Just the sweet potatoes, a little oil, and some spices. That is all you need to make these soft, aromatic, slightly caramelized baked sweet potato slices.

1 large sweet potato (about 450-500 g/ 1 - 1.1 lb)
1 tablespoon olive oil
1 garlic clove
½ teaspoon ground cumin ((Note 2))
½ teaspoon ground coriander
¼ - ½ teaspoon red chili flakes (to taste)
¼ teaspoon turmeric
fine sea salt and ground black pepper (to taste)

Steps:

  • Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
  • Slice sweet potatoes: Peel, wash, and dry the sweet potato. Slice it in 1 cm/ 0.4 inch thick slices. Place the slices in a roasting tin.
  • Rub with seasoning: Pour the olive oil on top. Add the grated garlic clove and all the spices. Rub the slices with your hands to make sure that there are all coated with spices and oil.
  • Bake: Arrange in the tin in a single layer and bake in the preheated oven. Check after 30 minutes by poking the sweet potatoes with a fork. They should be really soft, slightly caramelized, and slightly browned at the edges. If they are not perfectly soft, allow them 5 more minutes and check again.

Steps:

  • Preheat oven: Preheat oven to 425 degrees F (230 degrees C).
  • Prep potatoes: Wash sweet potatoes and remove any growths or blemishes, but do not peel. Cut potatoes into 1/3 inch (10 mm) round slices.
  • Season potatoes: Drizzle olive oil onto large sheet pan and spread until even on baking sheet. Add potato rounds to pan with one side facing down to cover with oil, then flip all potato medallions to make sure each side is lightly oiled. Sprinkle with salt, pepper, and any additional desired spices.
  • Bake until golden brown: Bake in oven for a total of 40-45 minutes, flipping once about halfway through and until both sides are lightly browned and crispy on the edges.

3 to 4 medium-sized sweet potatoes (about 2 pounds), trimmed, peeled, cut into 1/8-inch-thick slices
1 garlic clove, crushed through a press
2 tablespoons extra-virgin olive oil
1/4 cup packed parsley sprigs
1/2 teaspoon fresh thyme, leaves stripped from the stems, or 1/4 teaspoon dried
1 strip (about 1/2 by 2 inches) orange zest (use a vegetable peeler to remove)
Salt and freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 400 degrees F. Select a large nonstick sheet pan at least 14 by 10 inches. Combine the sweet potato slices with the garlic and the oil in a large bowl; toss to coat with the oil. Bake, turning the potatoes once or twice as they begin to brown, about 40 minutes. Remove from the oven. Meanwhile, finely chop the parsley, thyme and orange zest together; sprinkle over the potatoes. Sprinkle with salt and pepper. Return to the oven and bake for 10 minutes longer, or until the potatoes are tender, turning them once. Serve hot.

  • Preheat oven to 375°. Scrub potatoes; pierce several times with a fork. Bake on a foil-lined baking sheet until tender, 45-60 minutes. Cool slightly., Cut off a thin slice from top of each potato. Scoop out pulp, leaving 1/4-in.-thick shells. Mash pulp with cream cheese, brown sugar and cinnamon. Spoon into shells; return to pan.
