NUTTY BACON CHEESE BALL
A flavorful cheese ball with pecans and bacon that goes great with crackers.

Steps:
- Place cream cheese in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed Two and mix 1 minute. Stop and scrape bowl. Turn to Speed Two and gradually add milk, mixing until well blended about 1 minute. Stop and scrape bowl. Add cheeses, onions, pimientos, half of the bacon and half the pecans. Turn to Speed 4 and beat until well blended, about another minute. Season with salt and pepper to taste.
- Transfer mixture to a large piece of plastic wrap. Form into a ball and wrap tightly.
- Refrigerate (or freeze) at least 2 hours.
- Combine the remaining bacon and remaining pecans, parsley and poppy seeds in a pie plate. Then, remove the plastic wrap and roll the cheese ball lightly in the bacon/nut mixture until evenly coated. Wrap it back up in plastic wrap and refrigerate again until ready to use.
SWISS-NUT CHEESE BALL
A friend of mentioned how much she loves Swiss cheese balls, so I went on a search to find a recipe. Here's one from several different recipes I found on the web! My friend just had hip surgery done and I'm looking for ways to surprise her and keep her spirits up. I think this will do it, it's good! :)

Steps:
- Place cheddar, Swiss, and cream cheese, sour cream, Worcestershire sauce, paprika, black pepper, and garlic salt in a medium bowl.
- Place in a food processor and pulse until well blended.
- In bowl, place nuts and chives, if using. Stir to mix.
- Shape mixture into a ball, roll in the chopped nuts and chives(if using).
- Wrap in waxed paper or plastic wrap and refrigerate until serving time.
- Serve with raw vegetables or crackers.

Found this recipe in my Kitchen Aid mixer manual. I am sure it can be made just as easily without the mixer though. Cooking time is chill time.

- Beat cream cheese and milk on low speed in large bowl until blended.
- Add cheeses; blend on medium speed until well combined. Add green onions, pimiento, half of bacon, and half of pecans; blend on medium speed until well mixed.
- Add salt and pepper to taste.
- Transfer 1/2 of the mixture to a piece of plastic wrap.
- Form into a ball; wrap tightly.
- Repeat with remaining mixture.
- Refrigerate until chilled--at least 2 hours.
- Combine remaining bacon and pecans with parsley and poppy seeds in a pie plate. Remove plastic wrap from each ball. Roll each into the mixture until well coated. Rewrap each ball in plastic wrap and refrigerate until ready to use--up to 24 hours.

KITCHENAID NUT CHEESE BALL
This recipe came from a cookbook that came with the KitchenAid that my DH's gran gave me. It is a classic book, as it is from the 70's, but when I searched I could not find many KitchenAid recipes, so hey if I was looking for some, maybe someone else is too. Yay for getting my first KitchenAid!

- Beat soft cheese & dolcelatte together using a spoon, until smooth.
- Mix in all remaining ingredients, except chopped walnuts, stirring well to combine.
- Divide mixture into as few as 12 pieces or as many as 24, depending on the side of balls you would like to serve.
- Roll each piece into balls, then roll each ball gently into chopped walnuts.
- Chill in refrigerator at least 1 hour before serving.
