a deep lasagna pan, add the garlic, anchovies, olive oil, red pepper flakes and salt. Place the pan on the stovetop and saute for 5 to 7 minutes to soften. Remove from the heat and add the canned tomatoes and oregano; mix well.
  • Transfer the pan to the oven and roast until the tomatoes are nicely charred on top, 45 minutes. Let cool, then blend to your liking with an immersion blender; we like our sauce a bit chunky, but feel free to puree if you choose.

1/2 cup panko bread crumbs
1/4 cup whole milk
1 pound ground beef
1 pound ground pork
1 onion, finely chopped
1/2 stick butter, softened
2 large eggs
1/2 cup chopped parsley leaves
Kosher salt
Freshly ground black pepper
Olive oil, for frying

Steps:

  • Soak the bread crumbs in the milk while you prepare the other ingredients.
  • Put the beef and pork into a large bowl. Add the onion, butter, eggs, and parsley and season well with salt and pepper. Put the soaked bread crumbs into the bowl and mix it all together well with your (clean) hands. Form the mixture into meatballs about the size of ping pong balls.
  • Heat about 1/4-inch of oil in a skillet over medium heat. Fry the meatballs until they are browned on all sides and cooked through, about 15 minutes.

1 red bell pepper
1 stalk celery
4 large white mushrooms
1/4 cup finely chopped coriander
1 lb ground chicken or 1 lb ground turkey
1 egg
1 cup quick oats
6 ounces tomato paste
2 tablespoons molasses
1/2 tablespoon oregano
1/2 tablespoon cumin
1/2 tablespoon thyme
1/8 teaspoon cayenne
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a large bowl mix all the ingredients together very well.
  • Place a hand full of the mixture a cutting board and roll out or pinch together to the thickness of a bread stick.
  • If the mixture is too wet just add more quick oats or bread crumbs.
  • Cut into 2' sections and place on lightly greased baking sheets.
  • Preheat the oven at 375 and bake for 20 minutes or until there is no pink.
  • Serve as a side dish with salad and rice or with spaghetti sauce and pasta.
  • I also use this recipe for hamburgers on the barbecue, it is great!

It's a messy sandwich no matter how you build it or bite into it, but wise construction can help: First, hollow out the rolls a bit so the meatballs have a place to sit. Then, use the leftover crumbs to make the meatballs, which will keep them light. Finally, toast the rolls to prevent them from getting too soggy with sauce. Of course, some crispy-gone-soggy bites are welcome, just as the cheese pulls, sauce drips and messy fingers are, too. They're all part of the experience.

4 (6-inch-long) sub, hero or hoagie rolls, split lengthwise but still attached on one side
1 egg
Kosher salt and black pepper
2 garlic cloves, peeled
Extra-virgin olive oil, for greasing
1 pound ground beef (at least 15 percent fat)
1/2 cup finely grated Parmesan, plus more for serving
2 tablespoons chopped basil leaves, plus more for serving
2 cups marinara sauce (homemade or from a 24-ounce jar)
4 slices mozzarella or provolone

Steps:

  • Heat the broiler to high with a rack no more than 6 inches from the heat source. (See Tip if you don't have a broiler.) Using a fork, scrape out some of the interior of the rolls until you get about 1 cup bread crumbs. Add them to a large bowl along with 1/2 cup water, the egg, 1 teaspoon salt and several grinds of pepper. Finely grate 1 garlic clove into the mixture, then stir to combine. Let sit for 5 minutes.
  • Lightly grease a large (12-inch), oven-proof skillet with olive oil. To the bread crumbs, add the beef, Parmesan and chopped basil. Stir with your hands until combined, avoiding overmixing. Roll into 12 balls (about 2 heaping tablespoons/2 ounces each) and place them in the prepared skillet as you go. Broil the meatballs until browned and nearly cooked through, 5 to 7 minutes.
  • Move the skillet to the stovetop. Add the marinara sauce, stir to coat the meatballs, and warm over medium-low heat while you toast the rolls: Place the rolls on a baking sheet, cut-side up, and broil until lightly golden, 1 to 2 minutes. Rub the cut sides of the roll with the second garlic clove.
  • Divide the meatballs and sauce among the rolls, then top with mozzarella. Broil until the mozzarella is melted and browned in spots, 1 to 2 minutes. Top with more grated Parmesan, basil leaves and black pepper.

1 teaspoon sodium-free seasoning (Lawry's 17 blend is good)
1/2 cup barbecue sauce (I use "Cookies" BBQ sauce)

Steps:

  • Preheat oven to 400 degrees. Combine chicken, bread crumbs, egg and seasoning blend.
  • Roll mixture into 24 meatballs. Brown meatballs in a skillet, sprayed with non-stick cooking spray, over medium heat.
  • Transfer meatballs to a greased 9-by-9-inch baking dish. Cover with barbecue sauce. Bake uncovered 5-10 minutes or until internal temperature reaches 170 degrees.
  • Serve with additional barbecue sauce if desired.

1 lb jellied cranberry sauce
1/3 cup ketchup

  • In a large bowl combine all the meatball ingredients. Divide the meat into 4 sections and make 15 meatballs from each section.
  • Place in a large, greased casserole dish.
  • Combine all the sauce ingredients and pour over the meatballs.
  • Bake at 350 degrees for 1 hour.
