Time 22m

Number Of Ingredients 5

1 cup granulated sugar
1 cup Earth's Balance non-butter buttery spread business, mmmm....
2 tspns vanilla extract
½ tspn salt
1/2 bag pretzels, I used gluten-free so that my pralines were gluten-free, too

Steps:

  • Cover a baking sheet with a sheet of wax or parchment paper. Set aside.
  • Place all ingredients, except pretzels, into a small pot over medium heat.
  • Stir.
  • When it's all melty, keep stirring.
  • Stir. Stir. Stir. Stir. Stir. Stir.
  • Forever, stir.
  • And some more.
  • When it turns a soft brown, keep stirring.
  • Ok, if your arm falls off, you can totally take a break-to re-attach the arm, then keep stirring.
  • Stir while it's boiling.
  • Stir for about 20 minutes. But be careful of your spoon--I melted mine and had to start over fresh.
  • Then pour it on the pan with the parchment paper.
  • Place your 1/2 bag of pretzels into a bowl and crush them into large bits (don't crush them in the bag because then you can't manage the size of the bits as well).
  • Drop your crushed pretzels across the top of the toffee and gently pat them down.
  • Set the pan in the fridge for about 10 mintues or until the toffee is hard.
  • Remove and break as you start to chow down!

MICROWAVE PRALINES

This recipe states to use margarine, I made these using butter only because I never use margarine at all for baking or cooking, it still turned out great, also I used and walnuts in place of the pecans.

MICROWAVE BUTTERMILK PRALINES

Microwave Buttermilk Pralines image

I found this recipe when my stove was broken and I wanted to make pralines for my father, who loved them. These have turned out well for me, but the cooking time can be tricky, especially when the humidity is up--don't try to make them when it's humid. They are very good!

PECAN PRALINES BY MICROWAVE

Pecan Pralines by Microwave image

Here's a recipe I adapted from a stove-top recipe in a church women's collection back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. Check out the companion recipe for Peanut Patties. These candies make great gifts----I can make up a batch in less time than it takes me to "run" to the store.

Time 30m

Yield 36-48 patties, 12-20 serving(s)

Number Of Ingredients 9

1/4 cup water
1/4 cup light corn syrup
1 cup white sugar
1 cup dark brown sugar
1/8 teaspoon salt (dash)
1 teaspoon oleo
1 teaspoon vanilla
2 cups pecans (halves and or or pieces)
1/4 cup powdered sugar (apx.)

Steps:

  • Put 1st six items in large glass bowl. Cover.
  • Cook on High 4 minute ( 5 ).
  • Stir. Cook on High 4 minute (6 ).
  • Add vanilla and pecans.
  • Stir, then cook on High 2min. (5).
  • Stir in powdered sugar.
  • Drop by teaspoonfuls onto waxed paper over newsprint. If candy gets too thick, reheat 20-30 secs.
  • Add more nuts at the end if you run out of nuts before candy, (but these don't taste as good as the cooked nuts.).
  • You can also drizzle the extra candy at the end over the first pralines which don't have as much because it was too hot at first.
  • It's the powdered sugar that makes the syrup crystalize as it cools.
  • You can cook on stove---get syrup to softball stage -234*; stir constantly.
