Sweet potato bread is a Southern classic and this recipe is incredibly moist.

1 3/4 cups all-purpose flour (225 grams)
¾ cup white sugar (150 grams)
¾ cup brown sugar, lightly packed (165 grams)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon salt
2 eggs
1 cup mashed sweet potato
1/2 cup oil (120 milliliters)
1/3 cup water (80 milliliters)
1/2 cup pecans or walnuts, chopped, optional (55 grams)
1 teaspoon vanilla, optional

Steps:

  • Preheat 350°F or 175°C and set an oven rack in the middle position.
  • Whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, cloves, and salt in a mixing bowl.
  • Add eggs, mashed sweet potato, oil, water, nuts, and vanilla to the same bowl. Mix until well combined.
  • Pour the batter into a parchment paper lined bread pan and bake for 50 to 60 minutes, or until tester inserted into the center comes out clean.
  • Remove from oven and let cool for about 10 minutes. Then, remove and place on a wire rack to cool completely.

1 ½ cups white sugar
½ cup vegetable oil
2 eggs
1 ¾ cups sifted all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅓ cup water
1 cup cooked and mashed sweet potatoes
½ cup chopped pecans

Steps:

  • Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts.
  • Pour batter into greased 9x5 inch loaf pan (or 2 small loaf pans). Bake at 350 degrees F (175 degrees C) for about one hour.

1/2 cup milk
2 eggs (beaten)
1/4 cup butter (softened)
2 cups flour (sifted)
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup canned pumpkin
1 cup pecans (chopped)

Steps:

  • In large bowl add flour, baking powder, salt, nutmeg and cinnamon.
  • In another large bowl, combine the pumpkin, sugar, milk and eggs.
  • Add it to the dry ingredients, And add the butter and mix until well blended.
  • Stir in pecans.
  • Spread mixture in a loaf pan evenly.
  • Bake in a preheated oven at 350 degrees for 45 to 55 min's or until inserted toothpick in the center comes out clean.
  • (9x5x3-in loafpan is what I would use).

1 1/2 tsp cinnamon, ground
1/2 to1 tsp nutmeg, ground
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 c mashed sweet potatoes
1/2 c canola oil
1/3 c water
1 tsp vanilla sugar

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a large bowl combine flour, , nutmeg, sugar, cinnamon, nutmeg, baking soda, baking powder, and salt. Mix well.
  • 3. In a small bowl combine the eggs, sweet potatoes, oil and water. Stir into the dry ingredients just until moistened.
  • 4. Spoon into a greased and floured 9 by 5 inch loaf pan. Sprinkle vanilla sugar over the loaf.
  • 5. Bake at 350 degrees for 50 to 60 minutes or until a toothpick inserted comes out clean.
  • 6. Cool for 10 minutes before removing from pan to a wire rack.
