- Cut oranges and lemon into quarters, and remove seeds.
- Grind the fruit, chop fine, or cut crosswise into wafer-thin slices.
- Add water and soda.
- Bring to boil and simmer, covered, for 20 minutes, stirring occasionally.
- Add cranberries and simmer, covered, for 10 minutes.
- Measure 5 cups fruit into very large saucepan.
- Add sugar and mix well.
- Put over high heat, bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
- Remove from heat and at once stir in pectin.
- Skim off foam with metal spoon.
- Then stir and skim for 7 minutes to cool slightly and to prevent floating fruit.
- Ladle into hot sterlized jars, and seal.
- Makes about eight 1/2- pint jars.

Steps:
- Stir sugar and 1 cup water in heavy medium saucepan over high heat until sugar dissolves and syrup comes to boil. Add cranberries; return mixture to boil. Reduce heat to medium; simmer until cranberries burst and sauce thickens slightly, about 10 minutes. Remove from heat. Mix in ginger; let stand 5 minutes. Mix in peaches. Cool. Chill at least 2 hours and up to 3 days.
PEACH MARMALADE
Delicious peach marmalade made with fresh peaches, orange, lemon, maraschino cherries, and a splash of Peach Schnapps. Serve on toast, biscuits, or dolloped onto vanilla custard for a tasty dessert.

- Plunge peaches in boiling water for about 1 minute to loosen skin. Peel. Halve the peaches and remove and discard stones. Dice the peaches into small pieces, about ½" in size. Add the chopped orange and lemon along with the orange and lemon zest. Measure the amount of the peach pulp, orange, and lemon. Add an equal amount of sugar. For example, if the total amount of the pulp equals 4 cups, add 4 cups of sugar.
- Place 2-3 freezer-safe saucers in freezer.
- Place pulp and sugar into a medium-sized stockpot. Stir. Bring mixture to a boil over medium-high heat, stirring frequently to prevent scorching. Reduce heat and simmer until mixture thickens and peaches are translucent, stirring occasionally. This could take about an hour, a little more or less*. To test for doneness, place a small amount of marmalade on chilled saucer and swirl saucer around. Let marmalade sit, untouched, for about a minute, then gently push your finger through the marmalade. If the marmalade holds its shape (i.e., does not run back together after the finger has been removed from the marmalade), it is set and ready to bottle. If not, continue to cook mixture, repeating the "chill" test about every 3 minutes or so (always removing the pot from the heat while conducting the chill test) until the marmalade passes the "chill" test. Do not overcook as it will result in a very thick marmalade, dark in color.
- Remove pot from heat and skim off any foam that may still remain on the marmalade. Stir in cherries and Peach Schnapps (or almond flavoring). Using a canning funnel, pour marmalade into sterilized jars, leaving about ¼" headroom in each jar. Wipe the jar rims with a clean cloth. Seal jars with heated lids and fingertip-tightened ring bands. Process in boiling water canner, following canner manufacturer's directions, for 10 minutes. Remove jars from hot water to cooling rack. Listen for the "pop" or "ping" sound as the bottles seal over the next few hours. The lids of properly sealed jars will curve downward. Refrigerate any jars that do not have lids curved downward and use within 1 month.
- Yield: Apx. 5 half-pints
- *Note that it is difficult to give a precise cooking time for the marmalade since various factors, including the pectin level of the fruit and heat level of stove, can vary significantly and may affect cooking and marmalade-setting times. This is why the "chill" test is the recommended method for determining marmalade setting. It is recommended that the first "chill" test be conducted somewhere around the 45-50 minute point in the cooking process. It does not necessarily mean that the marmalade will be done in that timeframe and more than one "chill" test may need to be performed.
SIMPLE GINGER MARMALADE (GINGER JAM)
This simple ginger marmalade (ginger jam) is fresh, clean, and full of zing. Plus, this recipe takes just 4 ingredients (water included!) and uses a simple jam-making process for beginners!

- First, peel and slice the ginger into long, thin slices trying to avoid any pieces that are very hard and fibrous.
- Add the ginger and enough water to fully submerge it to a saucepan, bring to a boil over high heat, and then reduce to a gentle simmer for 45 minutes. This will help to reduce the pungent, strong flavor of ginger.
- Drain the water (note: you can keep it and drink it or freeze in ice cubes and add to smoothies, lemonade, or iced tea).
- Next, mix the 1 cup of water with the cane sugar and powdered pectin.
- Then pour the mixture over the ginger in the pot and boil for another 25 minutes over medium heat.
- Transfer to a sterilized jar (process in notes) and allow it to cool down (it will continue to thicken as it cools), then cover and store.

Steps:
- Cut the hens down the backbone (split).
- Brine the hens: dissolve the salt in water,put hens& salted water into large bowl.
- (I usually put them into a large plactic bag) refrigerate 2 to 3 hours.
- Remove hens, Rinse thoroughly, pat dry, prick the skin allover the breast and legs with point of paring knife.
- Melt the butter in small pan& mix with preserves.
- Add salt, pepper& basil.
- Preheat oven to 400 degrees.
- Place hens in shallow pan (I usually line pan with foil for easy clean-up).
- Rub hens with butter.
- Spoon butter& preserve mixture over hens.
- Bake 35 to 45 minutes.

- Place all spices in cheesecloth and drop into pot with peaches.
- Add lemon peel and brandy.

- Preheat oven to 400°F.
- Grease 12 muffin cups.
- In a large mixing bowl, mix flour, sugars, baking powder, baking soda, salt, cinnamon, nutmeg and allspice.
- Make a well in the center.
- In a separate bowl, whisk together buttermilk, marmalade, melted cooled butter and egg.
- Pour into well in the center of the dry ingredients. Mix with a fork until dry ingredients are moistened. Stir in chopped nuts and cranberries.
- Spoon batter into muffin tins, filling cups about 2/3 full.
- Bake until tops are firm and lightly browned, about 20 minutes.
- Cool muffins in pan on a rack for about 5 minutes; turn out of pan to cool completely.

GINGER MARMALADE
This is the best ginger marmalade that I have ever tasted. Recently disappointed with the texture and aftertaste of another ginger marmalade, I searched for a homemade ginger marmalade and found only one very inadequate recipe. I created my own based on an orange marmalade recipe, and it turned out great.

- Divide the ginger in half, and chop half into cubes; shred the other half with a box grater or in a food processor using the shredding blade. Total ginger should equal 3 cups. Place the ginger into a large saucepan with water over medium heat, bring to a boil, and reduce heat to a simmer. Cover the pot, and simmer the ginger until tender, about 1 hour and 15 minutes. Add more water if needed to keep mixture from drying out. Pour the cooked ginger into a fine-mesh strainer, drain, and retain 1/2 cup of the ginger-flavored water. Place the cooked ginger in a bowl with the retained liquid, and cool at least 4 hours or overnight in refrigerator.
- When ginger is thoroughly cooled, place into a large, heavy-bottomed pot, and stir in the sugar; bring to a boil over medium-high heat, and boil hard for 1 minute, stirring constantly. Stir in the pouch of liquid pectin, reduce heat to a simmer, and cook for 7 more minutes, skimming foam from top of marmalade.
- Sterilize the canning jars and lids in boiling water for at least 5 minutes. Pack the marmalade into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 15 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.
