- Gather the ingredients.
- In a medium bowl, mix together graham cracker crumbs, sugar, and butter until well combined.
- Press mixture into the bottom and up the sides of a 9-inch pie plate or pie tin.
- For baked pies, heat oven to 350 F and bake crust for 7 to 9 minutes. Cool before filling. For no-bake refrigerator or freezer pies, no baking is necessary.

- Combine crumbs and sugar in medium sized bowl. Stir in the melted butter until thoroughly blended.
- Pack mixture firmly into a 9-inch pie pan and press firmly to bottom and sides, bringing crumbs evenly up to the rim.

GRAHAM KERR'S BASIC PIE CRUST
While browsing a used bookstore with Twissis, I found a little gem called "Simply Splenda Cookbook" by Graham Kerr (AKA The Galloping Gourmet). This book is chock full of low calorie/low fat dishes that he devised to accomodate his wife's diabetic diet. His description " This pie crust is almost foolproof. It has a good flavor, is crisp yet tender and pairs beautifully with crusted dishes. This recipe makes two 9 inch crusts."

- In a food processor, combine flour, Splenda & salt. Pour in the oil & pulse until mixed. Cut the margaine or butter into small pieces and add to flour mixture. Pulse 10 times or until mixture is full of pea sized lumps.
- Pour in the vinegar and ice water. Pulse 10 more times or until dough begins to hold together. Remove dough from processor bowl & gather into 2 equal size balls, wrap separately in plastic wrap and refrigerate for at least 30 minutes before rolling.
- **** To make by hand: Combine the flour, Splenda & salt and stir in the oil. Add the margarine or butter & mix with a pastry cutter or 2 knives until the size of small peas. Add the vinegar & ice water, mixing with a fork just until dough hold together. Divide in half, form into balls & refrigerate as above.

100% WHOLE WHEAT GRAHAM CRACKERS OR PIE CRUST
I couldn't find the perfect 100% whole wheat graham recipe so I made one. These are highly popular with kids and come together very quickly. You can replace a little of the flour with milled flax, wheat germ, oat bran, or whatever you like. And you can make chocolate grahams by adding 1/3 cup cocoa. Crunch them up to make graham crumbs, which are useful for a lot of things. ALSO, this recipe makes an AMAZING pie crust. Please NOTE: The instructions below are specific about rolling these out very thin, and baking until crisp. If you end up with anything but crisp crackers, they weren't rolled thin enough, and/or they weren't baked long enough.

- Melt butter in microwave or on stovetop.
- Mix together dry ingredients (first 6 ingredients).
- Add the rest of the ingredients and mix until the dough forms a ball. Add a little water if needed.
- Line two jelly roll pans with parchment paper or Silpat.
- Put half the dough on each pan and gently flatten out with a rolling pin, covering the pan (Depending on the size of your pan, you may not completely cover it. Just roll them out to desired thickness. These don't puff up much, so what you roll out is very nearly what you end up with.).

- Break the graham crackers into pieces and place in the bowl of a food processor.
- Process into fine crumbs.
- Measure the crumbs and be sure you use 1 1/4 crumbs and no less and no more (adjusst amount).
- Return crumbs to food processor, add the sugar, and process a few seconds to mix well.
- Add the margarine or butter and process about 20 seconds, or until the mixture is moist and crumbly and holds together when pinched.
- If the mixture seems too dry, mix in more margarine, 1/2 teaspoons at a time, until the proper consistency is reached.
- Coat a 9" pan with cooking spray, and use the back of a spoon to press the mixture against the bottom and sides of the pan, forming an even crust (periodically dip spoon in sugar to prevent sticking).
- Use fingers to finish pressing the crust firmly against the bottom and sides of the pan.
- Bake at 350 degrees F for 9 minute or until the edges feel firm and dry.
- Cool to room temperature before filling.
